MIDWEEK VIBE 🙌😋 . I know I said it on my stories yesterday, BUT, having a week off work is actually a godsend, I actually have time to cook, prep my meals over a glass of vino and actually enjoy it without feeling like I’m rushing all the time. Obviously I’ve mentioned that I’m an amazing housewife numerous times to the BF, anyone think he’s gonna take the hint 🤣👀 . This super easy one dish (kind of) meal, is a lovely little addition to that midweek menu. I say it’s kind of one dish because I made the sweet potato mash in a separate bowl (in the microwave - SO EASY) so I’m cheating a bit. This packs a little bit of heat, perfect for those winter warmer dishes 🙌❄️ . CREAMY MUSTARD CHICKEN - brown chicken in a hot pan & set aside. Using the pan juices, cook garlic until brown, then add whole grain mustard, double cream & white wine & cook until thickish consistency. Add chicken back to sauce and bake in oven for 10-15 minutes. I also added cavolo nero, handful of tomatoes and mushrooms - these are optional - feel free to add whatever veg you have - would also work fab with spinach 👌 . Right, I’m off to stare at my Christmas tree and chill 🤣🎄🤩

Añadimos la harina. Mezclamos el chocolate. Hacemos bolitas y las refrigeramos (2-3hr) sin aplastar. Precalentamos el horno a 200°C y horneamos durante 10-12min • Disfrutadlas mucho! I have a confession ... ⠀⠀ The past couple of weeks the thought of cooking for my family has made me want to cry ... this is us going out to eat ... AGAIN. But look how happy I am about it! Lol 😂 ⠀⠀ I am just so tired and exhausted! I had no idea how exhausting being a mom is. NO IDEA. On top of my daily list of 500 things to do, I have to feed two tiny humans, plus my husband, plus myself all day every day ... and it has to be healthy?! 😩 ⠀⠀ Look, no one’s perfect when it comes to healthy eating. We all have days where the thought of cooking a healthy meal for our family makes us want to cry (at least it does me), we all have setbacks, we all feed our kids some not-so-healthy options at times ... you’re not alone! ⠀⠀ What helps so much is planning (which I wasn’t doing the past couple of weeks) and finding ways to make cooking at home quicker, easier, and more efficient. ⠀⠀ Here are my TOP 3 TIPS!🙌🏽 ⠀⠀ 1. LEFTOVERS are life. For example, I make enough dinner to feed us lunch the next day. My husband pulls it out of the fridge in the morning and takes it to work with him - so convenient! 2. PLAN your meals and grocery shop accordingly. This makes cooking throughout the week so much easier (you won’t have to wonder “what do I feed these people?”) and also reduces grocery/food waste. 3. Keep it SIMPLE. Fancy meals are awesome, but they take so much time. A good healthy meal can be as simple as baked chicken (don’t forget olive oil and spices), a baked sweet potato, and steamed (buttered) broccoli. After that little taste of summer last week I feel like we went right back to winter this week! Which also meant cold green smoothies lost their appeal to me big time. 🍏 The answer? This warm apple pie smoothie. It’s full of warming spices, sweet green apple and a heap of green goodness. Coconut Flour is very absorbing, so at first the mixture is going to be very runny. Let it sit for a while until it thickens and then place in cookie sheet. . ♡ Why Coconut Flour? Sigue leyendo ⬇ . . 📝 INGREDIENTES . ✅ 1 lámina de hojaldre ✅ Pimientos asados IBSA ✅ 250g tomates cherry ✅ 1/2 calabacín ✅ 4 huevos pequeños ✅ Jamón serrano en taquitos ✅ Sal y aceite de oliva ✅ Albahaca fresca para decorar . 👩‍🍳 PASO A PASO: . 1⃣ Lavamos el calabacín y lo cortamos en tiras cortas. Lavamos también los tomates cherry y los cortamos en mitades. Spaghetti squash with tomato sauce I like spaghetti squash on the days I want a pasta feel but want to keep it more plantbased-sh (vs. flourbased) and not have a feast. Spaghetti squash is nutrient dense (low in cal + high in vitamins / minerals) so you can eat a bunch and feel full while still not going overboard calorie-wise. Spaghetti Squash: Slice lengthwise. Scoop out seeds (you can roast them too). Brush olive oil, salt & pepper in the insides. Upside down on a baking sheet. Poke some holes. Roast 30-40 min until fork tender (depends on size). Use a fork to fluff the strands into “spaghetti”. Back on my cauliflower smoothie bowl game!! 🥓Bacon, Gouda & Apple Muffin prep🍎 A friend suggested I make this combo and it turned out so yummy! Savory with a hint of sweet from the apple. 😋 . (GF, 35 minutes, 12 servings) 1 large egg 2 T. white sugar 1 c. sour cream 1 T. canola oil 1 tsp. yellow mustard 1/4 c. milk 1 c. GF all-purpose flour 1/3 c. GF whole grain pastry flour 2 tsp. baking powder 1 tsp. baking soda 1/2 tsp. salt 2 T. ground flaxseed 6 pieces cooked bacon, chopped 4 oz. Gouda, small dice 1 large (or 2 small) apples, small dice . 1. Whisk together the egg, sugar, sour cream, oil, mustard, and milk. Then mix in the remaining muffin ingredients. 2. Preheat the oven to 400 degrees. Spray a muffin tin with non-stick spray. Let the batter rest 20 minutes to let the flour hydrate. 3. Divide batter between the 12 cups. Bake the muffins for 18-23 minutes until a toothpick comes out clean and edges are browned. . ~Storage: 3 days in the refrigerator. ~Freezer: 😀. ~To make with standard gluten flour: The wet and dry ingredients should be mixed just until barely combined in order to avoid developing the gluten and making the muffins tough (since there is no gluten in GF flour, over mixing isn’t a problem). Also, skip the resting time and bake right away.

Curious, is it cold or warm where you are? For me, it’s snow on the ground and that calls for alllll the soup. This Eastern Carolina Shrimp “Stew” is one of the best soups I’ve ever had. My mom and I got it out of familycirclemag last year and are completely obsessed! It’s kind of like a quick gumbo- and I made a few modifications of my own that worked very well! • ↠ Recipe in second photo • Modifications: -Omit bacon (if desired) -Made own shrimp stock, peel and sauté shrimp shells in olive oil for 2-3 mins, add 1.5 cups of water simmer for 7 mins- -I subbed white russet for Japanese sweet potatoes (they are white and not super sweet) -Added mushrooms when you add fennel Add 1/2 lbs of fresh halibut when adding shrimp. . On continue dans le thème des courges avec ma 1ère Pumpkin Pie au sirop d’érable, cannelle et potiron (sans gluten et sans lactose) 🥧 Le défi était également de réaliser une pâte rapide ! Résultat ? Ce n’est pas parce que je l’ai réalisée, mais c’était un vrai bonheur gustatif. J’ai aussi pensé à faire des fleurs avec le reste de ma pâte pour éviter de la gaspiller et je pense qu’au final, ça donne assez bien. Par contre, celle-ci était cuite un peu trop rapidement à mon goût car trop fragile je pense. Au final, j’en ai étonné plus d’un dans la famille et ça, c’est le top. Aujourd’hui, j’ai mangé Papa Noël 🎅🏻 J’avais envie d’essayer mon petit moule avec sa tête toute mignonne. Voici mon moelleux à la purée de potiron, pépites de chocolat, amandes effilées et miel ! Ingrédients : 200g de potiron 100g de beurre végétal 1/2 càc de bicarbonate de soude 150g de sucre de canne 1 oeuf 150g de farine mix sans gluten 100g de pépites de chocolat Amandes effilées Miel bio Préparation : Couper des morceaux de potiron en dés, les mettre dans une casserole d'eau et cuire 15 à 20 minutes. Bien égoutter en écrasant un peu dans la passoire pour éviter d’avoir des morceaux, mettre cette purée dans le bol du mixeur. Mixer jusqu'à obtenir une purée lisse. Laisser refroidir 15 minutes. Mettre le beurre dans un bol, le faire fondre au micro-ondes. Laisser refroidir 10 minutes. Préchauffer le four à 180°c, chaleur tournante. Puis, dans saladier, mettre l'oeuf et le sucre. Fouetter à la main jusqu'à blanchiment. Ajouter la purée de potiron et mélanger. Puis ajouter le beurre tiédi et mélanger jusqu'à ce que ce soit lisse. Ajouter ensuite la farine, mélanger un peu. Ajouter le bicarbonate et mélanger encore un peu. Ajouter enfin les pépites, les amandes et fouetter légèrement. ⚠️ Il ne faut pas trop travailler la pâte afin de ne pas la rendre élastique. Poser le moule sur une plaque et y verser la préparation. Enfourner 25 minutes. En fin de cuisson, sortir la plaque du four et laisser refroidir 5 minutes avant de démouler en retournant le gâteau sur le plat de présentation. Laisser refroidir 30 minutes puis emballer le tout sous film alimentaire (pour obtenir un moelleux parfait). Réserver à température ambiante jusqu'à dégustation et ajouter le miel ou tout autre sirop désiré.
