Celebrated a wonderful couple at their beautiful wedding this weekend! And they were so incredibly sweet and had the caterer make me my own menu! 🥰 I was so touched at their kindness and that they thought of me! To start, I had canapés of roasted veggie cups with an Asian slaw in cucumber cups, then a courgette noodle salad with truffle oil and edible flowers then roasted aubergine and peppers - not pictured was strawberries and rhubarb in compote 😍 it was SO delicious, so pkufriendly and just was such a lovely day ❤️❤️ conqueringpkupkuphenylketonuriapkufoodpkulifepkudietpkustrong

Had the most lovely wine tasting lunch with my friend yesterday at petershamnurseries ! I was so happily surprised they put together an entire menu I could eat! 😍 Each course was paired with a delicious wine from the Piedmonte region of Italy: beginning with a mushroom bruschetta (wild mushrooms sautéed in garlic and olive oil), next a salad with blood orange pieces, a main of delicious roasted potatoes and cabbage with garlic and spinach and finished with a roasted apple with raisins! Big day for half marathon training - 12 miles! I fueled up for breakfast having double what I normally would: 2 slices of goodgrainbakery brown bread with some avocado 🥑 and spices, then some kokodairyfree coconut yogurt with a banana 🍌 some raspberries and honey! Also had a latte my boyfriend made me (with Koko coconut milk) 😊 not pictured is my Vanilla Sphere (protein supplement)! the run went great, so I’d say these 2 breakfasts are great fuel!! conqueringpkupkupkufoodpkudietpkulifeveganveganlifepkustrong
Had the most amazing dinner tonight at The Wild Rabbit (thewildrabbitkingham )!! I was a bit nervous at first, since the waiter seemed quite overwhelmed by my “low protein diet allergy” but once I spoke to the chef, he said no problem at all - this is so much simpler than I thought (glare at the waiter)! I was just so happy and thrilled the chef not only understood what I meant by “low protein,” but also that he made such an amazing meal! The starter was made of fresh organic vegetables from daylesfordfarm and had this delicious pesto/butternut squash sauce, followed by a main of roasted cauliflower and butternut squash covered in winter greens and some tasty sauces. First mentor date of the year at Farmer J! First of all, I’m so lucky to have such amazing mentors, who also love to eat healthy and always come with me to try new vegan places and foods!! Second, Farmer J has some amazingly delicious vegetables!! We had the roasted whole cauliflower and it was SO good 🤤we also got my favorite polenta sweet potatoes, some laffa bread with these tasty sauces (although laffa bread is quite high in protein so I just had a taster) and then I got my own miso veggie bowl with aubergine, cavolo, mushrooms and squash!
