Homemade Crockpot Chicken Noodle Soup is hitting the spot in these colder temps! • Ingredients 2 large chicken breasts 3-4 large carrots, sliced 2 stalks celery, sliced 1 yellow onion, diced 8 cups broth (I used my homemade veggie broth) 2 1/2 tsps minced garlic 1/2 tsp black pepper 1/2 tsp salt Small pinch rosemary leaves 1 bay leaf 8-12 oz fettuccine noodles broken into pieces (I used 12 and it comes out like double noodle soup). Directions: 1. Spray inner crock pot. Add all ingredients except for noodles. Stir. 2. Cook on high 4 hours. In last 15 minutes add noodles. 3. Remove and shred chicken. Homemade Veggie Broth is so easy and completely customizable. I chopped 4 large carrots, 2 stalks of celery, 1 yellow onion and boiled it with a handful of peppercorns, 1 teaspoon salt and 2 tsps garlic and several cups of water. Once boiling I let it simmer for a hour and strained it to remove the veggies. FISH SLIDERS • I had about three dozen mini burger buns left over from my sons first birthday party taking up space in my freezer. So every week’s meal plan recently has included sliders of some variation. This week it’s fish. We try to eat fish at least once a week, and bonus that the kid loves it too! . These sliders are made even more of a lazy meal by simply using fish fingers as the filler. I always keep fish fingers in the freezer as they make an excellent dinner or lunch for the little one if I need to do something on the fly. Recently, I bought a 40 pack of Birds Eye fish fingers on half price sale at Woolworths a while back for $4.50. INGREDIENTS: Chicken Sausage or Kielbasa Zucchini Grape tomatoes Broccoli Bell peppers Onion Green Beans ** Really any veggies you have Potatoes **Any kind will work-sweet, gold, red, etc. Shredded parmesan cheese .. .. DIRECTIONS: Heat olive oil over medium heat on a skillet. Add sausage pieces and onion. Cook until onion is translucent and sausage begins to brown. **Timesaver: While that is cooking on the skillet begin cooking potatoes in microwave for a couple of minutes.** Add veggies to meat and onion in skillet. Stir occasionally for several minutes. Stir in partially cooked potatoes. Cook in skillet until veggies are tender, stirring periodically. Serve your plate and top with a little parm!

When I see them I pick up a few to put in the freezer. The koftas are topped with a drizzle of store bought aioli (Coles brand). I’ve been binge watching YouTube videos from thebudgetmom this week. Instant Pot Chicken Tortilla Soup 🍵 • Ingredients: 1 lb chicken 1 cup water 1 15 oz can black beans, drained 1 15 oz can corn, undrained 1 15 oz can original rotel, undrained 1/2 yellow onion 1/4 cup hot sauce 1/2 tsp minced garlic 1/2 tsp black pepper 1 packet taco seasoning Directions: 1. Add water and chicken to Instant Pot and top with other ingredients. Stir to combine. 2. Cook on chili setting on high pressure for 18 minutes. Or cook on high in slow cooker for 4 hours/low in slow cooker for 7-8 hours. 3. Let pressure manually release for 10 minutes. 4. Release pressure. Remove chicken and shred. Vegan instant pot lasagna soup from veganricha! . . . . This is a one pot (or instant pot) recipe that involves very little prep work and comes together quickly. I had basically everything the recipe called for at home so I just bought some cans of tomato sauce and diced tomatoes, spinach and a bell pepper today. veganricha has a video on her blog that shows you exactly how to make the recipe so I would recommend watching that first! VEGO EGGPLANT LASAGNE: this is a super quick, easy & yummy twist on the traditional lasagne recipe. Give it a go & let us know! 👏🏻🍆⠀ .⠀ 2 eggplants, sliced thinly⠀ 1/2 onion, diced⠀ 2 tsp minced garlic⠀ 400g tin crushed tomatoes⠀ 375g tub of lite ricotta⠀ Small handful of basil, chopped ⠀ 1/2 tsp ground cumin⠀ 1/2 tsp ground coriander ⠀ 1/3 cup grated cheese.⠀ .⠀ 1. Lay the sliced eggplant sheets on a baking tray. ⠀ 2. Drizzle with oil and bake at 180C for 15 mins.⠀ 3. Meanwhile, add onion, garlic, tomato to a pan.⠀ 4. Simmer on medium heat for 10 minutes.⠀ 5. In a bowl, mix ricotta, basil, cumin & coriander.⠀ 6. In a square baking tray, add a layer of eggplant.⠀ 7. Top with 1/2 of the tomato mixture. 8. Then top this with 1/2 the ricotta mixture.⠀ 9. Repeat steps 6-8 until all mixture is gone.⠀ 10. Sprinkle grated cheese over lasagne. ⠀ 11. Cook in 180C oven for 20 minutes 🙌🏻

A little sweet after lunch, another little something sweet when I got home from school, a little sweet after dinner & then my real dessert later in the evening. . That is FOUR stinking desserts a day. . When I started paying attention to what I ate I realized this, but was not yet willing to let any of those desserts go. I *needed* them to get me through the day. . So at first, I didn’t give any of them up. I *added* in my smoothie. Because it is wayyy easier to add in more of something than to eliminate something. . Ever tried to give up soda or junk food? And you failed after only a short while-at least if you’re like me. It is a mental thing, you took something away. . My superfoods were also a sweet and by *adding* them into my daily routine they started to crowd out my need for some of those desserts without me consciously realizing it. Some days I still eat an entire cup of dark chocolate chips, but most days I don’t even crave the desserts I used to *need.* . It is like magic & if it worked for me it can work for you too!

I always joke with Dan that I’m a really lazy cook. I love to eat great food, but I honestly have too much going on to spend a lot of time on it. But ya know how lazy people are the most efficient? Yeah, that’s me with cooking. In college Ineeded food on the go all the time so that’s what I’m great at. My FAVORITE thing to make is tacos because they’re quick & cheap. They also hit all of the bases when it comes to nutrition. You have complex carbs, fiber, vegetables, protein, and healthy fats. Get all of the ingredients open and you can make tacos / burrito bowls for the whole week in about 20 minutes. What you’ll need: .🌮Ground meat or shredded chicken .🌮Taco Seasoning .🌮Refried Beans .🌮Salsa .🌮Black Beans .🌮Diced tomatoes & chilis .🌮Corn tortillas .🌮Rice (optional - I suggest the minute rice) Cook up the meat on the stove top in the seasoning. Open and drain the black beans & tomatoes. Open the refried beans, salsa & tortillas. Cook minute rice in microwave. Assemble as desired. . 🌈Have tacos and some free time

When you only have a little left over roast lamb a hand full of vege’s. Shredded the left over lamb and added saut’ed onion and some steamed pumpkin and carrots and added some roast gravy.. Chicken Parmesan with zucchini. • • • One of my favorite dinners! I usually throw the zucchini in with the chicken because who doesn’t love a one dish dinner ! But this time I wanted enough for leftovers to take for lunch, so I cooked the zucchini on the stove top. And what doesn’t taste good with melted mozzarella/ parmesan on it! 🧀 . • • • Do you like chicken Parmesan? Have you ever made it? How do you cook it ? 👇🏼👇🏼👇🏼 • • • Recipe: Dredge chicken breast in seasoned bread crumbs (salt/pepper/garlic powder) then egg then back into bread crumbs again. Stick in the casserole dish top with spaghetti sauce. Chop up 2 -3 zucchini’s season with salt/pepper/basil and add around the chicken. Cover and bake at 400 until chicken is done. ( about 45 mins depending on the size of the chicken) But just before chicken is done, top chicken with cheese and left uncovered, bake until cheese melts 😋😋

Raiding the kitchen for something to cook for dinner. I had some mince to use and I remembered seeing a recipe for beef n lentil burger, so I thought I would give it a crack. I didn’t have any garlic or onion, but I did have one egg. And the only veggies we have until our next grocery shop was a sweet potato, 1 carrot and 1 white potato. I have a tin of peas in the pantry to add some greens to it, but that’s eating us out of our pantry and fridge until grocery day.
