This is my jam 👏🏻 Like how delicious does this look 😍 I’ve been on a serious rice cake kick since re adjusting my low carb life style. For any of you new peeps out there, long story short, I ate a keto diet for majority of my weight loss. I really focused on staying under 20 net carbs a day. After loosing the weight and reaching my goals I realized that I did not want to stop there. I wanted to continue to get stronger and build muscle and with that means needing to eat more. It’s been a learning curve but a super rewarding one. I’ve learned so much with food and making sure I am fueling myself with the right foods that the transition has been going so well. I do my best to stick with complex carbs and not go back to my old eating habits, constantly consuming those evil carbs that controlled my life for so long. If you’re in a similar situation just know that it’s alright to switch your routine up. Change is always a good thing and it’s inevitable it’s going to happen 💪🏻👏🏻💛

Fast Garlic & Basil Kamut Spaghetti 🤤🍽 1. Slice 4 cloves of garlic as thinly as you can 2. Coat the bottom of a deep pan with the best olive oil you can get your hands on (you should try one of ours). 3. On low heat gently warm up your garlic and make sure it doesn’t brown. It’ll take very little time to heat the garlic and olive oil through. Turn the heat off and put it aside. 4. Cook your spaghetti al dente! 🦷 we think white kamut spaghetti works really well for this. 5. Meanwhile chop up a large handful of basil leaves very finely. 6. When the pasta is cooked toss it into the sauce pan putting it back on low heat and toss in the minced basil leaves and some red chili flakes if you like some spice. 7. Toss together (if it’s too dry add some pasta water carefully blending it with the garlic oil to make a sauce) 8. This Salt and Vinegar Roasted Chickpeas will become your new favorite snack. Crunchy, tangy, and salty……An easy, protein and fiber-packed healthy alternative to chips. Warning, you will need to make more than one batch 1 (15 oz) can of chickpeas, drained and rinsed 1 1/2 cups white distilled vinegar 1 Tablespoon oil 1 teaspoon salt ( or more ) 1/2 teaspoon pepper (optional) Combine chickpeas and vinegar in small sauce pan and bring to a boil. Turn off the heat, cover and let sit for 30 minutes. Drain and spread on a baking sheet and lightly pat dry with a paper towel to remove moisture ( or let it air dry for 30 minutes) Preheat oven to 400º.degrees. Galletitas Anillitos! Siii como las de paquete pero hechas en casa!! Muy fáciles y riquísimas. Se animan a hacerlas? Les comparto la receta salen aproximadamente Que necesitamos? Manteca o mantequilla 100 grs 1 yema de huevo 3 cucharadas de leche Esencia de vainilla un chorrito Coco rallado(yo le agregue para darles mas sabor pero va a gusto) Azucar impalpable o glas 60 grs Harina 0000 120 grs Maicena o fecula de maiz 30 grs Para la cobertura Azucar impalpable 75 grs Emulsión de frutillas, si no tienen pueden usar colorante comestible rojo un poquito y esencia de frutillas. Como se preparan? Cremar la manteca fria con el azúcar, luego agregar la esencia de vainilla y la yema. Mezclar y por último agregar la harina y la fecula, una vez formado el arenado llevar a papel film y armar una masa, sin amasar, solo integrar. Llevar a heladera hasta que la masa este bien bien fria y haya endurecido. Luego estirar y cortar en circulos con cortante y con la parte de atras de un pico o una tapita cortar el centro. Colocar en una placa con papel manteca y llevar nuevamente a la heladera hasta que vuelva a enfriar la masa, asi evitamos que se nos deformen. Entonces llevar a horno precalentado 180 grados por 10 o 15 minutos hasta que apenas estén dorados los bordes. Dejar enfriar en rejilla. Para el glaseado Mezclar el azúcar con unas cucharadas de leche y la emulsión o esencia de frutillas. Tiene que quedar de una textura semi cremosa para poder glasearlas bien(ni muy líquido ni muy espeso) Bañar las galletitas frias con el glaseado y dejar enfriar. I enjoy putting together dishes that involve the freshness of extra virgin olive oil 😎😎 This particular recipe works whenever I have fresh red and yellow capsicums. Its great with a piece of freshly toasted bread scooped into the mix 🤩🤩 Ingredients: - 1 red pepper (roasted and sliced) - 1 yellow pepper (roasted and sliced) - 1 spring onion (sliced) - 3 cloves garlic (crushed) - Salt and pepper, to taste - 2 tsp vegetable oil - Extra virgin olive oil - 1 stem celery (finely diced) Method: - Heat vegetable oil in pan and add onions. Cena con hashbrowns 😛⁣ ⁣ A veces compramos un ingrediente poco usual, en este caso las hashbrowns o papas rayadas, pero después no sabemos como más incorporar este ingrediente en otros platos. Aquí les dejo esta idea que pueden usar ya sea una cena para 2 o se puede incluso hacer en un pyrex para más personas. ⁣ ⁣ Para 2 porciones: ⁣ •2 papas 🥔 rayadas (las venden en la sección de alimentos congelados) ⁣ •1/4 pollo rostizado ⁣ •1 cebolla pequeña picada⁣ •1/2 lata de vegetales mixtos ⁣ •1/4 lata de tomates rostizados ⁣ •1 chorrito de leche (opcional)⁣ •queso rayado para terminar (opcional)⁣ ⁣ Instrucciones ⁣ -Precalentar el horno en 400 grados y ponen a cocinar las papas rayadas. (Se pueden hacer en el sartén también si no tienen acceso a horno) ⁣ -En otro sartén se pone a cocinar la cebolla. For Kasper’s birthday party last weekend it rained, actually it poured. So the set up didn’t play out quite as I’d planned but it was actually really fun and the kids had a great time jumping in puddles. . Party food was a mix of fruit and veges and healthy treats like easy-to-make Beetroot Bliss Balls and Chocolate Crackles – our faves! Along with Chocolate and Blackbean biscuits and the delicious Lemon Cannellini cake by @you_are_food, (which is amazing). Made with wholefoods and all gluten, dairy and refined sugar free. Also free from nasty refined sugars, artificial additives, colours, flavours and preservatives often found in commercial treats, which aren’t so good for little tummies. . Kasper’s one request was a piñata so I managed to find some organic lollypops which were made with mainly fruits and cane sugar. Pancakes anyone?! 🥞 If you've been following me for a while you know I LOVE pancakes! Especially topped with the best berry topping! 👇🏽 We're not vegan, but these pancakes are! ( I was out of eggs 😆) 👇🏽 Fast, easy and loaded with carbs...if you're into that stuff. 😜 Ingredients: - 1/2 cup whole wheat and 1/2 cup all purpose flour - 2 tsp of sugar - 1 tsp baking powder - 1/2 tsp salt - 1 cup of non-dairy milk - 1 tsp apple cider vinegar - optional extract ( I like to use almond extract since I top my pancakes with almonds, but you can use vanilla or whatever you'd like). 🥞 Directions: In a medium bowl mix all dry ingredients. Como no podía ser de otra forma arrancamos el feriado con este budín que fue un hit. Fue una adaptación de budín base y es así: . Nivel: papa . Utensilios necesarios: tenedor o batidor, cuchara o espátula, 1 taza, molde de budín y una asadera más bien profunda. . Ingredientes: -2 huevos. -3/4 tazas de azúcar integral (o común). -1/2 taza de aceite neutro (lease como el que usas en tu casa: girasol o maíz). -1 y 1/2 de harina integral (o común con polvo para hornear o leudante). -Polvo para hornear. -Almendras trituradas (o lo que se te cante) -2 cucharadas o 3 De Coco rayado. -Esencia de vainilla. -Semillas de sésamo y chia (o las que te copen). -Leche a ojo o como yo que no tenía, usé jugo de 1 naranja grande. . Receta: Pones los dos HUEVOS con el AZÚCAR y arrancas a batir con batidor y sino tenedor, no jodamos. Cuando queda con un cierto airecito le metemos una parte de la HARINA, ponele que le metemos 3/4 de taza o 1, seguimos batiendo. Metemos el ACEITE y batimos. Agregamos las COSAS RICAS, almendras, nueces, pasas, chocolate, etc etc. Yo puse lo que detallé en los ingredientes, porque no tenía otras cosas. Agregas la ESENCIA DE VAINILLA, batís y ahora con la cuchara ( o espátula), el resto de la HARINA junto con el POLVO PARA HORNEAR, va a quedar masacote, metele LECHE O JUGO DE NARANJA 🍊 y ahí que quede la mezcla al estilo de los de caja, ni muy líquido ni muy espeso. Listo ahora al molde. Algo que a mi me copa hacer es el molde lo unto con aceite y le pongo en el piso choco en polvo, nada me copa. Y ahora al horno, lo que intenté esta vez fue ponerlo a baño María en el horno, a 180º por 45 minutos. Esto es básicamente para la humedad y para que no se queme, me pasa que tengo un horno tan malo, pero TAN malo que calienta desparejo, pues los budines me salen secos, así que con este tip no me volverá a suceder. Here’s an awesome easy 3-ingredient peanut butter cookie 🍪 recipe that’s sooo easy to make, it’s nuts! _ To make: Preheat your oven to 350 degrees. Mix all 3 ingredients together until well blended. Roll into 1″ balls and put on an ungreased cookie sheet. _ Bake for about 12 minutes. 🥞💚🌿 🙌 BREAKFAST IS... Green Smoothie Waffles!! All of the goodness usually packed into a green smoothie: spinach, almond milk, flax, banana, and nut butter... But in waffle form!! It's the most requested breakfast at our house, and kids love them!! You can make a batch ahead of time and freeze them.. then heat them up throughout the week. - PS. 🥞☑️ KID TIP: I find they use waaaay less syrup if they dip pancakes/waffles instead of drown them. Or you can even serve them with yogurt instead. - FOR THE WAFFLES--- 🌱  1 banana 🌱  1 tbsp ground flax 🌱  1 tbsp peanut butter (or your favorite nut butter) 🌱  1 tbsp maple syrup (optional) 🌱  2 cups baby spinach 🌱  1 1/4 cup @silk unsweetened cashewmilk 🌱 1 tbsp apple cider vinegar 🥞  1 1/2 cup unbleached all purpose flour 🥞  2 tsp baking powder 🥞  1 tsp baking soda 🥞  1/4 tsp salt - In a large measuring cup or mixing bowl, smash banana with a fork. Then add in flax, pb, maple syrup, baby spinach, and milk. Use an immersion stick blender (or a full size blender will work) and puree the spinach mixture. Stir in the apple cider vinegar. - In a separate large bowl, whisk together all the dry ingredients: flour, baking powder, baking soda, and salt. Then, stir in the wet spinach mixture. Stir until just combined. - Heat your waffle iron per owner instructions. Lightly spray cooking spray into iron and then add enough batter to the iron to make waffles. Every few waffles, be sure to re-spray your waffle iron as necessary. - My mini waffle maker makes 10 4" waffles. Dinner by @traderjoes 🍽 . . The freezer section of TJ’s has been a lifesaver. If possible I opt for fresh ingredients but when the fridge is running low I turn to my stocked freezer. Some of my top choices are the dumplings, turkey burgers & obvs cauli gnocchi. I recently discovered the wild caught Dover sole and wanted to give it a try. It took no time to bake in the oven with lemon juice 🍋 and seasoning. I paired it with asparagus risotto but I bulk up the portions by adding a bag of organic frozen broccoli 🥦 . . Start to finish dinner took less than 15 minutes! Quick, easy & delicious, my favorite kind of meal ✔️

Homemade crispy potato wedges 😋 Easy to make... Slice the Potatoes into even wedges and soak them in hot water (for roundabout 10min). Then you mix the wedges with garlic powder, salt and pepper, rosemary and a bit of olive oil. Bake them for 20-25min in the oven (200 °C)!
