“Halloumi Ricotta Pesto Portobellos with Green Beans & Sautéed Potatoes” (439kcals). 🍄 Mushrooms: - 2 portobello mushrooms. - Ricotta Pesto: 30g ricotta, 4g basil leaves, 5g pine nuts, 5g parmesan, 1/2 garlic clove & 10 olive oil spray, mixed in a mixer. - 42g cubed light halloumi and 3g pine nuts fried in 4 olive oil sprays for 1-2 mins. Mushrooms laid on a tray, filled with the pesto topped with halloumi & pine nuts, roasted on gas mark 4 for 20mins. Beans: - 44g green beans boils got 4mins and drained. - 20g red onion fried in a medium heat in 4 olive oil sprays for 3mins, then beans and seasoning are added and everything cooked for 4mins more. Any love for cauliflower pizza? 🍕🥦😍 INGREDIENTS 1 medium/large head of cauliflower 1 large egg 1/2 cup shredded mozzerella 1/2 cup shredded paremesean cheese 1 tbs garlic salt 1 tsp dried oregeno 1 tsp Italian seasoning (any other spices are to taste) 1. ⁠Break up Cauliflower head and put it through a food processor or blender until the texture is rice like. Don't blend it up so much that it becomes mushy 2.put riced cauliflower into a bowl. Cover it with a plate and microwave it for 10 minutes (the idea is to steam it.. So if you have a steamer go that route) this will stink up your kitchen so beware 3. Let cauliflower sit for 30 minutes or until it has cooled down 4. Take a cheese cloth or linen towel and take clumps for the c-rice and squeeze alllllllllllllll the water you can out of each clump into a seperate bowl to discard. Put the clumps in a seperate bowl 5. Mix the egg, mozz, parm, and spices with the squeezed cauliflower with a fork. Once indregients are mixed, with your hands start mushing everything together as you would dough 6. Remove from bowl onto parchment paper and create your pie. Spread c-dough out to about 10/12 inches.. You crust should be thin.. Think NY style pizza thin. YOU DO NOT NEED A ROLLING PIN FOR THIS. Use your hands.. Get into the crust and give it some love and shape it how you want it. Pinch the edges up to create and outer crust if you are feeling frisky. 7. Put in the oven on 415 for 15 minutes on middle shelf or until the edges brown a bit and center is light golden brown. 8. Remove and add your toppings and put it back in the over for about 10 minutes at 425. You just want to melt the cheese and heat up your other toppings. 9. Take out the oven. Forget about the nutrient values of each fruit source for the moment and look at the amount of volume of food/calorie that you’ll be getting in your stomach. Frozen and whole fruit still contains mostly water and has retained its fibre so it’s super low calorie for the amount of food you ingest . On the other side, dried fruit has had its water taken away so it will now have a very high calorie to volume ratio - not good for losing weight. There was too much cucumber, fish sticks, and sea bass... The key to achieving long-lasting results is to remember this is a journey. SATURDAY DINNER 🍴 Chicken & Chorizo Orzo, Mushrooms, Spinach & Peas🍄🍖🌿 The taste is incredible! This dinner was so easy and I have to be honest, I made it up as I went along and I wouldn't change a thing! - I oven cooked some boneless, skinless chicken thighs and seasoned with garlic and thyme. Once cooked remove the chicken and slice ready to put into the pan. I chopped half a red onion and fried off in the pan, add the chorizo and mushrooms until cooked through. Add the orzo (amount dependent on servings), set the hob to high, slowly add boiling water along with a chicken stock cube for around 10 minutes until the juices clear and the orzo is cooked. Add a handful of frozen peas & the cooked chicken 2 minutes before the end! Delicious 😋
