It’s our 3 month gluten-free-versary! 🙅🏽‍♀️🌾🙅🏽‍♂️ We wanted to share what we’ve learnt so far, as it’s actually been a really positive experience for us! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ We honestly thought being gluten free would bankrupt us in the beginning 💰 After the initial ceremonial gluten-banishing of the kitchen cupboards, our “big shop” was of course twice the price than usual! But, after some intensive packet-reading in supermarkets, we quickly learnt that ~80% of the shops are filled with naturally GF foods: we didn’t need to spend a small fortune! We just needed to keep an eye out and be creative with our cooking 🥘 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Similarly, we presumed eating out would be a nightmare. But, we’ve been pleasantly surprised with the range of GF options, coeliac-friendly big chains and independents, as well as coeliac-award staff. Of course, there’s still the places that just don’t get why you’re asking about cross-contamination, but one the whole, we’ve had a positive experience so far! 👍🏼 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ That being said...it’s safe to say we’ve been over-indulging 🍰 It’s been all too easy to order a GF sweet treat with our coffees, “just because it’s there!”, when normally we’d just be grabbing a coffee...and this is why we can no longer look a GF brownie in the eye 😂 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Tell us about what you learnt in the first few months of being GF, and what’s changed now? Coeliac awareness week in Finland. My gluten free story. I found out I was a coeliac about 20 years ago. I visited an asthma nurse at the health centre and told her I had stomach ache every single day. I also had started to get symptoms from lactose. Then a blood test was taken and it was clear already then that I had coeliac disease. But I didn't stop eating gluten until I had had a gastroscopy. My last glutenous meal was a pizza. 🍕 It was confusing at first to know what you can eat and what to avoid and I even had a session with a dietitian and got then the hang of things pretty quickly. I don't mind being a coeliac. I mind that non-coeliacs can still sometimes be pretty ignorant about coeliac disease but you live and learn... I make all my decisions on where to eat, where to travel etc based on where I most likely won't get contamination that easily. Even that is not a problem since I love travelling around UK and Italy and gluten free options are bountiful. Coeliac disease is not a problem. A very warm welcome to September! 🍂 🍁🍂🍁🍂 Warmth is seems to be a bit of a “theme” running though my life at the moment - I’ve just returned to some incredible British weather from an incredible trip to Israel where I experienced warmth in terms of climate but, even more so, in the warmth of welcome and hospitality that was shown to me whilst I was there. Those, along with the delicious food, beautiful accommodation and fabulous company certainly made it a very memorable trip and one I promise to share more about in the very near future. And, whilst this latest blast of heat and sunshine here in the UK could lead you to think that we were right in the middle of summer, we are in fact on the cusp of Autumn – one of my favourite times of the year. There’s something about September… perhaps it comes from memories of starting a new “chapter” at school… but it always feels like an opportunity for making fresh starts, meeting new people and trying new things – which is quite appropriate as I will be inviting you to do all of the above this month! If you’re thinking that you need a fresh start to your morning routine, then when not join me and fellow guests in the warmth of my kitchen where I will be demonstrating some delicious new ideas for breakfast? Man, I’m going to be lost when I leave Wanaka and eriksfishandchips. I’ve been so amazed with the quality each and every time, anyone in the area I highly recommend stopping in there a few times (as well as Queenstown). The range for coeliacs is incredible! My lovely Ben back from Kenya having a little pose hivebeachcafe Burton Bradstock. So proud of all my children and especially of the way Ben copes with his diagnosis of coeliacdisease I know it’s not always easy but he really doesn’t make a fuss and accommodates others sometimes quite bizarre responses to his requests for food. I have seen him be given bowls of plain rice and just tuck in whilst everyone else gets great food. Needless to say after 15 years we are all better at making things clearer and people are genuinely more educated about being glutenfree. I hope that education continues to grow and we all have the access to wonderful food that we should. Hey all, I get so many people ask me questions. What is Coeliac Disease? Why can’t you eat gluten? So I thought i would make a post for you all to give you a bit of an understanding! 💕💕💕💕💕💕 Coeliac disease is caused by a reaction of the immune system to gluten. The symptoms include: * bloating, diarrhoea, wind/constipation, stomach pain, bloating, nausea, tiredness. 💕💕💕💕💕 Once diagnosed, it is treated by following a gluten-free diet for the rest of your life. Failing to follow a GF diet can lead to osteoporosis (thinning of the bones) and in rare cases bowel cancer. 💕💕💕💕💕💕 Coeliac disease is not the same as an allergy to wheat. Coeliac disease is a well defined, serious illness where the body’s immune system attacks itself when gluten is eaten. This causes damage to the lining of the gut and means that the body cannot properly absorb nutrients from food. 💕💕💕💕💕 Coeliac disease is NOT a food allergy or intolerance, it is an autoimmune disease. Wheat allergy is a reaction to proteins found in wheat, triggered by the immune system and usually occurs within seconds or minutes of eating. Even very small amounts of gluten can be damaging to people with coeliac disease. Therefore, taking sensible steps to avoid cross contamination with gluten is important. For example you have to use separate chopping boards etc to avoid CC. I’ve definitely been risking myself for some decent food in Queenstown, but this one was pretty great and didn’t react at all. Harry’s pool bar, queenstown 🤤. . I’ve tried so far these guys, Frankton pizza (highly recommend) and fat badgers, who honestly rated the worst with me. Just really expensive for the quality you get. One of the best wraps I’ve ever had, this one is from lewrap_official , the chicken Caesar, only I had to get it with aioli instead of the Caesar sauce as it has gluten in it. Again this is one of those fast food places where it’s hit or miss, some take a lot of caution, some it’s not even worth it, this one is near my work and very aware, whilst it’s not coeliac accredited, and it’s an “eat at your own risk” they are very thorough and use clean gloves, and use fresh ingredients for me. Again I repeat it’s not coeliac accredited, but if you ask most places are more than happy to cater for your needs. To finish off coeliacawarenessweek we want to really highlight the theme of “coming together for the gluten free community”. One of our special customers Lola, had a glutenfree High Tea that was supported by coeliacnewzealand to allow those living gluten free to come together. Sue made some lovely wee gluten free savouries to share with this other beautiful gluten free food! . Below Lola’s mum Justine shares some of Lola’s story to help others be aware of what we can do to support those living with coeliac disease. . Lola has been diagnosed with coeliac disease since she was 17 months old. She was a really sick baby and we had no idea that when we fed her gluten, it was making her sick. Since her diagnosis she is a different child. Lola is nearly three now and is thriving on a gluten free diet. . Lola’s favourite snacks include home made chocolate chip cookies, seaweed, dried bananas, carrots, peckish crackers and gherkins! . The most challenging thing about Lola’s disease is that when we travel it’s really hard to find food that is gluten free and healthy. There is still limited options available and when we fly they never have options for her. It’s tough. I also find it hard when I ask for gluten free food at cafes and I get looked at like I’m being difficult. People don’t realise that Lola’s coeliac disease is serious and she gets very sick when contaminated. It’s not just a diet I have put her on. . The best thing others can do to be supportive of people with coeliac disease is to make them feel included and have an option for them. It doesn’t have to mean everyone eats gluten free. Rounding out coeliacawarenessweek with one of my fave gluten free goodies from littleislandnz 🍽🤤 Massive appreciation for every single company providing us with safe food options... even if some taste like cardboard, I still love you for trying. • Being such a trivialised disease, we need all the awareness we can get. Many people think Coeliac disease is easily fixed with a gluten free diet, which is far from the case as most foods are at least contaminated with gluten.. making every meal a game of Russian roulette. Each exposure results in my own immune system attacking the lining of my intestines, with the resulting damage preventing me from absorbing nutrients from food. Aside from that, patients suffer from a multitude of debilitating symptoms and increased risk of a long list of other diseases.. diabetes, cancer, osteoporosis to name a few. Personally, I’m currently struggling with low blood pressure and iron levels from internal bleeding, due to complications from this disease. this week was coeliacawarenessweek - i’m not coeliac but i am gluten intolerant and haven’t been able to eat gluten for over a year and a half now 👎🏼 gluten has always been probably my favourite food group and i am a massive foodie, so cutting it out of my diet completely has been extremely difficult! 😫 being gluten free means a lot of forward planning, judgement from waitstaff and heaps less options when eating in, eating out, eating with friends or travelling. 🌟Crumbed Tofu Tortillas🌟When I tell people I have a coeliac daughter & a vegan son, I sometimes see a flash of dread in their eyes (“please don’t ask me to cook for their family!”😂) Yes it can be hard juggling the needs & preferences of everyone, including classic kid fussiness, but I’m so glad there are awesome options available these days. To help celebrate Coeliac Awareness Week, I teamed up with Countdown countdown_nz who have a huge range of gluten free products. We’ve been enjoying these corn tortillas, stuffed with crispy crunchy cajun crumbed tofu & plenty of salad, coriander, jalapeño, sriracha & dollops of vegan aioli. Messy handheld fun that can be personalised to suit any fussy eater 👍🏽 To make the tofu, I used a two bowl process: the first bowl contained 2 heaped Tbsp of plain gf flour mixed with 6 Tbsp of water, 1 tsp salt, 1/2 tsp cajun spice. The second bowl was 1/4 cup gf breadcrumbs mixed with 1/2 tsp cajun spice. Loaded black bean veggie nachos with guacamole, fresh salsa, corn chips and baby spinach🥙 This gluten-free meal inspiration tonight is for Coeliac Awareness week, running this week in NZ! The black bean mix is pretty easy to whip up - head to my blog for the vegetarian chilli recipe, but sub out the kidney beans and corn for black beans. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ 🍞Coeliac disease(CD) is an autoimmune disorder that causes an intestinal reaction to gluten, which is a type of protein found in foods containing wheat, rye, barely, oats (approx 1 in 5 people with CD react to pure, uncontaminated oats!), or any other derivatives of the above. It’s hereditary, however both genetic and environment factors play important roles in CD. According to coeliac.org.nz, it’s currently estimated 60,000 to 70,000 NZ have the disease (aka 1 in 70), but up to 80% are unaware they have the condition - this statistic totally blew me away!😳 ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ 🍞CD causes damage to our small intestine lining, the site where we absorb most of the nutrients from our foods, making it difficult for the body to absorb vitamins, minerals and other nutrients form the foods we eat. CD can lead to a range of symptoms; like fatigue and weakness, nausea and vomiting, nutrient malabsorption (iron and folate acid deficiency the most common), difficulty concentrating, weight-loss and more. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ 🍞Diagnosis is key to managing and improving health. and fortunately there are a range of tests available to confirm whether or not you have CD. Chat with your doctor about testing if you feel you may be at risk - it’s important is to be consuming gluten for tests to be accurate. 🌟 GLUTEN FREE CHICKEN AND MUSHROOM PIES 🌟 It’s Coeliac Awareness Week and you didn’t already know, my daughter and I have been gluten free since the beginning of our journey into resolving her allergies and eczema naturally, and we’re on a mission to show that eating this way is also delicious! It helps that Countdown has a range of gluten free products that allow us to easily participate in shared food experiences which means a lot to Miss 8. Their Chocolate Mint Creme biscuits are amazing and our friends can’t tell the difference which is perfect for parties and shared treats. Tonight was netball practice so I needed something quick + delicious so thanks to a special delivery yesterday, I made up a delicious pie recipe that also used the mushroom sauce leftover from last night. She ate two, that’s how good they were 👌This recipe makes around 4 pies. Recipe: 1 x box Free from Gluten Pizza Dough Mix 2 eggs 60ml oil (I used avocado but liquid coconut oil would also be great) 100ml water 5 x chicken thighs cut into bite size pieces 1 cup x creamy mushroom sauce Instructions: Fry chicken pieces in a little fat of your choice and add mushroom sauce until it’s cooked through and seasoned well. Make up pizza dough recipe according to box with the eggs, oil and water. Spread onto a baking tray and bake for 5-6 mins at 175 degrees to help firm up the dough a little. Warm up pie maker and spray with coconut oil spray. Take pastry out of oven and use a large mug to press into circular shapes. Lay bottom pastry layer, spoon in the chicken mushroom filling, lay upper pastry layer and brush with a little milk or egg. Cook in pie maker until crisp.
