With the exception of tonight, it’s finally getting nice enough to eat dinner outside! Minnesnowta, there IS light at the end of the long dark tunnel called winter! • This picture was actually taken a few weeks back while at my parents, the first of hopefully many nights we’ll be eating on a patio. • I haven’t talked too much about it (blog post to come though) but about 2 months ago, I was starting to get sick whenever I ate. I developed a mild intolerance to dairy a while back but it had gotten to a point that extended beyond lactose. For 30 days (well, today is day 29), i cut out gluten, sugar, soy and dairy. Starting Saturday, I’ll start incorporating them back in to see what my body reacts to but that’s a story for another day. • I’m here to tell you about this BUDDHA BOWL. I’m a fairly picky eater so my first concern in cutting all these allergens out was, what the heck am I going to eat?! • Not only does this Buddha Bowl taste delicious but it literally takes out two minutes to make! There are also a ton of possible variations so I eat this multiple times a week and never get tired of it! Since I gave up meat a few years ago, i made mine vegetarian but it would also be delicious with some chicken on top. • I love it so much, I shared the recipe on the blog. While I can’t force you to eat it like I did to my parents, I do hope you’ll try it. Seriously, it’s so easy to make that I actually felt ridiculous writing the directions. I make my own food! 👩🏻‍🍳 With or without allergies if you’re constantly buying prepared foods, frozen foods, eating out, etc. your grocery bill will be through the roof! . Thankfully there are some replacement products that are SO cheap now. This gluten free pasta only cost a couple cents more than regular pasta. . How’d I make this pasta? I’m on a gluten-free/vegan kick lately, so let’s ride this wave. I’m not either of those things, but tons of people are! I love making homemade mac and cheese. It is so incredibly easy and absolutely delicious, and it’s my go-to meal when I need to whip something up quickly. I’ve heard that most vegan mac & cheese out there is terrible, so I wanted to try to see if I could whip my own up. And you know what? It was pretty darn good! Creamy burrito casserole Ladies and gents this is what cooking looks like at my house. Two of the “same” dinner side by side. My fiancé is from the midwest okay. The key to life is cream of mushroom soup with xyz ingredients. Ya gotta hot dish. Mine is completely dairy free and hers is mild to due allergy to capsicum (peppers among other things like paprika). My recipe: 1 1/2 handfuls DF cheddar cheese. DF mushroom soup (see last post). 1/2 pound taco meat 1/2 can refried beans. An onion 3 flour tortilla shells. Enough hot sauce to make ya smile. Optional but not in either of ours: bell peppers When I made this pre allergy it was ingredients listed doubled and put into an 8x8. I still double the meat and beans as it is DF and goes in both our dishes. HOW TO: I start sautéing the onion first, add hamburger and taco seasoning to brown. Once cooked mix in the refried beans. At this point I take out 1/2 the mixture and set aside. In 1/2 the mixture I add my hot sauce. Start layering like lasagna. Take half the mushroom soup and spread it on the bottom of the loaf pan. Next tear up 1.5 tortillas and layer. Then half of the meat and beans mixture. After that spread a handful of cheese out on top. Repeat layers once more ending with a smaller handful of cheese on top (or more, you do you boo). Estos cuadritos son como una especie de blondie con sabor a limón, muy ricos y sin lácteos 😊🍋😍 Ademas son muy fáciles de hacer y llevan muy pocos ingredientes. Para 16 cuadritos: •Precalentar horno a 180°C. Forrar molde cuadrado de 20x20cm con papel mantequilla •En un bowl, batir con batidora a velocidad alta 1 taza de yemas de huevo (12 yemas o 240g) con 1½ taza azúcar. Bate hasta duplicar el volumen y obtener una mezcla muy pálida (si no lo bates lo suficiente, no se formará esa capota crujiente arriba tradicional de los blondies) •Agregar 3 cucharadas jugo de limón, 1 cucharadita extracto de vainilla y la ralladura de un limón grande •Con uña espátula, íntegra con movimientos envolventes 1½ taza harina sin polvos de hornear (no mezcles demasiado, cuando ya veas poca harina detente) •Divide la mezcla en 6 pocillos y añade 5-10 gotas de colorante (violeta, azul, verde, amarillo, naranjo y rojo) en cada uno según corresponda, y revuelve hasta obtener el color deseado. Verter cada color por separado en el molde, esparciendo cuidadosamente •Hornear 30-35min. Dejar enfriar por completo y cortar. Deliciously nutritious Prawn & Asparagus Tagliatelle. A wonderfully simple dish, that I’ve lightened by swapping half of the pasta for courgetti. The original recipe is available from sainsburysmagazine.co.uk and here’s my slightly adapted (dairy free) version: Serves 2 (easily doubled)- Place 3 nests of tagliatelle (around 100g) into boiling water and cook for 6 mins, then add 100g chopped tenderstem broccoli and cook for a further 3 mins or until al dents. Meanwhile, heat 1 tbsp olive oil in a frying pan and cook 250g trimmed and chopped asparagus & 2-3 crushed garlic cloves, stirring for a few mins. Place a 300g pack of courgetti in the microwave & heat according to pack instructions. Add 150g cooked king prawns to the asparagus in the pan and heat through. Finally, add a generous squeeze of lemon juice & season. Remove from the heat and stir through a few spoons of dairy free yoghurt (Alpro coconut works well). Drain the pasta and toss together with the courgetti, and prawn mixture. Sprinkle over some fresh flat leaf parsley & serve. SALADS AREN’T BORING! 🌿 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ORGANIC INGREDIENTS ✨ – 1 cup green lentils – 3 cups water – 1 medium white onion – 1 clove garlic – 4-5 large carrots – 3-4 radish – 1 cup fresh chopped dill – 2 Tbsp. olive oil – 2 cups fresh Arugula ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Roast carrots well while the soaked lentils are on the stove. I sautéed some onion and garlic on the cast iron for the mix. Chop fresh veg and herbs and assemble! I like to cook without measuring so thanks to @megdejong.nutrition for figuring out the proportions and adding the recipe directions to her site. I’ll be turning off the oven for the summer so thought I’d share for those cooler evenings we may have 😊 Perfect for evenings with company or work lunches. #brucesroots

Get your chips and veggie sticks ready for this delicious roasted artichoke hummus with spiced chili oil! I love hummus because it is so versatile, easy to make and delicious 😋 what is your favorite dip? Roasted Artichoke Heart Hummus with Spiced Oil 1 ½ cups artichoke hearts fresh or frozen (thaw and pat dry if using frozen) 2 tbsp olive oil 1 tsp garlic minced Kosher salt, pepper Heat oven to 425. Line a baking sheet with parchment toss artichoke hearts with olive oil, garlic, salt and pepper. Roast for 20-25 minutes flipping halfway through. Set aside to cool. 1 ½ tsp coriander seeds 1 ½ tsp whole fennel seeds 2 tsp paprika ½ tsp red chile flakes ½ cup olive oil Heat small skillet over low heat. Add coriander and fennel seeds toast for 30 seconds, add paprika and chile flakes for another 30 seconds. Remove from heat add spices to a blender with the olive oil and blend until smooth. (Strain if preferred) 1 can chickpeas 2 garlic cloves, peeled and chopped ¼ cup tahini Zest and juice ½ lemon Salt, pepper Fresh chopped parsley Roasted artichokes Place all ingredients in a food processor and blend until combined. Top with oil and serve.

Posted @onthehealthtip01@veganrecipevideo Matcha vegan donuts 🍩 by @thetastyk 🍵 Ingredients: 1 cup (128g) flour (I used spelt but you can sub with regular flour) ¼ cup (50g) coconut sugar 1 Tbsp (7g) matcha powder 1 tsp (3g) baking powder ½ tsp (1.5g) baking soda pinch of salt ¾ cup (177ml) plant milk (I used almond milk) 1 tsp apple cider vinegar 2 Tbsp (30ml) maple syrup 2.5 Tbsp (35ml) coconut oil, melted ½ tsp vanilla extract
Matcha Glaze: 1 cup (225g) powdered sugar ¼ tsp matcha powder 1 tsp lemon juice 1 tsp almond milk 1.Preheat the oven to 350°F (175°C) and slightly grease a donut pan. 2.Combine the dry ingredients in a bowl and whisk together. Combine the wet ingredients in a separate bowl and mix together. Pour the wet into the dry ingredients and mix with a spatula until just combined (don't over mix). 3.Spoon the batter into 6 donuts molds until ⅔ full and even out as much as possible on the top. Place in the oven and bake for 8 minutes. Remove from the oven and transfer to a wire rack for cooling. 4.For the glaze, add all ingredients to a bowl and whisk together until smooth. Dip the top of each donut into the glaze and place on the wire rack for cooling. Spicy kale caesar kinda day - pretty much used my df/gf caesar dressing but added Tabasco to give it a kick 🌶 . VEGAN SPICY CAESAR DRESSING🌱 1c soaked cashews 1/4c water, might need more as you blend 1 whole lemon, juiced 2 tbsp nutritional yeast 2 whole garlic cloves 1tsp Dijon mustard 1tsp garlic powder 3tsp capers 2tbsp olive oil Pink salt & cracked pepper 2-3tsp Tabasco, depends how much heat you want!! Blend all the ingredients in a blender. Massage kale with a little olive oil and then pour dressing over. Let sit in the fridge for at least 20 minutes. 💥Whole30 Pesto Pork Tenderloin💥⠀ ⠀ In the last 6 months or so I've been forcing myself outside of my comfort zone with regards to cooking. My general protein go-tos are chicken breasts, ground beef and chuck roasts. I've started cooking more pork and I came up with this extremely easy recipe! ⠀ ⠀ Ingredients:⠀ -Piece of Pork Tenderloin (my piece was from @reunionfoods)⠀ -Compliant pesto (I used my Argula Tahini one but anyone will do and if you don't have time to make one @traderjoes has a compliant one as does @gothamgreens!)⠀ -Salt⠀ -Pepper⠀ -Thyme⠀ -Basil⠀ -Oregano⠀ -Garlic Powder⠀ -Onion Powder⠀ ⠀ ⠀ 1. Take you pork tenderloin on to a plate or bowl and sprinkle spices over the piece evenly. Make sure you turn it over so the entire piece is seasoned properly.⠀ 2. Let the meat sit covered with plastic wrap for at least 20-30 minutes in the fridge. ⠀ 3. Once the time has passed, preheat your oven to 400F.⠀ 4. Grab a baking pan, I usually use glass and place the pork tenderloin inside.⠀ 5. Grab the pesto and evenly coat the meat liberally.⠀ 6. Once appropriately coated, place into the oven for 30 minutes. I would recommend using a meat thermometer to make sure the meat is cooked thoroughly. Pork should reach a temperature of 145F. ⠀ 7. Let the meat cool before cutting into 1- 1.5 inch slices. ⠀ ⠀ This is such an easy dish and goes great with roasted potatoes, roasated asparagus or even a side salad! And also reheats REAL well if you’re like me and live that #mealpreplife

Aren’t lunch box notes the best? I loved making them for the kids when they were little. I would print out cool designs and and custom text and spend hours cutting them out. Then I’d make a file for each kid and leave it in the kitchen so I could add notes. I also changed it up a bit too by writing notes on napkins 😉. Wish these were around when the kids were little. Not going to lie, the children of today have all the cool bells and whistles. If you’re still packing lunches, or are planning to do so in the fall, check these out. Living with food allergies and special diets can be tough, and sometimes those kids need a little extra love and a few more notes to get them thru their day. I get asked a lot about how we cope with our situation. Honestly, there’s no straight answer. I do know however that the little things we do as parents can really help our kids feel great. Years after I stopped leaving notes in lunches (regularly), we were cleaning up, and turns out, each kid had a stash of notes that I had written, saved in their keepsake drawers. I was floored. It just goes to show, those little notes make a BIG difference. Veggie lasagna: A delicious way to add more veggies to my diet! Had a couple zucchini that were close to their ending and a spaghetti squash that was squirreled away for ages (btw- spaghetti squash will last longer in your pantry than in your refrigerator) and made a lasagna out of it(no noodles!) Homemade tomato sauce, a package of tofu and 12 oz of chicken breast make this a delicious and healthy meal that’s filling and gives you a burst of flavor as you get your daily serving of veggies. Adding a “sauce” to any meal is so transforming in my opinion. Without this aioli, my breakfast would have been so boring, don’t you think? I’m allergic to yokes so that’s why I always eat egg whites instead, so I always feel like I need to add a little something extra so make up for it 😉 So this morning, I sautéed up some spinach and then added the egg whites with some garlic powder and that’s it! Added my homemade spicy aoli (I love spice if you haven’t noticed) and then added some sides. Whole30 compliant bacon and a half an avocado with some Everything but the bagel seasoning. Voilà! Yesterday I made some healthy “Nutella”peppermint fudge with just 6 ingredients. I did not use any Nutella. It’s super easy to make your own healthier, low-sugar, good fat version. # Almost all the recipes in my cookbook are easy to make because I don’t like complicated. I don’t use hard to get ingredients because I can’t get them down here. I don’t use fancy kitchen gadgets because I don’t have any. # My recipes have lots of opportunity for customization because we all don’t have the same taste buds or tolerance to foods. # I wanted to include a peppermint recipe because it’s so calming to the gut. Also most of my desserts are a way to include more collagen in your diet, as one tablespoon blends in without even noticing. # This recipe can be customized a million different ways. You can just mix hazelnut butter, cocoa powder and honey and have a healthy Nutella spread. You can add an oil and make a fudge or you can use peppermint flavoring and top it with coconut butter to make a fancy but super easy dessert. # My recipes should not be followed like law. They are an experience. I want to involve your senses, encourage tasting along the way and tune your intuition. What do YOU want this dessert to be? # Cooking and baking is one of the best remedies for my perfectionism because I can let go and play. # I experiment. I’m curious. I use my senses, am intuitive and have fun. Most importantly I trust myself. And the stakes are low. Even if I mess up, it’s usually still tasty enough. I learn. I never beat myself up. # This is the attitude that creates the “rest and digest” parasympathetic nervous system mode required for deepest healing. # I’m working on cultivating this attitude in the rest of my life, but for now the kitchen is the place where I can relax into this creative meditation and enjoy the fruits of my labor. This is what I mean by “treats that heal”. I hope I can pass some of this magic onto you through my book.
