Happy Sunday! Happy weighinday! I am down another 2.2 lbs. I feel better than I did yesterday and I'm glad to feel like I am back on track. Weighed in at 177.6 today. • I'm at a loss for words to be honest. For as many times as I have tried and failed to lose weight, never did I ever imagine, I would be at this place. 2.6 lbs away from my initial weightloss goal. I always told myself 180 lbs. Then, it was more of a range because I wasn't sure how my body would look and I figured I would figure it out when I got there. Well, my Fitbit says 175, which now I'm under my initial goal and 2.6 lbs away from that goal. I had also teetered with the idea of 166 since that would make an even 100 lbs lost. • No matter what my end result will be, my initial goals I set for myself, are just within arms reach. I can't believe it. I can't believe I'm at almost 90 lbs lost. It's so surreal. I always knew I liked being thicker so I really cannot imagine being less than 165, which is still 12 lbs away. Vegetable & Red Lentil Paella Ingredients 6 Bite Me Fine Foods Red Lentil Fakki Patties 2 cups aborio rice 1 litre organic chicken style or vegetable stock 100g green beans, sliced 1 cup frozen peas 1 onion, sliced 2 cloves minced garlic 1 tomato, diced 1/2 cup white wine 3 tsp tomato paste 2 stalks thyme (leaves only) 2 tbsp parsley, chopped 2 tsp sweet paprika Sea salt to taste Method: 1. Fry onion and garlic in olive oil, add paprika and rice. Fry for 2 minutes and add 1/2 the stock and white wine. 2. Simmer until mixture boils. 3. Add green beans, sweet paprika and tomato paste. 4. Once mixture has reduced, stir in parsley, peas and tomatoes. 5. Add the other half of the stock and reduce heat. 6. Simmer until rice has cooked through. 7. after a bit of teasing, and many requests, I'm finally sharing the recipe for my SUPERFOOD BREAD ! it's gluten free, and packed with fibre, protein and nutrients from wholegrain oats, and tonnes of different seeds. it's perfectly soft on the inside, and crisp on the outside, whilst also being freezer friendly ! Another fridge clean out dinner! . Leftover roast sweet potato and pumpkin, cos lettuce, purple cabbage, leftover batter made from buckwheat flour and natural yoghurt made into little pancake things, parmesan, fermented veg, olives, pesto, crunchy broadbeans thehappysnackcompany and lemon. . There would've been an egg but I dropped the carton on the floor and smashed them 😫 . Bowls like this are one of the easiest ways to start including more veggies into your diet. They don't need a recipe, they take 5 minutes to throw together and just about any combo works so you can throw whatever you have in the fridge in there. Another magnifico salad 🌿 Warm, roasted sweet potato with toasted cauliflower and anchovies 😋 Method~ Simply chop and roast 3 sweet potatoes, 2 peppers, garlic and chilli in 2 tablespoons of olive oil for half an hour. JELL-O ANIMAL RESCUE 🐜🦂 I’ve had this prepared Jell-o sitting in our fridge for quite some time. It’s still looks good but I’m hesitant to consume it.
