Pot of gold! I cleared out the fridge tonight prior to veg box delivery tomorrow. Carrot, potato, swede, potato, apple, leek and sage all went in this soup. This will see us through the weekend and be just the trick in this cold weather. I'm really funny about soup at the moment - I realised that I can't eat it when I'm on my own. Butternut squash, pumpkin & feta arancini with warm salad ☺️ I made this from last nights leftover risotto. Just roll into balls, dip in egg and breadcrumbs (I blitzed old bread in a blender). Traditionally these are deep fried, but I’ve made them healthier by just popping them in the oven and baked for 20minutes on a 1800c I served with a warm salad, slightly griddled vegetables, drizzled in olive oil and sprinkle of walnuts. Any nuts will do, but I just picked up some fresh ones from the local farm shop ☺️ Tip: make a batch and freeze so you have an easy lunch/dinner when you’re pushed for time. Veggie cheesy nuggets made with leftover veg from Sunday lunch. I can’t go on enough about these little beauties! Incredibly quick and easy to make, the kids really enjoy them and they’re a great way to use leftover veg. And they’re tasty warm or cold. INGREDIENTS 🥦2 cups cooked cauliflower & broccoli (approx) This is two cups total. 🥦1 cup breadcrumbs 🥦1 cup grated cheddar 🥦1/2 tsp salt 🥦1 - 2 eggs depending on size METHOD 🥦Preheat the oven to 180C and line a baking tray with baking paper 🥦Blitz the vegetables in a good processor. Pulse it so its finely chopped rather than turning the veg into a paste. 🥦Using your your hands squeeze out any excess water (the cauliflower will have loads more than the broccoli) 🥦Put all the ingredients in a large bowl and mix well. Hands are the best tools for this job 🥦Shape into patties 🥦Bake for 25 minutes turning halfway through 🥦Done!

There's a good story to this soup. A month ago when I was cooking a 3 bean chili for 20+ coworkers, I was worried that my chili was too liquid cause I only had flat plates to serve it on. So I scooped out a couple of cups of liquid and put that in a container in the freezer at work, and then completely forgot about it, and today I was putting something in the freezer and saw this container with bright red liquid and was like what's that .. Oh right yeah!!! So I took it home, defrosted, added some water, some nice chili soup toppings (fried bread strips, salty yoghurt, bacon bits) and damn this was a good soup dinner. Salmon cakes 🧡 Definitely the easiest fish cakes I make and my sons favourite. A great way to use up leftover salmon which is what I did. You can also make and freeze these ready for another day. INGREDIENTS (makes about 12) 🧡2 tbsp olive oil, plus a little extra for frying the patties🧡1 onion, finely chopped 🧡1 red pepper, finely chopped 🧡3 cups cooked salmon at room temp (skinless & boneless)🧡1 cup bread crumbs 🧡1 tbsp parsley 🧡1 tsp salt 🧡1 egg METHOD 🧡Put the olive oil, onion and pepper in a pan and cook over a medium heat for about ten mins till softened but not browned. Set aside to cool a little 🧡Flake the salmon into a large bowl. Add the breadcrumbs, cooked veg, parsley, egg and seasoning 🧡Using your hands, mix well and shape info palm size patties 🧡Fry in a little olive oil on a medium heat for about 3 minutes on either side 🧡I served it with peas, potato salad & sriracha mayo. Breakfast today was this bread upma. It's something I make whenever there's bread & I'm bored of sandwiches & toast. It's a recipe adapted from Tarla Dalal's book (swipe to see). This is the first recipe book I bought when I moved to live alone in Mumbai 11 years ago. I know it's fashionable to sneer at Tarlaben, but at that time, hers was the only name I knew & trusted. And I really did need help with breakfast, because I've never been much of a cereal fan. A hot breakfast is what I need to begin my day. So here’s the situation...⁣ ⁣ a) I haven’t been posting on here because every time I try, the app crashes 😤⁣ ⁣ b) I think the crashing is triggered from trying to post multiple photos at once and then it’ll keep crashing the second I open the app after that ⁣ ⁣ c) This curry is surprisingly good! It’s been a long stretch of gunning hard and operating outside my energy envelope. My husband headed back to Vancouver yesterday, I had committed a while back to attending a charity event last night as Mrs. Vancouver Island, and I don’t have any cooked food so I needed to whip up something really quick. ⁣ ⁣ This is a case of looking inside my fridge and putting together random ingredients. Inside my fridge I had:⁣ ⁣ ✨roasted buttercup squash wedges with oregano and rosemary leftover from a prior dinner but the squash was so dry and the flavour was off so eating them alone is a no go⁣ ✨leftover sliced up raw leek from a risotto I made (still have to share that but I can’t until the app lets me post a carousel of photos)⁣ ✨a couple of mushrooms ⁣ ✨1/3 left of a pretty old zucchini ⁣ ✨old leftover jasmine rice ⁣ ✨a bit of leftover coconut milk⁣ ⁣ I looked at these random things and decided a curry was my best chance at combing them lol⁣ ⁣ ✨Sautéed leeks and zucchini (sliced into rounds and quartered) in oil. Added mushrooms once the zucchini was softened. ⁣ ✨Cut up the squash wedges into small pieces and tossed them in. ⁣ ✨Seasoned with salt and pepper. ⁣ ✨poured in the coconut milk and mixed in some Thai curry paste. Added more pepper.⁣ ⁣ And that’s it! Poured over the re-heated rice. Actually tastes so good ☺️ And now I’m back in bed where my body just feels seized up with pain. So my phone died yesterday at trash café and I couldn't get any photos of the menu. It was small but mighty, jacket potatoes, bacon sandwiches, and homemade tomato soup with grilled cheese. Sold all but two jacket potatoes which I bought home to make twice baked potatoes. Thought everyone knew how to make these, but Richie doesn't, so for the record you slice cooked jackets in half, scoop out the filling and mash together with butter and cheese, before putting the filling back in, topping with more cheese and baking. Served with just a chopped salad of tomatoes, lettuce and olives. Chicken wraps for dinner 🌯 One of my favourite ways to use up leftover chicken. Shredded chicken, grated raw veg for crunch, good quality mayonnaise (I used hunterandgatheruk 🥑 mayo) and some lettuce for more texture and to stop the wrap from going soggy. Leftover cranberry sauce muffins - because some of the best recipes come from figuring out how to deal with leftover ingredients! We’re moving out of our flat in London in a week, and I’ve been working through everything left in the pantry, fridge and freezer to avoid throwing things away. I hate wasting food and actually enjoy the challenge of ‘leftover surprise’ cooking - it makes me feel like I’m on a cooking show liked Chopped, which gives you a mystery basket of random ingredients to cook with. I completely forgot about this leftover amazing cranberry sauce from last year’s Thanksgiving 😬 as it was tucked away in the back of the freezer! But then I found this cranberry oat muffin recipe from aheadofthyme.com, which also helped me use up some other ingredients in my pantry including flour, oats, and brown sugar. — DID YOU KNOW that food waste is a major contributor to climate change? And therefore, fighting food waste is of massive importance. Obviously this must be tackled on a large scale (especially in grocery stores) to have greater impact, but every effort we can make to change our mindset about and approach to food, even as individuals, can surely help! — These muffins make a kick-ass easy breakfast that feels fancy, especially when you warm them up a bit in the microwave and serve with Greek yogurt and more of the cranberry sauce drizzled all over. It feels like autumn up in here! Made Kedgiree with leftover biryani and basmati rice from Indian takeaway. I poached some smoked mackerel and hard boiled some eggs. I fried some onion, chillies, and a jalapeno pepper with some curry powder until the onion was soft and translucent. I then added the rice and biryani (which had vegetable sauce), and made sure the rice was warmed through. "CHICKEN & BACON PIE"...This was just the business las night! You can see how I made it - step by step on my stories! I put some chicken thighs into a large pot with herb stalks, celery ends, spring onion ends, onions and carrots, put enough water in to cover everything and then left the whole lot simmering in the oven for probably 45mins to an hour...I didn't set the timer so can't be completely sure🙈 I strained it through a sieve, tore the chicken into bitesized pieces and mashed the veggies in the colander to get ever last bit of flavour out. I then made a sauce with softened onions and celery, browned off bacon and the stock. I added chopped herbs, a bit of double cream and seasoning. I let it cool completely and then covered it with jus_rol puff pastry and gave it 2 layers of egg glaze using clarence_court eggs. I put it in the Aga/oven for about 45mins and out it came - looking like this!😋

The best Sunday suppers start cooking soon after lunchtime. Low and slow stovetop lamb ragù simmering the afternoon away until rich, lush, savory, and fall-apart tender. In a separate container whisk a whole carton of egg whites together with Dijon mustard, garlic powder, onion powder, dried chives, salt and pepper to taste. Oh dear god, I am actually someone who posts photos of their freaking lunch. I'm truly sorry. However...lunch.. vegan Ramen noodles with LOTS of chilli and ginger. I make seaweed broth with lots of veg odds & ends every weekend and freeze pots to eat over the week. A box of pre-chopped peppers, broccoli and courgettes makes this a very quick & easy meal. Am not bring virtuous or clever or super healthy.
