I love carrot cake and this was my first attempt doing it but in a low carb edition. To be honest, it was really good! I almost ate the whole tray jaja! And the best part was that my glucose didn't went all over the place unlike when you buy something selled as "sugar free". The advantages of doing your own cravings is that you are in control of the ingredients and portions. You have all the control and you can figure out the outcome in your glucose. I know that not everybody likes yo cook and it's easier to buy something but think in what happends after you eat something...You may find that it raises your glucose, it makes you feel bloated, you spend a lot of money...etc. At the end it's better to find and create things that really nourish your body and soul. I started casually tracking my weight loss last year, and I didn't do very well. I started at 86.9kgs, went up to 87.7kgs and pretty much plateaued after that. But with the diabetes being heavily monitored, and better eating habits, I'm at my lowest weight I've been in a long time! I can't weight (get it...😂) to get below 80kgs! Baked buffalo chicken spaghetti squash! YEEET • Cut a spaghetti squash in half and clean it - then place it in the oven at 400 degrees for 40 minutes. Meanwhile, make buffalo chicken dip. I used a rotisserie chicken with hot sauce, cheese, sour cream, cream cheese. Once that is mixed all together put it aside.
