Salmon and vegetable curry 🐟
Onion, garlic, turmeric, garam masala, cumin, mild chilli powder, tikka masala curry paste, chopped tomatoes, passata, salmon fillets, butternut squash, green beans, mushrooms, butter beans, double cream.
Fry off onions, garlic and the spices, add the curry paste followed by the chopped tomatoes and simmer.
Roast butternut squash in the oven until cooked.
Add mushrooms and green beans to curry and as much passata as you want depending on the consistency you want. And more curry paste and spices to taste and leave to simmer.
Cook salmon in oven.
When the butternut squash is cooked, add to curry along with the butter beans and double cream.
Finally add the salmon.
