Garlic- Cinnamon Butter Roasted Carrots Today is my birthday 🎂 I had no intention of cooking anything, but both of my kids asked for these carrots. They were with me this past weekend when I bought this amazing 5 pound bag of carrots from Pricerite. I bought them for Thanksgiving, but I will have to buy more.They are sorta misshapen, kinda ugly, which is probably why they were so cheap, but they are so fresh and sweet. My kids just love them. We are having Chinese food and these delicious roasted carrots tonight. My mom used to make a stovetop honey orange juice version of these when I was growing up. The sauce was yummy, but ran off the carrots. My version issuper easy to make. The flavor is the perfect balance of salty sweet and savory. Roasting them turns the sauce into a candy like topping. The smell when these cook is intoxicating. They go great with roasts, turkey, chicken..pretty much everything. Green curry rice noodles by woon.heng Follow us vegspirationfeed for daily vegan recipes ⁣⁣⁣⁣ Recipe (yields 2-3 servings)⁣⁣⁣⁣ Green curry paste ingredients⁣⁣⁣⁣⁣ ~ 1 cup packed Thai basil leaves⁣⁣⁣⁣⁣ ~ a handful of cilantro (~10-12 stalks⁣⁣⁣⁣) ~ 3 cloves garlic, 2 shallots, 1 knob (thumb size) ginger/galangal⁣⁣⁣⁣⁣ ~ 3-4 tablespoons chopped lemongrass (white part only)⁣⁣⁣⁣⁣ ~ 1-2 jalapeños & a handful of Thai lime leaves (optional or sub with 1-2 tablespoons lime juice)⁣⁣⁣⁣ ~ salt to taste⁣⁣⁣⁣ Blend all the ingredients into a fine paste. Save this in a jar & refrigerate for up to 3-5 days/freeze for longer shelf life.⁣⁣⁣⁣ ⁣⁣⁣⁣⁣ Other ingredients⁣⁣⁣⁣ ~ 2-3 servings of *Thai rice sticks, soak in water until slightly soft ~ 4 cups of veggie stock⁣⁣⁣⁣ ~ 1 pack 16oz firm tofu, drained & cubed⁣⁣⁣⁣ ~ 1 cup King oyster mushrooms, sliced & scored⁣⁣⁣⁣ ~ 2-3 servings of blanched broccoli⁣⁣⁣⁣ ~ 3 tablespoons vegan 'fish' sauce (see recipe on highlights)⁣⁣⁣⁣ ~ coconut milk (adjust to preference)⁣⁣⁣⁣ ~ oil & salt to taste, crushed chili flakes, lime⁣⁣⁣⁣ In a heated non-stick pan with a drizzle of oil/vegan butter, pan-fry tofu, mushrooms until golden brown & season with salt. Remove & set aside. To make green curry, sauté 3-4 tablespoons green curry paste with 2 teaspoons oil in a saucepan until fragrant (paste will turn darker green). Then, add in veggie stock, 'fish' sauce & let simmer for a few minutes. Season with salt or more sauce for a sweeter curry. Stir in coconut milk before serving (more for a creamier curry). Turn the heat off, then add in blanched broccoli & mushrooms to warm it up. Serve with lime juice & crushed flakes.⁣⁣⁣⁣ ⁣⁣⁣⁣ *If you are using Thai rice stick, place softened rice stick in the hot soup right before serving to avoid overcooking it. Roasted vegetable pasta with zucchini, eggplants, red bell peppers and tomatoes by lea.bowls.your.mind Ingredients For 500g spaghetti Oven baked vegetables 1 small eggplant, diced 1 zucchini, diced 1 red pepper, diced 2 hands full of vine tomatoes 3-4 tbsp oil Salt, pepper, paprika sweet, dried rosemary, parsley, thyme, oregano and a pinch of cinnamon For the sauce 1 garlic clove, chopped 400g tomato sauce 4 tbsp oil Salt, pepper, chilli, paprika sweet, dried basil, rosemary and thyme Directions 1. Preheat oven at 180 degrees. 2. Put the diced vegetables into a bowl, add 4 tbsp of oil, mix and then add the spices and mix well again. 3. Put the vegetables into a suitable shape and bake for 35-40 minutes. 4.Slightly fry the garlic in a saucepan with a little oil, add the tomatoes, add 4 tablespoons of oil and season with salt, pepper, chili, paprika, rosemary and thyme. 5. Simmer for 20 minutes at medium heat. 6. Dinner tonight using the aldiuk spicy tomato vegan meatballs, they taste a bit like the vegan sausages and are glutenfree 🍅 🌶 I made the sauce with garlic, sun dried tomatoes, chopped tomatoes, herbs and chilli then added olive oil and seasoning. Made with Let's Do Organic Sweet Potato Flour by abouttosprout Snag the recipe below 👇⁠⠀ ⁠⠀ ✨Thanksgiving Sweet Potato Flatbread✨⁠⠀ ⁠⠀ Sweet Potato Flatbread Dough:⁠⠀ 1 packet active dry yeast ⁠⠀ 1 tablespoon coconut sugar/any granulated sugar will do!⁠⠀ 1 cup water (110F like bath water, not boiling) ⁠⠀ 2 tablespoons olive oil ⁠⠀ 2 cups Let's Do Organic Sweet Potato Flour ⁠⠀ 1 teaspoon salt ⁠⠀ 2 teaspoons dried parsley ⁠⠀ ½ teaspoon dried thyme ⁠⠀ ⁠⠀ Butternut Squash Base + Toppings ⁠⠀ 3 cups butternut squash, cubed (about 1 medium butternut squash) ⁠⠀ 3 garlic cloves ⁠⠀ 2 tablespoons olive oil, divided ⁠⠀ 2 tablespoons chopped fresh thyme/1 tablespoon dried works too! ⁠⠀ 1 tablespoon maple syrup ⁠⠀ salt & pepper to taste ⁠⠀ 2 cups chopped dino kale ⁠⠀ ½ large onion, sliced ⁠⠀ Squeeze of lemon ⁠⠀ ½ cup dried cranberries ⁠⠀ 1 cup vegan ricotta cheese ⁠⠀ ⁠⠀ HOW TO: ⁠⠀ To make the dough, combine yeast, sugar and preheated water. Mix and let sit for 10 minutes. In a large bowl, whisk together all dry ingredients. With a spatula or wooden spoon stir in the olive oil and yeast mixture. Add water if needed 1 tsp at a time. Work the dough into a ball, put in a clean oiled bowl and cover to let rest for 1 hour. To make the butternut squash base, on a large sheet pan add squash, garlic, 1 tablespoon olive oil and thyme and toss to coat squash. Bake at 400F for 15-20 minutes until squash is tender. Remove from oven and cool for 5 minutes. Then, add all content of the sheet pan into a blender with 1 tablespoon olive oil, maple syrup & salt and pepper to taste. Blend until creamy and smooth. It should be spreadable, not pourable. Bake to the dough, remove from bowl onto parchment lined sheet pan and flatten into your preferred shape. Bake at 425F for 10 minutes. Make your kale & onions mix. In a pan on medium heat with a bit of oil add onions and cook until translucent and fragrant then add kale with a dash of salt, pepper and lemon & cook until wilted down. Remove dough from oven and top with squash base, onions, kale, cranberries and ricotta. Bake for an additional

Por cima joguei várias sementes, sempre tento ter em casa algumas (amêndoas, sementes de abóbora, chia) e também frutas secas, porque me salvam, neste caso coloquei algumas uvas passas. Changed up our chili by replacing the ground beef with veggie crumbles. Still had all the flavor but a lot less fat. . . . We’ve been slowing transitioning into a meatless diet at my house. We started making meatless meals about a year ago. We weren’t consistent until recently, but it introduced us to new recipes and showed us that you can be satisfied without it. We also couldn’t deny how much better we felt. At this point, we are still eating eggs, dairy, and fish but I see us getting away from those things as well in the future. I surprisingly have stayed fuller longer and have more energy and the food has tasted great!
