Chicken & Chorizo Orzo, Mushrooms, Spinach & Peas🍄🍖🌿 The taste is incredible!
This dinner was so easy and I have to be honest, I made it up as I went along and I wouldn't change a thing!
I oven cooked some boneless, skinless chicken thighs and seasoned with garlic and thyme. Once cooked remove the chicken and slice ready to put into the pan.
I chopped half a red onion and fried off in the pan, add the chorizo and mushrooms until cooked through.
Add the orzo (amount dependent on servings), set the hob to high, slowly add boiling water along with a chicken stock cube for around 10 minutes until the juices clear and the orzo is cooked. Add a handful of frozen peas & the cooked chicken 2 minutes before the end!
