Working on some new dishes based on my travels to India for my winter menu. Broiled lamb lollipops, dusted with tandoori spice and smoked paprika from India, topped with a Panko herb crusted bacon butter compound with a spicy vegan mayo sauce. ~Chef Steven

After a long and stressful day dealing with our year-end financial close, basting a steak with hot butter is incredibly soothing and calming... Even if that hot butter ends up scalding my hands. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ No matter how I end up serving it, this is how I always like to cook my steaks. Pan-roasted ribeye, basted in brown butter, garlic, shallots, and thyme. Interestingly enough, I don't like to use the barbecue or a grill pan, and I don't even bother with cast iron. Just a regular stainless steel sauté pan does the trick for me, every time. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ To make the perfect steak at home, make sure you temper your meat by taking it out of the fridge about an hour before you start, as this will help ensure even cooking. Pat the steak dry with paper towels, season with kosher salt and pepper, and sear in a neutral oil over medium-high heat. Once cooked to your desired level of doneness, toss in some butter and let it foam, put in some aromatics, and baste that steak over and over again. After basting, I take it out of the pan and rest it on two spoons on top of a warm plate for roughly the same amount of time you cooked it; the spoon resting technique ensures that there is even air circulation around the steak while it rests so that it doesn't rest unevenly. Or, you could use a wire rack too. 😂 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ And then you have dinner. Hubby is sick 😷 so I made a big pot of my special chicken soup. Packed with yummyness. My secret: I use beef bouillon to add an extra kick & I Add the garlic in last. This chicken soup can work its magic! WahlahMagic Bayy's Chicken Soup 🍲 5 chicken legs or 3 bone-in chicken breast 1 large onion, diced 2 tablespoons butter mushrooms, cut carrots, sliced green or red bell peppers, diced corn, broccoli, green beans and etc salt and pepper 3 beef bouillon cubes 5 garlic cloves, minced 1-2 handfuls of rice or noodles In a heavy pot, place a handful of onions on the bottom of the pot.  Place chicken on top of the onions.  Cover pot with a tight lid, or foil and simmer on medium-low heat for 25 minutes.  This process will draw out the chicken juices to maximize flavor. After 25 minutes, stir and add water.  Cover the chicken about 1 1/2 - 2 inches of water.  Be sure not to add too much water.  Cover the pot with a tight lid or foil and simmer for 1 1/2 hours.  Remove chicken from pot and pull/scrape the meat from the bone.  Set the meat aside.  Return the bones back to the pot of water/broth, season the broth with salt, pepper and bouillon cubes, cover and simmer for an additional 15 minutes.  Remove and discard bones. Add carrots, mushrooms and rice or noodles. Stir and simmer for 3 - 5 minutes.  Add onions and green peppers. When we were kids my mom always made beans and hot dogs on Friday night. she was tired from grocery shopping and cleaning and it was a quick meal. Of course, I had to give it my own foodie twists! Я люблю блог darkzip потому что, именно с этого блога началась моя кондитерская и в принципе поварская деятельность. Об этом блоге рассказала моя любимая крёстная мама (это было 4 года назад), благодаря которой я встал на поварскую деятельность. Для меня было трудно что-то готовить, так как я не знал, где дома лежит инвентарь кухонный и что у нас дома есть из продуктов. Я не знал никаких техник по нарезке овощей, про карамелизацию, текстуру кремов. А этот блог научил меня всему: как приготовить курицу с овощами в бульоне, как сделать красивую корочку, но чтобы и курица оставалось сочной, как добавить бульону вкуса, для этого надо добавить корнишоны, морковь, лук, лавровый лист, тимьян и другие специи (мама обожает этот рецепт). В данный момент, когда я прошёл мастер-класс у Андрея, получил огромные знания, благодаря которым хочу создавать собственные десерты. И когда у меня заканчиваются идеи, я захожу в блог Andychef, так как там всегда много разных подсказок и идеи которые никогда не заканчиваются! Этот блог подходит для всех возрастов, для разного уровня подготовки, для всех кондитеров и поваров. Там всегда крутые подсказки и всё очень доступно и понятно (это я знаю по себе). Hey Kitty Girl, get yo' corn puddin'! My Georgia mother passed on her love of southern food. This corn pudding casserole was given a Tex-Mex twist, with bacon fresh jalapenos roasted red peppers and sharp cheddar cheese. Here at Lum Orng farm to table restaurant, chef Sothea can often be found experimenting in the kitchen with new combinations of flavours and styles of presentation, but his dishes are still rooted in the cooking traditions and culinary culture of Cambodia and the wider Mekong region. Finally trying out eatbanza’s chickpea rice!! Given how much I love eatbanza pasta I had high hopes & it did not disappoint 😌 it tasted very much like risotto. Mixed it with traderjoes cauliflower fried rice (I buy it in bulk because its usually sold out), leftover rotisserie chicken, and a soy sauce/rice vinegar/sesame oil sauce for the quickest dinner! 😋🍚 ~~~ Yesterday at work this girl brought in a dairy free gluten free keto lemon cake and it was SO GOOD. Gonna try to recreate soon & will post if it turns out well 🍋💛
