posting last nights dinner because it’s a new household hit 💫 broke out the air fryer which hasn’t been used in way too long, I always forget how quick and easy it is ✌🏽I kinda feel like a hoarder with all these small kitchen appliances 😂 anyone else go through phases with your small appliances? PALEO CHOCOLATE CHUNK BANANA BREAD 🍞 🍫🍌! If you’re unsure of anything of your life at the moment, here’s a little slice of heaven that I’m SURE will brighten up your day... at least if your like me, for the 5 seconds it takes for you to put back a thick slice. My family and friends are already requesting that I make more, I’d say it lasted a good 24 hours 😂. This is a take on my classic paleo banana bread up on the blog, made gluten free and with only sweetened from the bananas and chocolate chunks of course... never go easy on chocolate. Life’s too short. I was lucky enough to get the perfect thick slices using my Japanese steel kamikoto knife set 🔪. I never realized how much of a difference a truly good knife made in all my cooking adventures... safe to say it’s like Christmas morning every time I use it. Also, each blade pays tribute to the centuries-old craft of knifemaking, and is handcrafted with attention and care,making me feel extra special as I slice my bread 😭😭. RECIPE: DRY 1 1/2 cups almond flour 3 tbsp coconut flour 1/4 cup cassava flour 1 tsp baking soda 1 tsp baking powder 1 tbsp cinnamon 1/2 tsp sea salt 3/4 cup chopped chocolate chunks or chips WET: 3 eggs (beaten) 4 extremely ripe banana 1 1/2 tsp vanilla extract DIRECTIONS: Preheat the oven to 350 degrees fahrenheit and line a loaf pan with parchment paper. In a large bowl mix together all dry ingredients, excluding chocolate and set aside. In a separate small bowl beat the eggs until uniform and set aside. In a medium sized bowl mash the bananas until you form an even runny texture with a few chunks. To the bananas add eggs and vanilla and whisk together to combine. Slowly add in the dry ingredients to the wet ingredients and evenly mix. Then gently fold in chocolate. Transfer to loaf pan and top with more chocolate if desired. Bake for 55-60 minutes or until a fork comes out clean. Once done baking let cool completely before slicing. Recipe keeps well stored on the counter for up to 3 days and in the fridge for up to a week!

Well summers are pretty busy for us so making chicken to pair with anything veggie we have laying around is just too easy. . On Tuesdays we go into the city for MMA so we usually don’t have the time to cook a full dinner. Preheat the oven to 200c 2. Lightly grease the muffin tray with coconut oil or ghee. 3. In a glass bowl, crack the eggs and whisk for 1 minute. 4. Add the remaining ingredients as instructed above. 5. Give all the ingredients a mix so they are evenly distributed in the the egg mixture. 6. Spoon equal amounts of the mixture into the muffin holes. 7. Transfer the muffin tray to the oven to cook for 20 minutes. 8. After 20 minutes, the egg muffins should be cooked and will be fluffy and resemble Yorkshire puddings with a chef hat like top. 9. Remove from oven, allow to cool for a minute or two before transferring to a plate or a container. — The 6 muffins are 468 calories with onlly 11 grams of carbohydrates! Everyone has seen that "snack hack" where an over the door multi-shoe pocket holds snacks for the month right? 🙄 Except the snacks are all Twinkies and cupcakes and Takis and soda, etc. Well, yeah....we all can appreciate anything that saves time...but at what sacrifice? This is NOT snack or parent shaming...BUT rather a message to encourage anyone that the sacrifices they make for health & wellness are worth it. I cut up this bowl of pink and red deliciousness (strawberries, cherries & dragon fruit) and my kids hulk smashed it. Quickly! Expose the kids to new and different fruits. Have them try them MORE THAN ONCE before you accept "I don't like that." Place fresh fruit out as options instead of bags of over-processed stuff. Tilapia and asparagus last night because it’s what I had in the freezer and I didn’t want to go to the store... super easy! You can previously (lightly) grill and freeze asparagus and then just pop it in a baking dish when you want it!
