All the roasted fall veggies !! Are you looking for some dishes to make for Thanksgiving? Some or all of these would work very well.😍👍 califlower acornsquash sweetpotato and mushrooms They say to eat the rainbow. These started out different colors (Orange, white, yellow, brown) but ended up looking all about the same once cooked🤣😂 All orange.🧡🧡 We ate some raw fresh green veg on the side to complete the colors we should be eating🌈 It all tasted wonderful!! . I roasted the cauliflower in my piquantpost Spanish BBQ seasoning and that stuff is fantastic!! My hubby said it was the best roasted cali I’ve ever made!👍 I fixed the acorn squash very simply with evoo and S&P . While that roasted, I cooked up peeled/chopped sweet potatoes, then mashed them with veggie stock, oat milk, vegan butter and S&P. I topped the spuds with homemade mushroom gravy. This gravy is spectacular! It’s a recipe by Malinda countryside_cravings I’ve put the recipe like in my bio. I’ve made this gravy many times and it’s always a hit. I make mine with veggie stock I stead of beef. You can’t get healthier than this gravy. 😋😋 . This was a hardy and satisfying meal, not missing the meat here at all👍vegan More pics in my stories 😁 . I get asked a lot what I eat as a vegan. People’s minds seem to not be able to comprehend the vast amounts of fruits and vegetables, grains, nuts and seeds available to all of us. I was once had no understanding as well. Not understanding where my nutrients and vitamins actually came from. PLANTS 🌱 Anything I have ever even eaten as an omnivore for 34 years I can eat a plant based version of now and have been for the past 3 years. It’s Sunday✨ Which means it’s waffle day! I love Sunday’s, getting to sleep in and spend time in the kitchen cooking breakfast. I feel like breakfast is one of the most rushed meals. Fall Sundays are made for baking. 🌱 This is our version of a ‘no butter, no oil, no chicken, no cream’, creamy butter chicken, it was super delish & I’m loving that we have more for tomorrow🧡! This is one of the tastiest Indian🇮🇳 curries we’ve tried, unfortunately I can’t take credit for the recipe, {even though we modified it slightly}, it’s from veganricha & you can find it on her website. The recipe includes a cashew cream which is simply made from blended cashews & water~ perfect for making sauces creamier & a great versatile recipe to have up your sleeve for the future. . • Plant based, vegan, oil free, dairy free, gluten free, egg free, refined sugar free. . ✖️ Cashew Cream ~ 1/4 cup raw natural cashews, soaked in boiling water for 15 minutes 1/2 cup water - Blend both ingredients in a high-speed blender until super smooth & creamy. I used my Vitamix & it was literally done in 1 minute. . ✖️ Here’s a tip we’ve found helpful {consistency wise} when using tofu in our cooking. Cut into 1 inch thick slices & freeze, defrost on the day of cooking, press each slice between paper towel to extract as much liquid as possible.
