Finally got the chance to visit @madebymarcus. There are some seriously funky flavours! I went with a single scoop split with 2 flavours of MOONSHINE BROWN BUTTER PECANS & BANANA FOSTERS & RUM CARAMEL in a waffle cone. The moonshine brown butter pecans had a wonderfully buttery flavour. I personally loved it! The waffle cone got soggy pretty fast. Maybe due to the massive amounts of rain we’ve been having? 🤷🏻‍♀️ @madebymarcus is tucked away in an alley way right behind Tutti Frutti on Whyte Ave. Overall, definitely worth a try! Fun to sample funky flavours!

Fourth & final take on Carnitas week! 🌮 These tacos are filled with the pork Carnitas we prepped at the beginning of the week [recipe from #40aprons blog], & topped with avocado, pickled red onion, crumbled queso fresco, cilantro, & lime. ⁣ ⁣ The corn had some smoky spice! 😍OIL FREE VEGAN POTATO WEDGES😍 by @fivesechealth . So many are asking for oil free recipes, and when I tried this one it was love at first bite! You can make the wedges straight into the oven, but boiling them first makes them more crispy! Enjoy😍 . Follow @daily.healthy.meals for more delicious recipe videos! . RECIPE For potato wedges: 600g regular yellow potatoes 1 tsp chili pepper 0.25 tsp sea salt For the avocado dip: 1 avocado 2 tsp plant milk 1 tsp lime juice 0.25 tsp sea salt Steps 1. Preheat the oven to 220C/428F 2. Cut the potatoes into wedges and put them into a pot 3. Boil the potatoes for 5 minutes and then drain the water 4. Add the spices into the pot, close the lid and give it a shake (it doesn’t matter if some wedges break) 5. Spread the wedges on an oven tray lined with parchment paper 6. Bake the potatoes in the oven for about 20-30 minutes 7. In meanwhile prepare the avocado dip by combining all these ingredients in a bowl 8. Mash and wish until it’s creamy 9. When the potatoes are ready, serve as a side dish or just eat them with the avocado dip!

Been teasing y'all for a long time showing this chocolate mousse in my stories 😏 It's the perfect single serving dessert... thick and rich and gut friendly. It's sinfully good in its bare form, but toppings make it irresistible - swipe for the money moves 🤑 Liv's Chocolate Mousse • 1/2 cup pumpkin puree • 1/3 cup egg whites • 3/4 cup milk • 1 tbsp coconut oil • 1 tbsp/scoop gelatin • 1.5 tbsp maple syrup • 1 tbsp cocoa powder Whisk pumpkin, egg whites, coconut oil, and milk together. Microwave on half power for about 5 minutes, removing and stirring every minute, until thickened. Whisk in syrup and cocoa, then gelatin last. Refrigerate until gelatin gets firm. I wholeheartedly recommend toppings.... coconut butter, @juliesreal vanilla cashew butter, homemade chocolate sauce, and berries shown here. Tag me if you make!

Last night I went to a buffet tasting at Langley Golf & Banquet and this was the beautiful colourful plate I ended up with 🤗 I tried a few different salads (Pecan mandarin orange Caesar salad, spinach & watermelon salad, Shanghai slaw salad), the antipasta platter, house chow mein, rice pilaf, steamed veggies, roasted potatoes... probably a few more but I can’t remember 😂 Everything was delicious and I did manage to save some room for dessert too 😏 Also tried their mashed potato bar before our dinner and that was AMAZING too 😍 Definitely an amazing meal!! . Happy Friday!! I am so excited for the weekend 🙌🏻 Tonight ben and I are going to cook dinner & drink some wine, and tomorrow we are going on an off-roading day trip in the mountains 😃 We’re going to be on the road (well, the dirt) for close to 6-8 hours tomorrow, and the weather is supposed to be nice so I am excited for some beautiful mountains views 👌🏻 Hope you all have a lovely start to your weekend!! 💕

This is hard work. This is dedication. This is pushing myself to my limits. This is a balance between going to happy hour last night, and getting my butt up to workout in the morning.
