Let’s taco about this little beauty 🤤🌮💕 . . . You can’t ever go wrong with chicken tacos. Not only are these babies under 10 net carbs a fix but they are also super simple to make 🎉 . . . 6 medium chicken thighs 🍗 3/4 can of tomato sauce 🥫 4 tbsp of olive oil 🍸 1/2 a red bell pepper 🍎 1/2 a green bell pepper 🍏 3/4 of a white onion 🍈 1/2 cup of cilantro 🌱 2 tbsp of cumin 4 cloves of garlic 🌬 1 tbsp of dried oregano 🌿 1 tsp of red crushed pepper 🌶 1 packet of sazon 💃🏽 1/2 a can of green chili 🌶 Salt and pepper to taste 🧂🖤 . . . STEP#1: Boil chicken thighs in water and salt for 18 minutes. Remove chicken from boiling water and let cool for 15 minutes. Shred chicken thighs with two forks, then set aside. STEP#2: In a pan heat olive oil. Sauté garlic, onions and bell peppers until they are tender. Add in shredded chicken and mix until ingredients are combined. STEP#3: Add tomato sauce, sazon, cumin, oregano, cilantro, red crushed pepper, salt and pepper. . . . I am not the biggest fan of flour tortillas but eating low carb makes my tortilla options limited. @missionfoodsus low carb tortillas are my go to low carb tortillas. Only 6 net carbs per tortilla. You can also enjoy your chicken taco mix on a salad, in a sandwich, inside of enchiladas, on top of a low carb pizza the list goes on lol 😫 . . . Creamy delicious #dairyfree #glutenfree pasta is the best. This chicken and mushrooms dish is so simple and packed full of flavor - perfect for date nights or family dinners! Chicken and Mushrooms Ingredients: 3-4 Chicken breasts butterflied thin 1-2 cups sliced mushrooms of choice 2 cans full fat unsweetened coconut milk 1-2 tablespoons chicken stock 1-2 tbsp Dairy free butter or ghee Salt Pepper Dried parsley Fired Italian seasoning Garlic powder To Make: •Preheat oven to 350 •Season both sides of chicken with salt, pepper, herbs & spices. •Brown chicken breasts in oil of choice (I prefer olive oil) on both sides. •Remove chicken from pan, turn down heat and add dairy free butter or ghee to pan. Add mushrooms and let cook until just tender. •Add the top white portion from coconut milk to mushrooms. Add chicken broth if need to thin sauce out. Let simmer 5-7 mins. •Add chicken breasts back into pan and put into preheated oven. Weeknight Summer Dinner! Last week I used my balsamic marinade to bbq some chicken breast but added a few things in an effort to try a new recipe and it actually turned out. I posted on my stories and got some request for the recipe so here it is! I was not organized #momlife and wished I had more time to marinate the chicken but it still turned out 👌🏼 with 30 min of marinating. This is what I used:⠀ ⠀ 1.5 lbs of chicken breast - cut into smaller 4 ounce pieces ⠀ 3 cloves of minced garlic⠀ 1 tsp of fresh minced ginger ⠀ 1/4 cup avocado oil⠀ 2 tbsp of balsamic vinegar ⠀ 2 tbsp of soy sauce ⠀ 2 tbsp of worchestire sauce ⠀ 1/2 tsp salt⠀ 1 tbsp of brown sugar or date sugar I used @livafoods date sugar ⠀ Black pepper⠀ 1 tsp of dried rosemary ⠀ Juice of 1/2 a lemon or 1 lime ⠀ Parsley for garnish ⠀ ⠀ ⠀ 1. In a large measuring cup wisk together all the above ingredients. Mix well. ⠀ 2. Pierce chicken breast with a fork and place in shallow dish. ⠀ 3. Pour marinade over the chicken and make sure the chicken breasts are well coated. ⠀ 4. Marinate overnight or if you are in a pinch let marinade sit at room temp for 30 min. ⠀ 5. Preheat grill on medium high heat, oil the bbq grates to prevent sticking. ⠀ 6. Add chicken breast and cover - cook about 5 -7 min of each side - depending on thickness of chicken breast. ⠀ 7. Garnish with fresh parsley and enjoy ⠀ ⠀ ⠀ ⠀ Veggies:⠀ I used asparagus and yellow squash, sliced them and placed in a large bowl. I added 2 tbsp avocado oil and a few teaspoons of Montreal steak seasoning. I added the marinated veggies to a vegetable grill basket and placed on grill for 8 minutes. Shrimp Etouffee When I got back from Atlanta etouffee was at the top of my list for new recipes to try. I'm not super familiar with cooking crawfish so I settled on shrimp instead. I was so excited to cook this recipe I could hardly contain myself. Then I made a mistake I will never make again.....I used coconut flour. This flour is now at the top of my list of bull-you-know-what ingredients. It's not a good binder. It's not a good thickening agent. It is 100% useless at everything EXCEPT drying the absolute heck lot of whatever you put it in. Recipe #272 Pizzazzy Pizza Sauce 🍕 Tradition tomato & herb pizza sauce with pizzaz 😋 . So I pulled a bit of a brick moment and thought I was making pizza when I first started this recipe. Simple Chili Ingredients: - 1 pound ground beef - 1/2 pound sausage, casings removed (can be chicken, Italian, breakfast...whatever you like!) - 4 cloves garlic, minced - 1 onion, diced - 1 1/2 teaspoon seasoned salt - 1 1/2 teaspoon crushed red pepper - 1 teaspoon garlic powder - 1 teaspoon onion powder - 1 teaspoon chili powder - 1/2 teaspoon paprika - 1/4 teaspoon black pepper - 1 28 oz can crushed tomatoes - 1/2 cup beef broth - 2 tablespoons tomato paste - Optional- cornmeal, beans - Cheese, sour cream, onions for topping, cornbread for serving Directions: 1. In a large pot, heat about a teaspoon of olive oil over medium heat. Add the onions and cook until soft. Add the garlic and cook for another minute. 2. Add the salt, red pepper, garlic powder, onion powder, chili powder, paprika, and black pepper. Stir and cook for about a minute to cook out the raw spice flavor. Add the ground beef and sausage and cook while breaking apart with a wooden spoon. 3. Once the meat is completely broken up and cooked through, add the beef broth, tomatoes, and tomato paste. Stir to combine, bring to a boil, reduce to a simmer, and cover. 4. After about 45 minutes or an hour, uncover and stir. If the chili is not thick enough, stir 2 tablespoons of cornmeal with 2 tablespoons water in a separate small bowl. This should create a very thick yellow paste. Add to the chili, stir to combine, and allow to simmer uncovered until you are ready to eat. 5. Serve with cheese, diced onions, sour cream, and cornbread on the side! Glow Salad! 3 things I’m loving right now for seasoning any dish: capers, Greek olives, and some great EV olive oil 🙌🏻 This was my lunch yesterday. Full of vitamin C to help boost collagen and fresh veggies for lots of hydration. I’m not quite sure what to call this, but it was delish. I topped fresh arugula with sweet potatoes roasted in cinnamon and @nutiva coconut oil, fresh tomatoes from the farmer’s market, egg, kalamata olives, capers, dill, avo, salt and pepper, and some @wearebrightland olive oil. Beyond amazing!

Summer nights = Easy Summer Dinners. For me, that means something that can be whipped up in 30 minutes or less and this Fresh Tomato Tart with Ricotta and Herbs really fits the bill. . In a few quick steps, this baby is in the oven giving you just enough time to toss together a quick salad before dinner is served. . What's your go-to Easy Summer Dinner?! What You'll Need: 1 cup Whole Milk Ricotta 1/2 @Boursincheese Round 1 Tbsp Chopped Basil (I used 1 cube of @DorotGardens Basil) 1 Tbsp Chopped Garlic (I used 1 cube of @DorotGardens Garlic) Salt and Pepper to taste 1 Sheet of Puff Pastry 12 Heirloom Tomato Slices *in 3 colors, optional* 1 Egg Maldon Sea Salt *optional* . How to Whip it Up: 1. Preheat Oven to 350 deg 2. Mix first 5 ingredients together in a bowl 3. Score a 1 inch box around the outside of the puff pastry 4. Fill the box with ricotta mixture spreading it all the way to the edges 5. Slice tomatoes into thin slices. You will need 4 of each color. 6. Lay tomatoes out on a paper towel. 7. Salt tomatoes & pat away extra moisture with another paper towel 8. Lay tomatoes over the ricotta mixture overlapping slightly.. there should be three rows of four tomatoes 9. Whisk egg with 1 tbsp of water 10. Brush egg on outer edge of box 11. Sprinkle with Maldon sea salt flakes and Freshly ground pepper 12. Turn oven up to 400 deg & Bake for 10 minutes or until golden brown. last nights dinner was FULL of goddess goodness! made my vegan goddess green pesto dressing last night and DANGGG. i swear it tastes better every. single. time. i make it. also, thanks @eatbanza for making the BEST chickpea pasta on this freaking planet!! 🌎 i can’t live without this stuff! RECIPE HERE: 1 box of @eatbanza pasta 1 pack of @applegate red pepper chicken sausage 1/4 cup extra virgin olive oil 1 lemon or lime, squeezed 2 clove fresh garlic, minced 1/4 cup pine nuts 1/4 cup raw cashews 1 cup fresh organic basil 1 cup fresh organic spinach for nutritional boost 2 tbs filtered water 1/2 tsp pink salt 1/2 tsp black pepper 1/2 tsp red chili flakes . method: 1. blend up all pesto ingredients (not the pasta, sausage, or cheese... lol) up in a blender container and stick it in the fridge until pasta and chicken sausage are ready. 2. cook pasta, sauté broccoli, and organic chicken sausage. when done with that mix up all ingredients in a pot and add pesto dressing. serve, and a sprinkle @organicpasturesdairy raw cheddar cheese! omg, so good 3. enjoy! . Who likes grilling salmon?! 🔥🔥🙋‍♂️⁣ ⁣ This is a very simple recipe y’all. Rubbed the fish down with a little olive oil and seasoned with salt and pepper. #FishFridays 🐟 You should try and get oily fish like salmon and tuna in your diet at least twice a week! My favourite salmon recipe has to be my Soya, honey and ginger recipe served with either new potatoes or a Chinese inspired noodle stir-fry. 🤤RECIPE: Drool Worthy Buddha Bowl ⁠⠀ ⁠⠀ 🌱An oldie but a goodie worth resharing!!This recipe takes about 20 minutes Total and is PACKED with flavour, plant based proteins, complex carbs and TONS of nutrients!! ⁠⠀ ⁠⠀ RECIPE: ⁠⠀ 1️⃣Sauté (rinsed) chickpeas over medium heat in 2 tbsp of avocado oil. Add 1 tsp of each chilli powder, paprika and sea salt. Toss chickpeas to spread the flava! ⁠⠀ 2️⃣ Push chickpeas to the side of the pan, and add chopped red Swiss chard and chopped broccoli. When the Swiss chard is limp, remove from heat. ⁠⠀ 3️⃣ Toss chickpeas and greens in a bowl with chopped tomato and a grain of choice (I used a combo of lentils, wild rice and quinoa).⁠⠀ 4️⃣ Top with lime tahini sauce⁠⠀ ⁠⠀ ⁠⠀ 🍈RECIPE: Lime Tahini Sauce ⁠⠀ Combine: 3 tbsp of tahini, juice from 1 fresh lime, tsp of brown sugar (or raw honey. Looks like New York strip won the battle. Seasoned with a little S&P and sear on a cast iron griddle using @kingshawaiian onion and garlic butter. On the side i used my @instantpotofficial to make a LOADED baked potato. Finish on the cast iron then topped with a little more of that onion/garlic butter, sour cream, cheddar cheese, crumbled bacon and chives. Sadly, i think my man card gets suspended as i couldnt finish my dinner 😞. Wondering what side to serve with all of your grilled goodness? Southwest Steak Fries of course! ⁠ ⁠ This recipe goes with just about anything and you can wrap it in foil and throw it on the grill too.⁠ ⁠ @Windandwillowfoods Santa Fe Cheeseball Mix⁠ 1 lb new potatoes, washed and cut into wedges ⁠ 1-2 Tbs olive oil⁠ 1/4 cup shredded sharp cheddar cheese⁠ ⁠ Preheat oven to 425 degrees. Line a large baking sheet with tinfoil and spray with non-stick cooking spray. Place potatoes in a medium bowl, pour in Cheeseball Mix (Topping packet used later), drizzle with olive oil and stir. Make sure potatoes are coated well. Spread potatoes in a single layer on cookie sheet and sprinkle with Topping Packet. Bake in oven 10 minutes. Remove from oven, sprinkle with cheese and bake for two more minutes until cheese is melted. Who is up for trying this delicious smoky chipotle quorn chilli this weekend? Simples to make and healthy. Just cook off some onions with a tsp of dried smoked paprika, turmeric and chipotle chillies, 🌶 add 1 yellow and 1 red pepper, add 2x 400g tins chopped toms, fold in 1 pack quorn mince, squeeze of fresh lime, add 1 x tinned kidney beans. Simmer for around 20mins and serve with whole grain rice or a sweet potato, finish with fresh coriander and an optional dollop of soured cream.
