My take on the Fajita Chicken poppers from the other day. They were so good and spicy I thought the meat mixture would pair well with a sweet potato. So I cooked up a ground version of the poppers and added 1/4 cup of the chipotle sauce. Then just topped 1/2 a baked sweet potato with it. It was really good and super quick and easy to make. This will definitely be a recipe I make on the regular basis. 1 lb. ground chicken 1/2 finely diced green pepper 1/2 finely diced red pepper 1 finely diced jalapeño 1/2 finely diced yellow onion 1 tsp minced garlic 1/2 tsp of each: chili powder, paprika, chipotle chili powder cumin, oregano, salt, pepper 1/4 tsp cayenne pepper (optional) Place the ingredients above In a pan with 1 Tbsp oil oil and cook through. Add 1/4 cup of the chipotle sauce and mix well. The batter should be on the thicker side.⠀ ✔️Dip cauliflower florets in batter, shake off excess & fry until golden brown. (I used a small saucepan) Drain excess oil on a paper towel. (Bake version: grease a baking sheet pan with oil, place battered cauliflower florets on the pan. banana bars everyday please . . if you know me, i love all the sweets. i’ve cut back on sugar a ton, so it’s hard trying to find pastries or bars that aren’t gluten free or loaded with crazy amounts to sugar. these bars always hit the spot and plus I sneak them in during brekkie from time to time 😉 . . 2 ripe bananas, 1 tablespoon coco sugar, one heavy pour maple syrup, 1 egg, tablespoon melted butter (i use a vegan butter), 1 cup almond flour or oat flour (either or both!), 1/2 tablespoon cinnamon, 1/2 teaspoon nutmeg, 1/2 teaspoon baking soda, 1/4 teaspoon salt. • mix all the dry ingredients and wet ingredients separately then combine. i usually mix and top with nuts, chocolate, or fruits 😋
