Came home tonight and was majorly craving comfort food- spaghetti and meatballs to be exact 🍝💃🏻 Didn’t want something super heavy so I made these lightened up spinach and feta turkey meatballs!
1 pound ground turkey, 2 whisked eggs, 1/4 cup chopped basil, 1 cup chopped spinach, 1/4 cup crumbled feta, 1/4 cup grated Parmesan, 1/2 cup of breadcrumbs, 3 minced garlic cloves, 2 tbsp olive oil, 1/2 tsp dried oregano, salt and pepper to taste
Mix together all of the above ingredients in a bowl until well combined. Form 12-14 meatballs, about 1.5-2 inches in diameter. In a sauté pan, heat 2 tbsp of olive oil. Once hot, add in half of your meatballs and brown on all sides for 5 to 8 minutes. While the meatballs are cooking, pour a jar of marinara sauce into a separate saucepan and bring to a simmer. Add the meatballs to the sauce once they finish cooking in the sauté pan and let simmer for 10-15 minutes. Continue process with second half of meatballs. Serve with your favorite pasta and toppings of choice! #keddellcorn
