Eating the rainbow! 🌈 ⁣ ⁣ We all know that eating a variety of different coloured fruits and vegetables is important for health, but why?⁣ ⁣ Each colour provides different phytonutrients which are essential to good health thanks to their antioxidant and anti-inflammatory properties.⁣ ⁣ Is it important to remember which colours do what?⁣ ⁣ Not really!⁣ ⁣ But it’s great to try to get some of each of the colours onto our plates each week to cover all our phytonutrient bases!⁣ ⁣ I find the best thing is to aim for a variety of colours in my shopping bag: 🥬green, 🍇purple, 🍅red, 🥔white, 🍋yellow and 🥕orange.⁣ ⁣ I’m often guilty of sticking to green, orange and white so I forced myself to buy this purple cabbage at the farmer’s market on Saturday.⁣ ⁣ I find a whole cabbage is a LOT for two people to get through in a week so I’m planning on adding it to salads at lunchtime, making a slaw to go on tacos, and chucking it in a stir fry.⁣ ⁣ Does anyone else shop like this?⁣ ⁣ Pictured: today’s lunch featuring potato wedges, purple cabbage, mixed leaves, a dollop of hummus, apple cider vinegar, extra virgin olive oil, and salt and pepper.⁣
