Injera Porridge Bread available alongside the classic Greenpoint Sour tomorrow at Tabula Rasa!!! Injera is a tangy, spongy flatbread traditionally eaten with Ethiopian and Eritrean food. It is made from teff, the smallest cereal grain in the world. Teff, originally from the Horn of Africa but in this case grown by camascountrymill in Oregon, grows well in high temperatures and is resistant to drought conditions. This makes it a great candidate for cultivation in California and Oregon! The tiny seeds are largely made up of bran and germ, giving teff a high fiber content relative to other cereal grains and making it particularly nutritious. For this bread, I’ve lacto-fermented whole grain brown teff and cooked this into a sour porridge, which is then worked into a dough with teff flour and hard white wheat from gristandtoll. The dough is rolled in more teff before proofing, giving it a crunchy crust with a texture and flavor similar to poppy seeds. To put it simply, it’s super tasty. Einkorn Sourdough🙏 This ancient grain tastes absolutely amazing and it's easy on the gut unlike modern wheats and breads. Einkorn is not hybridized with GMO's so it's DNA structure is still the same as it was thousands of years ago so it is easy for our bodies to digest. We've been hearing a lot about gluten-related diseases and sensitivities lately. And although some people are allergic to grains, I believe most people are just sensitive to grains and that can't just be attributed to gluten alone. It is also the modified structures of modern wheats that make it harder for our bodies to digest them but people end up mistaking that for a gluten allergy. Modern wheat has been modified heavily so it can be grown in large quantities and also resistant to pesticides. I worked in a biotech research lab in college for 3 years and learned a lot about how food is genetically modified and although it has its applications in some cases, I believe if you have the opportunity to avoid it, please avoid GMO foods as much as possible My wife and I have been sensitive to modern grains for some time now and we've been looking for ways around that and we finally stumbled upon Einkorn and some other ancient grains. Einkorn has gluten too but it is a much weaker gluten and since the DNA structures are not modified, it is extremely easy for our bodies to digest. And sourdough is a fermented bread so it's even easier to digest. This is how bread has been eaten for thousands of years; without any artificial yeast or ingredients. It's just water, fresh flour, sourdough starter, and some salt. These women made Costa Rican tamal de asado and Salvi quesadilla- two similar but different corn cakes from their respective countries of origin. Roxana told us that in her (super impressive) pastry career this is the first time she has ever been asked to draw upon her Costa Rican-ness. We’re in a bread and heirloom grain craze so PLENTY of people ask her to make them baguettes and boules- but nothing Costa Rican til now. To keep my sourdough bread soft for up to five days, I store it in a bread box, lined with a cotton cloth. If you don’t have a bread box, any ceramic pan with a lid will work. Open the box or pan a few times a day for a minute or two to air out. Keep your sourdough bread separately from store bought yeasty bread. Sourdough, if kept properly, would not mold. It will just get hard, which then you can make croutons from it or buttery toast. Check my story or highlights to see how I do it!

PACKED LUNCH: made this in a flash for us both this morning - Organic kale, red onion and mixed veg spelt pasta 🍝😋 Seasoned with sea salt, cayenne pepper and Asda’s freefrom (vegan friendly) red pesto sauce for extra yumm. I love, love, love spelt pasta. Actually spelt anything. Here are a few facts about it: Spelt is a good source of dietary fiber, protein (which it contains more of than common wheat), and vitamins and minerals. This grain is also more water-soluble than wheat, which makes it easier for the body to digest. It isn’t gluten free though ⚠️ It’s an ancient grain that’s a subspecies if wheat. Both have a similar appearance but spelt has a stronger husk and different nutritional content. It can be used in the place of wheat in most recipes. Cooking class in the Sicilian country side. The best location for a real Sicilian experience, an old Baglio, once owned by the Glorious Florio family. I had a lot of fun and learnt more about oil, wine and food. The Adamo family, in fact, has been producing wine and oil for generations. Together with Liliana we cooked: CAPONATA An eggplant-based delight, seasoned with vinegar, oil and capers in a sweet and sour sauce. FRESH PASTA WITH CAPONE FISH Sicilian fresh pasta is made of local flour, oil and water. Today we used Perciasacchi flour, one of the ancient grain of the Sicilian durum wheat. This flour is processed with stone milling, producing a less refined flour richer in nutrients. SARDE A BECCAFICO A well known Sicilian dish. Beccafico (fig-pecker) refers to a songbird, the Sylvia borin, that was historically considered a great delicacy in many Mediterranean countries. Now, it is mostly a forgotten dish, with the practice of hunting those birds, illegal in many countries. The sardines, stuffed, rolled and baked, are said to resemble the cooked, stuffed birds. Butterflied sardines are stuffed with a mix of breadcrumbs, raisins, pine nuts, anchovies before being baked until golden and crispy among layers of bay leaves and orange. CASSATELLE WITH SHEEP MILK RICOTTA A delicacy typical of western Sicily. The pastry is made of Perciasacchi flour, oil, white wine and a bit of sugar. A rich filling made of Ricotta and chocolate chips will make everyone fall in love with them. The one we made today, even if they were deep fried in oil, were so light that we couldn't stop eating them. Cooking with fresh and high quality ingredients makes everything better, tastier and healthier.
