Hello! Wasn’t really sure how to do the IG comeback thing so decided to post this soup I made. It’s not exactly summery but it’s the color of sunshine, so that counts... RIGHT???. I have been gone for many personal reasons that will maybe be the topic of the next post, but for now... soup that’s like liquid silk and the color of joy.....💕⠀ ⠀ ...............⠀ ⠀ Current favorite Cauliflower soup:⠀ In a large pot add avocado oil and add favorite aromatics: I added ginger, yellow onions, bay leaf, turmeric , cumin, coriander, a small amount of cardamom and cinammon. I eyeballed it! Then add 4 cups of bone broth( you can also use vegetable broth), and 6 cups of roasted yellow cauliflower. Bring to boil and simmer approx 20 minutes. Add coconut milk and cook a little longer. Blend either in batches or with immersion blender. Add a touch of ACV or lime, salt to taste. You can top with roasted veggies and radish like me or fresh herbs🌿. #wellnesswithshuba

Two eggs in my “as seen on tv” microwaveable egg cooker (3rd pic) the veggie patty, havarti cheese, 1/2 an avocado, a few spinach leaves, red onion, smoked paprika, sea salt, and ground pepper. It’s just not the same (hear me out on this one!!) . There is always going to be a lower carb/ lower calories solution to our cravings, but when they don’t satisfy your craving is it really a solution? . Cauli pizza and zoodles are great! BUT there is also nothing wrong with pizza and pasta, yet everyday I see people fearing these foods. Fearing CARBS like it’s some dirty word. . But there is absolutely nothing wrong with eating carbs (infact your body relies on them for fuel!) . It comes back to a need to shit our mindset and allow ourselves to enjoy all foods! . My new go-to breakfast 🤩 Chocolatey granola that reminds me of Cocoa Puffs (my ultimate childhood fav)!! Deets below 🍓 . . 1. In a bowl, mix together 1 tsp vanilla extract, 2 tbsp maple syrup (I used @choczero for sugar free), a few drops liquid stevia, and a dash of salt. 2. Add 1 cup rolled oats, 1/4 cup sliced almonds, 1/4 cup coconut flakes, and 1-2 tbsp cacao powder. Mix well. 3. Transfer to a baking sheet and bake for about 15 minutes on 350, flipping halfway through! . I had it with almond milk, hemp seeds & strawberries!

Vegan croquettes. - Credit @michalakramer 💚 - Ingredients: 5 medium potatoes 200g cabbage 1 clove of garlic half cup of flour (buckwheat if gluten free) 2tbsp ground flax seed & 5 tbsp of water, mixed 1 teaspoon of paprika salt and pepper Directions: In a small bowl start by mixing the flax seeds with the water. Leave to thicken for 5 minutes. Wash and peel the potatoes. Then shred the cabbage and potatoes in small pieces. Mix the shredded cabbage and potatoes in a bowl with garlic, flour, paprika, salt and pepper. Add the flax seed mix too and combine. The mixture will be a little wet because of the water from the potatoes. Form the dough into croquettes shape or which shape you’d like. Roll them all in breadcrumbs. Heat a small saucepan with some oil. Carefully add in the croquettes. 🍝Black Bean Pasta in a Romesco Style Sauce 🍝⁣⁣ ⁣⁣ If you want a tasty gluten-free pasta, then I really recommend trying black bean pasta. I've been buying @explorecuisine #Organic black bean spaghetti and it’s not only delicious but has that all needed al dente ‘bite’ to it that many GF pasta’s don’t have. Nothing worse than when it all turns to mush! ⁣⁣ ⁣⁣ Anyway this recipe is full of mouth watering umami flavours and actually is perfect to serve to the kids too. Ronnie has had this many a meal time  however with a whole block of cheese grated on top! 🙈⁣⁣ ⁣⁣ 🥗Ingredients:⁣⁣ ⁣⁣ 4 x Large Red Peppers ⁣⁣ 200g Baby Tomatoes⁣⁣ 100g Ground Almonds ⁣⁣ 100g Ground Walnuts⁣⁣ 50g Nutritional Yeast ⁣⁣ 1 x Tbsp Apple Cider Vinegar⁣⁣ 1 x Tsp Smoked Paprika⁣⁣ 1 x Tsp Cayenne Pepper⁣⁣ 1 x Garlic Clove⁣⁣ 100ml Almond Milk ⁣⁣ Basil Leaves⁣⁣ Olive Oil ⁣⁣ Black Bean Spaghetti ⁣⁣ ⁣⁣ ⁣⁣ 👩‍🍳Method:⁣⁣ ⁣⁣ ✨ Roast the tomatoes & peppers with the garlic in a glue of olive oil for about 20 mins on 180º⁣⁣ ✨Once they are nicely cooked, take them out and leave to cool⁣⁣ ✨Blend up the tomatoes and pepper mixture in a blender and then pop into a pan to gently heat⁣⁣ ✨Add the apple cider vinegar,  smoked paprika, cayenne, black pepper, ground almonds, ground walnuts, nutritional yeast, and almond milk,⁣⁣ ✨ While these flavours are mixing and come together, gently cook your spaghetti, drain and add some olive oil⁣⁣ ✨Toss the pasta in the sauce and scatter with pine nuts and basil 😋⁣⁣ ⁣⁣ 👩‍🍳Extra Note: ⁣⁣ If you are not vegan, I love to use 1 anchovy in the tomato & red pepper tray roast.  Not sure about dinner .. we have got the best Vegan Ramen Noodle Bowl idea, by one of our favourites @nourishing.amy (PS - Amy is absolutely lovely and has the best vegan recipes on Insta - you need to be following her - no excuses !) - See below for recipe from Amy !  - I’m super excited to be a recipe contributor to balance_festival newsletter, and here’s my first creation: . Vegan Ramen Noodle Bowl 👆🏼 Sticky umami tofu cubes with ginger-garlic-chilli veggies and griddles pak coy.  - I fried off 200g tofooco tofu cubes with coconut oil until crisp then add 2 tbsp Tamari.  Remove from the pan and reheat with more coconut oil and add 2 sliced field mushrooms, 160g corn and pak choy and fry until tender.  Remove and heat more coconut oil to fry 1-inch piece grated ginger + 3 crushed garlic cloves + 1 deseeded diced red chilli until fragrant.  Stir in 2 tbsp miso paste + 100ml coconut milk coconutmerchant + 500ml water and simmer for 10 mins. divide portions cooked noodles clearspringuk between two bowls, top with cooked veggies and tofu cubes and pour over the ramen stock with 2 tbsp lime juice. Truth time...it’s been about a month since I’ve felt like I have my 💩 together. I constantly felt like there were not enough hours in the day. Everything was overwhelming me. Then, that anxiety started to creep up, making me feel like I was drowning. 2 things have helped my anxiety lessen: 1- family vacation 🏖 2- waking up an hour earlier ⏰ If I felt like there weren’t enough hours in the day, it’s because I wasn’t using them. That extra hour I’ve given myself these past couple of days has been packed with productivity! I actually laid down to sleep last night feeling like I slayed the day instead of dreading the morning and all that I wasn’t able to get done that day🙌🏼🙌🏼 And tomorrow 😁😁😁 oh boy! I’m so giddy about tomorrow morning!! My fit community and I are trying out a brand new workout💃🏼 It’s designed to be done in the morning. It has a LIVE DJ dropping beats to the moves. And it’s 20-30 minutes long! I haven’t been this giddy about a program since the nutrition course I’m in love with came out. It’s gonna be an amazing week! This change of routine is just what I needed♥️

Preheat your oven to 400 degrees f. and line a large baking sheet with parchment paper. 2. Slice the cauliflower into 1/2-inch thick slices around the stem. The parts near the stem that will hold together as slices will become "steaks." Reserve any remaining cauliflower florets for making cauliflower rice at a later time. 3. Place your cauliflower steaks onto your prepared baking sheet, and drizzle with oil, then sprinkle with sea salt, pepper, oregano, and garlic powder. 4. Rub or brush everything into the cauliflower on all sides, then roast for about 20-25 minutes until beginning to nicely brown. 5.
