I cup jasmine rice Hand full of frozen mixed veggies 1 can coconut milk 2 cups water 2 jars of TJ red curry Coconut oil This is so easy and literally takes a few minutes. I don’t measure so here you go! Throw the rice in a pan with some coconut oil until it starts to brown then add can of coconut milk Maybe 6 mins. Then add water. Maybe 6 mins. Chickpea kale curry with brown basmati rice! 🙏🏼 Have a great humpday everyone! In Germany we have a public holiday tomorrow! What are you up to? 😊⠀ .⁣⠀ 2 cans of crushed tomatoes⁣⠀ 2 cans of chickpeas⁣⠀ 150g kale⁣⠀ 1 onion⁣⠀ 2 cloves of garlic⁣⠀ 1 tsp chili flakes⁣⠀ 1 tsp garam masala⁣⠀ 1 tsp cumin⁣⠀ 1 tsp ground coriander⁣⠀ 1 tsp turmeric⁣⠀ 1 tbsp maple syrup⁣⠀ salt & pepper⁣⠀ .⁣⠀ Roast the sliced onion with a splash of water. Add the minced garlic a few minutes later. Next, add kale stems and drained chickpeas. Drizzle the maple syrup on top. When the stems are tender add the rest of the kale and one minute later the tomatoes. Now add all the spices which are left. Use a lid and let it simmer on low heat for 5 to 10 minutes. Serve it with rice of your choice or potatoes. Top it off with spring onions, black sesame and some lemon juice! Quorn and Pineapple Coconut Curry 🍍 🌱 The QUICKEST and BRIGHTEST curry ever! ☀️ 🌱 🔻🔻🔻 Ingredients: Frylight 1/2 tin pineapple ring chopped into cubes 1 medium sized carrot chopped 1/2 yellow pepper chopped 1 onion diced 3 cloves of garlic finely chopped 1 bag quorn vegetarian steak strips 1 tin low fat coconut milk 1/2 pint vegetable stock 1 and 1/2 tbsp mild curry powder 1 tsp onion powder 1 tsp ground cumin 1/4 tsp turmeric 1/4 tsp smoked paprika 1/4 tsp cayenne pepper 3 tsp desiccated coconut Method: 1. Fry the veggies in frylight until the start to soften. Add the garlic and pineapple and fry for a further 2 minutes. 2. Add the quorn pieces and stir before adding the coconut milk and all of the spices. 3. Stir well then add the vegetable stock. 4. Simmer for 15minutes to ensure the quorn is cooked through. 5. Serve with rice and top with a sprinkle of desiccated coconut. Bag of dried green lentils 2. One large can of no sodium diced tomatoes 3. Jar of sugar free tomato sauce 4. 3/4 cup of unsweetened almond milk 5. Two table spoons of curry masala spice 6. Two bay leaves • • INSTRUCTIONS: •place lentils and water into a large pot with bay leaves - boil for 20 minutes until lentils absorb water •add the rest of the ingredients and simmer for ~3 hours •TADA add to regular rice or cauliflower rice 💥🥰

🌶CASHEW CURRY🌶 _ This curry is so tasty, and so simple to make - it’s a Doctor’s Kitchen recipe that I’ve slightly amended based on what I had in the fridge and in the cupboard! Makes enough for 4 portions. _ 🌈You will need: 2 red onions 5cm lemongrass 1 courgette 2 peppers (optional - some say they have reactions to nightshade plants) 1 red chilli (optional - some say they have reactions to chillis) 3 carrots 3 handfuls of spinach 5 garlic cloves (I always buy organic veg that’s not in plastic wherever it is available) 200g cashews (plain and 100% cashews no additives etc!) 400g tin of chickpeas in water 400g tin of coconut milk (the best one I have found is brand Chaokoh - so creamy!!) 15g ginger - peeled and grated 2 heaped tablespoons of medium curry powder Brown rice (portioned as on the packet) Coconut oil Sea salt Black pepper _ 🌈 Method: 🌶 Place the cashews in water for 20mins and drain, during those 20 mins, peel and chop all of your veggies. 🌶 Heat the coconut oil in a large pan and cook the garlic, ginger, onions, and lemongrass. _ 🌶 Add the curry powder, drained cashews, pinch of salt and pepper, and cook for about 1-2 mins before adding the coconut milk, drained chickpeas, and around 200ml of water (less water if you’re adding less veggies). _ 🌶 Add all of your veggies apart from the spinach and simmer for 40 mins until the sauce becomes thick and creamy - simmer for longer if needed. _ 🌶 During this time, cook your brown rice for 25-30 mins, drain, and portion as accordingly. _ 🌶 Stir in the spinach in the final 5 minutes of the cooking time. _ 🌶 Serve and enjoy! _ For my birthday my kind sister and one of my best friends individually got me the two @doctors_kitchen books - his first one, and the most recent one “Eat to Beat Illness” and honestly they’re fantastic, I highly recommend them ☺️ _ #ArthritisFoodie

Mom's Curry Prawn & Squid Recipe - Super easy and fast to make! ® Ingredients: 500g of prawns 350g of squid 2 Tbp of curry powder 3-4 cloves of chopped garlic ® Seasonings: 2 tsp of chicken stock powder 2 Tbp of light soy sauce 1 Tbp of sugar ® Liquid: 200 ml of water ® Instruction: Heat 2 Tbp of oil, and stir fry the garlic lightly. Add in the curry powder and 100ml of water to the pan, and lightly stir fry them. Add in the prawns and squid. Stir fry them lightly, then add in the chicken stock powder, light soy sauce, and sugar. Stir fry for 30 seconds. Add in the remaining water and let it simmer for approximately 2-3 mins for the squid and prawns to cook through. Serve. ® That's it! That's my mom's classic Curry Prawn & Squid Recipe. Additionally, you can also add in curry leaves for stronger fragrant of the curry. ® I do hope you give it a try in cooking this dish. Aloo Gobhi is bae❤️ Simple recipe with no onion & garlic but taste is so delicious 😋 You need: Cauliflower Baby potato Cumin seeds Black peppercorns Bay leaf Cinnamon stick Tomato 2 green chilli Salt to taste Coriander to garnish For masala paste : Ginger paste , turmeric powder, cumin powder , coriander powder, fennel powder , chilli powder make a paste & keep it aside. Preparation: Marinate cauliflower & baby potato with turmeric , salt & chilli powder for 10 minutes , add molten butter and grill it for 15 minutes . Salmon and vegetable curry 🐟 ⁣ ⁣ Ingredients- ⁣ Onion, garlic, turmeric, garam masala, cumin, mild chilli powder, tikka masala curry paste, chopped tomatoes, passata, salmon fillets, butternut squash, green beans, mushrooms, butter beans, double cream. ⁣ ⁣ Fry off onions, garlic and the spices, add the curry paste followed by the chopped tomatoes and simmer⁣. ⁣ Roast butternut squash in the oven until cooked. ⁣ ⁣ Add mushrooms and green beans to curry and as much passata as you want depending on the consistency you want. And more curry paste and spices to taste and leave to simmer.⁣ ⁣ Cook salmon in oven.⁣ ⁣ When the butternut squash is cooked, add to curry along with the butter beans and double cream.⁣ ⁣ Finally add the salmon.⁣ ⁣ A creamy, tasty, family friendly curry 👌

It’s not quite the weekend yet, but in the spirit of Friday night Fakeaway, check out this take on a chicken satay. I’m looking forward to my left overs tonight as part of my weekly meal prep plan! This recipe used light coconut milk which helps to keep the calorie count down if you are looking for a lighter option. I’ve also used a Nut Butter that is purely nuts with no added nasties...make sure you check your label. It’s got veggies packed in there too which not only bring a nutritional dimension to the dish, but also a colour dimension. It’s a very brown dinner, so I think colour is needed! If you are looking for a high protein dinner, you can always add in some more chicken to boost it. Curries are usually served with rice, so I went with brown rice to keep the fibre content up. On Tuesdays I am so busy with late football for the boys that it is easy to prepare in advance a super speedy dinner that you can reheat in no time like my Turkey Mince Curry 🍛. It’s done under 30 minutes and very nice eaten on its own with a few poppadum or with a bit of rice for example. Here is the recipe for 5 people: - 500gr mince turkey - 1 red onion - 1tbsp (you could use more but I kept it mild for kids) of Tikka Masala Spice Paste from @pataksuk - 1tsp ground ginger - 1 can of chopped tomatoes - 1 can of chickpeas - 150gr kale or spinach In a pan, fry in olive oil the chopped red onion for a few minutes and add the tikka masala paste and ginger. Cook for another 2-3 minutes before adding the meat. Break the mince down with a spoon. Season. Cook for 7-8 minutes and add the can of tomatoes and chickpeas. Simmer with a lid on for 15 minutes and add the spinach/kale for another minute until it is wilted. Recipe (2 portion): - 150 - 200g Chicken Breast/ Thigh/ Drumstick - 1 Potato (Medium or Large) - 1 Carrot - 2 or 3 cube of Japanese Curry Cube - 1 Onion (Small or Medium) - Some Spring Onion (Optional) - ½ or ⅓ Chicken Soup Cube (Optional) * The ingredients can change based on own preferences. Steps: 1. Chop all the chicken, potato, and carrot into cube. (small or medium size) 2. Mince the onion. 3. First, cook the onion untill slightly translucent. 4. Then, put in the chicken, and cook until slightly brown. 5. Put in the rest vegetables and cook for a while. 6. Pour in the water (until it covers all the ingredients) and the chicken soup cube. 7. Let's it simmer for 15- 20 minutes. ( Add some water to simmer if the soup level is quite low) 8. Put in the curry cube and cook for another 5 minutes. (*Keep stirring) 9. Vola! You are done. . Kari Ayam Medan (ala RM Tabona) Source@dee_devina Hasil: 6 porsi BAHAN 1 ekor (800-900gr) ayam kampung, potong kecil-kecil 500ml santan kental (perasan pertama) 1750ml air panas 3 buah kentang ukuran besar, potong sesuai selera Minyak utk menumis bumbu Bumbu Halus 12 butir bawang merah 6 siung bawang putih 20 buah cabe merah keriting 5 buah cabe rawi 3 cm jahe 1/2 sdt jinten bubuk 2 sdm ketumbar 5 cm kunyit 4 batang serai (ambil putihnya) Bumbu Lainnya 4 lembar daun jeruk 2 lembar daun salam 7 cm kayu manis 3-5 butir cengkeh 2 buah bunga lawang 3 batang daun kari (ambil daunnya saja) 1/2 sdm kaldu ayam 1.5 sdm gula pasir (aku gak takar, kira2 aja) Garam secukupnya (td aku pake 1/2 sdm kyknya, ga ditakar hehehe) PROSES 1. Rebus ayam dengan api besar dan air mendidih selama 5 menit smpe kotorannya terangkat. Angkat dan cuci bersih sekali lg 2. Gunakan panci bersih, tumis bumbu halus dan bumbu lainnya hingga matang dan harum (kurleb 10 menitan). Masukan ayam dan air panas. RECIPE Winter is here, all we can do is eat good food and wait it out! . Honestly I’m also a weirdo that loves this cold the next day, it’s like the equivalent to pizza for me SUE ME!!!! 🍕 . GREEN THAI CURRY Serves 3-4 . 🌱 2 tsp coconut oil 🌱 1 onion, diced 🌱 1 Tbsp garlic, minced 🌱 2 Tbsp green Thai curry (store brought or fresh) 🌱 1 can coconut milk (400ml) 🌱 1/2 cup water 🌱 1 1/2 tbsp soy sauce 🌱 1 large potato, cubed - pre boiled 🌱 2 Cups frozen veg (corn/peas/carrot/cabbage/broccoli/beans) - could be fresh . METHOD 1. Pre boil the potato until cooked (or skip this if you ain’t keen on a sneaky potato chilling in your curry.) . 2. Add coconut oil, onion, & garlic to a pan on medium heat. Cook until the onion softens. . 3. Add in all other ingredients, bring to boil then let simmer for 15-25 minutes (this time may vary if you use fresh veggies vs frozen) . 4. Serve with rice and live a happy life 👌🏻🙌🏻

Saute for 10 mins then add 4 cups water and pressure cook for 5 to 6 whistles Add potato and brinjal cubes, water as required and close for 1 more whistle or cook it 10 -15 minutes. Heat oil over medium high. Cook onion, garlic and ginger 3 min. 2. Add chicken, when changes from pink to white, add curry, cook 2 min. 3. Add coconut and broth. Stir, simmer rapidly 10 min until reduces. 4. Add salt and peas, cook 2 min, taste to see if it needs more salt (different powders have different saltiness). Sprinkle with coriander, serve over rice.
