This Harissa Roasted Chickpea open wrap is fresh, zesty and super easy to make for a healthy lunch or a lighter dinner. It’s a great source of protein and doesn’t break the calories bank. The dressing is delicious and the recipe can be used in many other dishes or as a dip. 😋 Serves 2- Rinse and drain 400g can chickpeas, pop in a roasting dish and sprinkle with 1tsp of harissa seasoning, 1tsp olive oil and shake the tray to coat the chickpeas. Roast for 20mins at 200 giving them another shake half way through. Meanwhile, make the dressing with 4 heaped tbsp O% fat Greek style yogurt, 1tsp harissa seasoning, 1tsp sumac, a generous squeeze of fresh lime and fresh coriander. Mix with a spoon. Spread the dressing on a wholemeal wrap, cover with lettuce, red peppers and then the chickpeas. Finish with more dressing, sprinkle of sumac and fresh coriander. The simple meal full of high prana food. Cooked with love by my mom and served on the plate are: 1. Black chickpea or kadala sundal( which is made by tempering the boiled chickpeas in coconut oil with ground curryleaves and coconut paste. garnished with fresh coriander and salt to taste.) 2. Fresh tomatoes, cucumbers and carrots along with a few olives. 3. A cold aloo chat made by roughly chopping cold boiled potatoes and adding black salt, freshly ground pepper and a bit of chaat masala, topped with fresh coriander leaves and I added a few pomegranate seeds to add a pop of color to it. 4. A curd dip made with fresh curds and cumin powder made fresh at home. A no grain meal, which is great to have when you feel like you need a boost of energy! ~ ROASTED CHICKPEAS ~ . Roasted chickpeas are really simple to make and make a great base or addition to a salad or a snack. . It is as simple as draining, rinsing and drying a tin or chickpeas, tossing in some olive oil, seasoning with salt and pepper and baking at 160-180C until they are crispy, around 30-40 minutes. Once cooked, sprinkle with seasoning of choice - tonight I used cumin and smoked paprika. . Chickpeas are part of the legume family and are a rich source of fibre to assist with digestive and gut health and increased satiety. They have a low glycemic index, preventing large spikes in blood sugar level, making them suitable for individuals with diabetes or insulin resistance. They are also a good source of protein for muscle repair and recovery, iron, assisting with oxygen transport, and folate, which is an important B vitamin needed for making DNA. . In addition to a tin of roasted chickpeas, this salad contains roasted pumpkin, Babar spinach leaves, cauliflower and red onion. If I had feta I would have added that also. I dressed it with extra virgin olive oil, white wine vinegar, Dijon mustard and honey and we had it with my Chicken, Lemon and Parmesan Rissoles. Delicious! . SWEET & SPICY CHICKPEA SALAD, 1sp . . Last night I had the pleasure of converting some chickpea-phob's to chickpea-fans with this DELICIOUS salad. It may not look spectacular....but the taste is enough to change the mind of any legume-loather. . . Ingredients: (serves 2 as a main, 4-6 as a side.) 1 can chickpeas, drained and rinsed 1tsp allspice ½tsp cumin ½tsp coriander ¼tsp chilli flakes 1 medium tomato, diced 1c diced cucumber ½ medium red onion, finely chopped 30g Mainland reduced fat feta 4 large medjool dates (or 6small) ⅓c chopped parsley 25ml lemon juice 1tsp olive oil Salt and pepper . . In a non-stick pan on medium heat cook chickpeas and spices for a few minutes, shaking pan regularly. Place in medium sized bowl with remaining ingredients. Toss to combine. Season to taste with salt and pepper.
