Soak the dates for a few minutes in hot water. Drain them and than blend all ingredients in a processor. Once a dough ball forms. Roll 12 smaller even sized balls, press evenly into silicone muffin mould pushing up the sides. Freeze. MIDDLE: scoop cream only off the top of a refrigerated coconut milk can or use cream. on a pot add your ingredients. Bring to a boil and than simmer for 15-20 you want the caramel to resemble custard (see last pic) cooked too long it will turn into a sticky caramel sauce. Fill podz return to the freezer. GNACHE: •to a small glass bowl add your coconut milk and chocolate heat in the microwave for 20-30 seconds and let sit stir for a thick sauce. Top podz return to the freezer. 1hr + layer pop them out and eat them straight away or keep in freezer for later. I love having a soup in the fridge for the week. It seems to always be there when i want something quick and healthy for lunch. This is one of my favorites for a quick meal. 🍃Pasta with tomato & cream sauce🍃For the tomato sauce I made my quick & easy basic tomato sauce & for the cream sauce you'll need: ~ •1 small onion, very finely chopped •3 tbsp. vegan butter •2 tbsp. flour •150ml vegetable broth •250ml unsweetend plantbased milk (I like to use oat milk) •1 tsp. dried oregano •2 tbsp. Nutritional yeast •Salt and pepper •1 tsp. sugar •1 tsp. lemon juice This recipes makes two portions - enough for ca 200-250g pasta . Melt 2 tbsp. vegan butter in a saupan over medium heat. Add very finely chopped onion and cook for about 2 minutes or until onion becomes translucent Add another tablespoon of butter. Once the butter is melted, whisk in 2 tbsp flour. Plus who doesn’t love it? 12 oz. linguine 1 1/2 lbs extra large shrimp, peeled and deviened 3 Tbsp extra virgin olive oil 3 Tbsp unsalted butter 4 garlic cloves, minced (4 tsp) 1/2 cup dry white wine* Salt and freshly ground black pepper 1/8 tsp red pepper flakes (optional) 2 Tbsp fresh lemon juice 1/4 cup chopped fresh parsley Instructions Cook linguine according to package instructions. Meanwhile, melt butter with olive oil in a 12-inch skillet just over medium heat. Add garlic and saute 1 - 2 minutes until just lightly golden (don't brown or it can taste bitter). Add wine and simmer until reduced by half, about 2 - 3 minutes. Add in shrimp in an even layer season with salt, pepper and red pepper flakes and cook until shrimp turn pink, about 1 1/2 - 2 minutes per side. Microwave the noodles for 1-2 minutes, then drain any liquid. Melt the butter in a large pan over medium heat. BRUSCHETTA + BURRATA. . Man was this combo bangin!! And so easy. . I stuffed a bell pepper with bruschetta chicken (chicken already blended with sun-dried tomatoes, basil, and garlic) and served next to some burrata that I dressed up with some olive oil, fresh herb, sea salt, pepper, and fresh tomatoes. If you like these kind of flavors, you really need to give this dish a try. It was a delight. . 1.First, preheat the oven to 425F. . 2.While the oven was going, I cut open a pack of the bruschetta chicken and cooked it on medium heat for about 10 minutes… I used a wooden spatula to continuously break up the meat while it was cooking. You don’t need to season this any further… it is seasoned to incredibly well and will smell so good. You’ll be in for a treat. . 3.While the meat is cooking, washed a bell pepper, sliced down the middle, & removed the seeds. You can put some cheese or veggies in here too, but I just went with the bruschetta chicken. I scooped in some of the chicken, packed it well, drizzled with olive oil, and put in the oven for another 10-12 minutes. You can keep it in longer depending on how cooked you like your pepper. . 4.Once it was out of the oven, I plated it. I used burrata sliced in half (if you haven’t had burrata its fresh mozzarella cheese filled with cream…incredibly good) and drizzled some olive oil and some salt, pepper, and topped fresh herbs. You can do this however way you want. . This is such a perfect meal prep option. Custard powder 100g blueberries -> Mix all ingredients (except the blueberries) to a creamy cream and pour on the floor. Finally, add the blueberries to the cream. -> Bake the cake at 180 degrees O / U for about 60 minutes. Zucchini CheeseBurgers ~ I love tiny food anyway so I used sliced zucchini as my buns. 🤩 ~ 6 slices zucchini 4 ounces ground meat (beef pictured) divided into 3 portions (4) 1 tablespoon cheddar spread, divided (2) 4 ounce leftover baked potato sliced into steak fries (3) 2 teaspoons steakhouse seasoning Heat air fryer at 400 degrees for 4 minutes. While that heats up, slice the zucchini, season with salt and pepper and spray with avocado spray and cook for 2 minutes a side. Set aside. Spray the potatoes with avocado spray and salt and pepper and bake at 400 for 8 minutes, flipping after 4 minutes. For each slider, take half the party, press down and add 1 teaspoon of the cheese in the middle, add the top of the party and press together to seal. Cook in a skillet for 6 minutes, flipping after 3 minutes over medium high heat. To plate: zucchini slice in bottom, burger, a tiny bit of mustard 🤩 and top with zucchini. Serve ketchup for dipping. Best Paleo Avocado Chocolate Cake Made with sweet potatoes instead of flour and avocado chocolate frosting. This flourless and dairy free chocolate cake is made in the food processor and perfect for any celebration!🙌 ~ Ingredients Cake * 2cups raw sweet potatominced * 2large eggs * 3/4cup black cocoa powder * 1/2cup maple syrup * 1/2cup coconut sugar * 1/2cup coconut oil * 1/4cup coconut flour * 1tablespoon vanilla * 2teaspoons baking powder * 1/2teaspoon sea saltor more salt to taste Frosting * 1 1/2cup mashed sweet potatosee notes on how to make * 1/2cup avocado * 1cup medjool datespitted * 1/2cup cocoa powder * 1teaspoon vanilla extract * 1/4teaspoon sea salt Instructions Preheat oven to 350F. Line the bottom of two 6″ spring form cake pans with rounds of parchment paper. In a food processor mince sweet potato. Then in a blender combine all ingredients for cake until smooth. Divide batter in-between the two cake pans. Bake on 350F for 45-50 minutes, then chill in freezer while you make frosting. For frosting, steam sweet potato cubes, then drain water, and combine with rest of frosting ingredients until smooth (about 5 minutes). 🍠’Cheesy’ Veggie loaded sweet potatoes🍠 This creamy vegan cheese sauce takes your veggies to another level. Kid approved...and grown up!😋 ~ 🌱Recipe veggies in cheese sauce: Sauté 1 small sweet onion (chopped) in a little olive oil or veggie broth until translucent, about 5 minutes. Add 1 medium russet potato (grated), 4 garlic cloves (minced), 1/2 tsp ground mustard seed powder, 1/2 tsp garlic powder, 1/2 tsp onion powder/granules, 1/4 tsp red chili flakes. Sauté another minute. Add 2/3 cup raw cashews and 1 cup vegetable broth or water. Bring to a simmer and cook until potatoes are done(about 10 minutes), adding more water or broth as needed and stirring regularly. Transfer to blender and add 1 tbsp apple cider vinegar + 1/4 cup nutritional yeast (+ 1/2 tsp pickled horseradish optional). Blend until smooth. Salt to taste. Roasted vegetables pasta [zucchini, eggplants, red bell peppers and tomatoes] I could eat pasta every day. 🙈 ~ Ingredients: For 500g spaghetti Oven baked vegetables: 1 small eggplant, diced 1 zucchini, diced 1 red pepper, diced 2 hands full of vine tomatoes 3-4 tbsp oil Salt, pepper, paprika sweet, dried: rosemary, parsley, thyme, oregano and a pinch of cinnamon For the sauce: 1 garlic clove, chopped 400g passed tomatoes 4 tbsp oil Salt, pepper, chilli, paprika sweet, dried: basil, rosemary and thyme 1. Preheat oven at 180 degrees. 1. Put the diced vegetables into a bowl, add 4 tbsp of oil, mix and then add the spices and mix well again. [You can also put it into zsm, but I like to split it because it distributes it more evenly.] 2. Put the vegetables into a suitable shape and bake for 35-40 minutes. 3.Slightly fry the garlic in a saucepan in a little oil, add the tomatoes, add 4 tablespoons of oil and season with salt, pepper, chili, paprika, rosemary and thyme. 4. Simmer for 20 minutes at medium heat. 5. Line an 8x8-inch (20 x 20-cm) baking dish with parchment paper.⁣ 2. In a large bowl, combine the cream cheese, chicken, hot sauce, cheeses, and ranch dressing mix with a fork until smooth and evenly mixed. Transfer to the prepared baking dish and smooth it with a spatula so that it’s spread evenly in the dish. Freeze until solid, at least 1 hour.⁣ 3. Add onion and green chiles and cook until softened, about 3-4 minutes. Next stir in cumin, chili powder, coriander and dried oregano; allow the spices to cook for 30 seconds, then add in chicken broth, 1 can of drained chickpeas (about 1 1/2 cups chickpeas), uncooked chicken breast and salt and pepper. Simmer on medium low heat for 20-30 minutes. After 20 minutes, remove the chicken with a slotted spoon and shred with two forks. Next add in fresh lime juice and cilantro. Finally, add the remaining can of rinsed and drained chickpeas(1 1/2 cups chickpeas) and ½ cup water (or broth) to a blender. Blend until somewhat smooth, adding a little more water if necessary. Pour blended chickpeas into soup pot and then stir in the corn. Allow soup to cook and simmer for 5-10 more minutes. Serve with tortilla chips, an extra lime wedge and avocado if you’d like. Mushroom Chicken This creamy mushroom chicken recipe has the most deliciously tender pan-fried chicken smothered in a garlicky mushroom sauce. It's quick and easy - it can be on your table in half an hour. ~ 2 large chicken breasts cut in half lengthwise Flour for dredging 1 tablespoon olive oil 12 ounces mushrooms (I used baby bellas) sliced 1 dash Italian seasoning 3 cloves garlic minced 1/2 cup chicken broth 1/2 teaspoon lemon juice 1/2 teaspoon Dijon mustard 1 cup heavy/whipping cream Salt & pepper to taste Cut your chicken breasts in half lengthwise to make four thinner cutlets. Coat them in flour. Add the oil and 1 tablespoon of the butter to a skillet over medium-high heat. Once the pan's hot, add the chicken. Cook it for 4-5 minutes/side until golden. Once this step is done, take the chicken out of the pan and set it aside. Chop the mushrooms while cooking the chicken. Add the remaining butter to the pan. Let it melt, then add the mushrooms and Italian seasoning. Once the mushrooms start to release water, add the garlic to the pan. Continue cooking the mushrooms until all the water is cooked off. Take the mushrooms out of the pan (ok to put them on the same plate as the chicken). Add the chicken broth, lemon juice, and Dijon mustard to the pan. Give it a good stir until the mustard dissolves, and let it reduce for 3-4 minutes. Add the cream to the pan, along with the chicken and mushrooms. Let the chicken cook for another 5 minutes or so until it's cooked through and the sauce has thickened a bit. Preheat oven to 180 C (360 F). Grease and line an 8 inch round cake tin with baking or parchment paper. In a large mixing bowl, add gluten free flour, cocoa powder, sugars, baking powder and baking soda. Whisk together. . In a separate mixing bowl, add vegetable oil, eggs, vanilla and buttermilk. one-pot chili!!!! the great things about these types of recipes are they're entirely customizable. Don't like quinoa? Swap in rice. Only have lentils? That'll work fine. Wanna add peppers? Go ahead! (The key to adding vegetables is knowing how long they take to cook and adding them accordingly.) I first sauteed one onion in olive oil. Then I added 4 chopped carrots and one chopped sweet potato. Next I added a can of tomatoes. Spices are up to you! I added cinnamon, cumin, cayenne, salt and pepper. Also 6 cloves of minced garlic. This is when you can add your choice of beans - mine were black, kidney, and butter. Then I covered everything with water, brought it to a boil and let it simmer. About 15 minutes later I added a cup of quinoa, which again can be substituted for whatever grain you like (though I wouldn't recommend brown rice - it takes too long to cook and your vegetables will be super soft). I let it cook for 20 minutes, then I added nutritional yeast and some Yves ground beef. The perks of being vegan is you don't have to cook things to a certain temperature so you don't die. I had too much water so I added cornstarch and overcooked the quinoa and bam. Dinner. A very easy one. Only one pot to clean. What's not to love.

🍽 What else would I be posting on Sunday?! ➡️ One thing that has stayed consistent throughout my entire journey is meal prepping. The way I meal prep and what I meal prep has definitely evolved as I’ve learned more about food and fitness and what my body needs BUT I still make sure I am prepared for the upcoming week. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ I gained majority of my weight POST college. It was when I began a 9-5 office job that I started packing on the pounds. Being in an office where there was candy and treats everywhere, was brutal. I then would find myself constantly getting takeout for lunch and it was never healthy choices. This eventually caught up to me big time and was a complete reality check for me.My weight and also my bank account we’re taking the brunt of my poor food choices. Spending money every single day to get takeout gets expensive. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Meal prepping was a huge breaking point for me. As small as this change was, it set me up for success. I saved money and I began seeing the weight fall off. To this day I preach how important and vital prepping my food has been and how helpful it can be to starting your journey and staying on track. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Tonight I keep it easy per usual and made some cauliflower fried rice and ground turkey on the side. Not pictured is some bacon I cooked as well that I am planning to have with my dinners this week (omelettes for dinner are sounding real good 🍳). My 🔑 advice is prep for success 💥 ALSO get yourself some glass containers!! I got these off amazon and they’re AMAZING! They help with portion size and are way better for the environment 👍🏻

🍔BBQ Bacon Cheeseburger Stromboli🍔. . . . Makes 4 servings. . . . INGREDIENTS. . 🥓1lb lean ground beef. . 🥓4 slices bacon, chopped & cooked . 🥓1/4 cup BBQ sauce (I used sugar free Stubbs). . 🥓1/4 cup chopped onion. . 🥓1/2 cup reduced fat shredded cheddar. . 🥓2tbsp relish. . 🥓1/2 tbsp mustard. . 🥓1 container reduced fat croissant. . . . Crock Pot Vegetable Beef Soup! This was great and adding the Rotel instead of diced tomatoes gave it a nice kick!! 1-2 pound chuck roast Garlic powder Salt Pepper 3 carrots 1 yellow onion 3 medium potatoes 4 red potatoes (these were in my cabinet so in they went!) Fresh mushrooms Fresh green beans 1 can tomato sauce 1 can original Rotel 30 ounces beef broth Chunk your chuck roast and season liberally then add to your crock pot. Chop all your veggies and add them to the crock. Add in the rotel. Mix together the tomato sauce and beef broth then pour over. Cook on low 8-19 hours! I popped this multigrain bread in the oven and it was perfect! Add garlic and stir for 1-2 minutes. Add water, bullion and chicken. Bring to a boil, turn the heat down to med/low and let simmer for 10 minutes. Add the rest of the rosemary, thyme, turmeric, basil, and oregano. Taste and season accordingly. This is perfect for a delicious Sunday night dinner that’s easy to make when you don’t want to spend hours cooking. Try it out! It’s also good for meal prep too. Ingredients: . . 🔸2 tbsp Olive Oil 🔸1 lb baby red potatoes 🔸2 Lemons, juiced 🔸3 Garlic Cloves, Minced 🔸1 Onion Chopped 🔸1-2 Rosemary Stalks 🔸1 cup Mushrooms, thinly sliced 🔸3 teaspoons Italian Seasoning 🔸1 lb Chicken Thighs (or Breast) 🔸2 tsp Garlic Powder 🔸2 tsp Paprika 🔸1 cup Chicken Broth 🔸Salt & Pepper, as desired . . Steps: . . 1. Thinly Slice the red potatoes. Pour 1 tbsp of Olive Oil into an oven safe dish. Place the red potatoes along the bottom of the dish. FISH PIE 🐟🥧 I’ve not made a fish pie in a looong time. The last time I attempted one, I used a “low fat” recipe, and to say it was a disaster is an understatement; the sauce had split, it was watery, and all the potato had pooled in to the sauce - it was a sloppy mess! . THIS fish pie is made the traditional way, and traditional does equal syns, but just like my lasagne recipe, those syns are worth it! 🙌🏼 It’s absolutely delicious and the sauce is lovely and creamy, just as it should be! 😋 . My recipe works out 4.75 syns when divided in to 4 portions, and 3 syns when divided in to 6 portions. Would anybody be interested in the recipe? ITS MY BIRTHDAY!!! 🎉🎉🎉 so I’m sharing one of the recipes I started developing before I even knew what food blogging was all about. The perfect homemade brownies 🙌. And some other random pics because it’s my birthday and I’ll do what I want too 😂💁🏻‍♀️ INGREDIENTS 1/2 cup semi-sweet chocolate chips 2 cups sugar 3/4 cup oil 2 teaspoons vanilla extract 4 eggs large 1 cup flour 1/2 cup cocoa powder 1 teaspoon baking powder 1 teaspoon salt INSTRUCTIONS Preheat oven to 350ºF. Melt chocolate chips in a large bowl. This is most easily done in the microwave by heating in 30-second intervals, mixing between each interval until the chocolate chips are almost all melted, stirring to melt the remaining chips. Add sugar, oil, and vanilla extract. Mix to combine. Add eggs, one at a time, mixing well between each addition. Sift together dry ingredients. Add to the wet ingredients and mix until well combined and the batter is smooth. Pour into a greased or lined 9x13 pan and bake for 30-35 minutes. If you like more fudgy brownies, remove them from the oven when a toothpick comes out almost clean. If you like chewy brownies, remove them from the oven when the toothpick comes out clean.

That's why I experiment with making my own, and this on is a WINNER :) --- Ingredients (makes 2 servings) -1/2 cup brown Jasmine rice, dry -1/2 bell pepper, chopped -1 medium zuchinni, chopped -1/4 cup cashews -1 stalk green onion, chopped -12 oz chicken breast, cut into bite size pieces For the sauce: -1/4 cup low sodium chicken broth -1/2 tsp minced ginger -2 tbsp low sodium soy sauce -1 tbsp rice wine vinegar (can omit, but will be more of a sweet sauce) -1.5 tbsp sweetener (I used honey) -2 tbsp ketcup (I used primalkitchens) -2 tbsp sweet chili sauce (can usually find in the Asian section at a grocery store) -1 tsp cornstarch or flour to thicken --- How to prepare: 1. Cook chicken in a pan, season with garlic powder and pepper on medium-high heat 2. When chicken has browned, but is still slightly undercooked lower heat to medium 3. Add zuchinni, bell pepper, green onion, and cashews to chicken and cook until veggies are softened (~5-8min) 4. Avocado toast, roasted garlic and arugula salad. Avocado toast is pretty self-explanatory, but I’ve described my method in previous posts if you’re wondering how to do it. For the salad, combine arugula leaves with lemon juice, olive oil, Parmesan, toasted pine nuts and salt, all pretty much to taste. For the roasted garlic, take off some of the outer layers but not all of them, cut off the tops of the cloves, drizzle with olive oil and wrap loosely in foil. Bake it in the oven at 400 degrees for 30-40 minutes.
