Today I’m being interviewed by @imsimplyadad for his podcast, The Happy Healthy Family. I’m excited for this opportunity to tell my story and discuss why I think it’s so important to focus on eating quality food. Going grain-, dairy-, and sugar-free was a real gift to my family and allowed us the opportunity to focus on eating more vegetables, especially starchy vegetables that are often forgotten or ignored. . . We don’t follow the diet perfectly anymore, but we’ll always be gluten-free due to my son’s allergy. I will, however, always focus on diversity, quality, and nutrient density - you can’t really go wrong with your diet when you put these principles first. . . Last nights dinner: sautéed carrots, zucchini, green beans, kale, and garlic with a bit of goat cheese from the farmers market on top. Cucumber, tomato, garlic chive, dill, mayo, lemon juice, and olive oil salad. Boiled edamame. Just to prove to you I DO eat vegetables, and have no trouble pairing them! Broccolini and mushrooms are probably my favorites. This combo pairs well with what? Well, I don’t drink it often anymore, but a sharp high quality Sancerre would be the perfect crisp note to this summer delight, with that signature funky “pipi de chat” note. It’ll go very m well with that ting of bitterness and cut the meaty mushroom like a sharp Ginzu knife. Ok ok I hear ya, enough of that SB BS. If you’re tired of New World Sauvignon Blanc, then you have to go back to the motherland for some proper Sancerre. Quality will rescue you back to the arms of this amazing varietal, that’s been pumped out poorly in mass. There there, you can drink SB again. You’ll find new life and new civilization in the same old basic wine, I promise. I topped that with my meat and veg wrap mix: Cooked ground turkey with garlic and onions. Added in grated zucchini and carrots. Made grilled vegetables tonight to pretend like we’re still in Croatia (we had them with almost every meal while we were there 😋) and added some avocado and hummus on the side topped with EBTB seasoning. . . . For the grilled vegetables all we did was slice yellow squash, eggplant, zucchini, and white onion then marinated in olive oil, salt, and pepper for 20 minutes. Then grilled for about 20 minutes!

Creamy green bean soup, here is the traditional Romanian origin plant-based and insanely delicious summer soup. Ingredients for roux base 2 tbsp oil 1/4 onion, chopped 2 cloves garlic, chopped 1 tbsp paprika 1/2 c. flour, separated 1 tsp (sweet) red paprika 3 tbs tomato paste 3/4 cup of milk 2 tablespoons flour Ingredients for soup 2 pounds fresh green beans, ends removed, washed and cut in 1”long 2 carrots diced 1 parsley root diced 2-3 celery stalks 1 medium tomato diced 1 small onion 2 cloves garlic 8-10 cups water 2 tablespoons chopped parsley sprigs salt to taste black pepper to taste "Delikat" to taste 1 cup sour cream, for garnish Directions Bring water to a boil add salt. Add beans, carrots, parsley root, celery root, tomatoes, onion, garlic cloves and whole onion. Boil for 30 minutes, or until the beans are tender. When the beans are almost done, make the roux. In a heavy saucepan, saute chopped onions and garlic in until onions become transparent. Add flour and stir quickly for 1-2 min, remove from heat and add red paprika, tomato paste and mix well slowly add cold milk , stirring/whisking constantly to keep from forming lumps . Put the mixture back on the low heat add little liquid from the soup season with salt and pepper, "Delikat" and bring to a boil. Remove from heat and pour the roux into the bean soup mixing in the roux. Add Parsley Sprigs and bring to one more boil, remove from heat. Turn off heat. Serve with a dollop of sour cream and a slice of fresh bread, add chopped parsley. I have fallen in love with veggies in the past couple of years! • I use to be an extremely picky eater (like chicken nuggets and french fries are what I lived on) but now I frequently find myself craving fresh vegetables. DINNER AND LUNCH IDEAS - ZUCCHINI FRITTERS These are delicious and so easy to make! . . RECIPE: 1 zucchini grated 1 carrot grated Grated cheese Crumbled fetta 2x Spring onions diced Handful of mushrooms or 2 large chopped 1 egg beaten Drizzle of EVOO oil for the pan if needed 1/2 cup Flour Makes 3-4 - double the ingredients for meals or snacks 🙌🏻 Combine all ingredients into a bowl and mix well. Grab a dessert spoon to add the mixture to the pan, add more of the mixture to the same fritter until it’s the size you’d like. Flatten the fritter with a spatula. Cook until lightly brown and flip (do this slowly as the fritter can come a part) . . Thanks sis, @x_emmygrace for cooking these up last night 🤤🙌🏻

Our school garden is a bit different than your average home garden. At the school, the kids are available from late August to the end of May. So my planting has to coordinate with the times that the kids are available. That means that we do a lot of spring planting and fall planting, and we have to get creative! One of the benefits of doing this is that it allows me to, in the summertime work at home in my own garden. I still go down to the school garden every couple of weeks to check on everything and to do some succession plantings in the late summer before the kids come back to school. But for the most part, it’s a pretty chill garden. This fall, we will focus on building a seating area, so stay tuned, I’d love your feedback!

Chopped Veggies prepped to go into a Thai Green Curry. Vegan, of course. 🌶 Aren’t they pretty? So vibrant and rainbow-like in their array. 🥦 Red and yellow bell peppers have a similar nutritional profile but vary in their exact vitamin and mineral makeup. 🥒 Red onions have more a antioxidants than their white or yellow counterparts, and you can tell because of the pigment. 🥕 Bold, beautiful carrots are packed with vitamins and minerals. 🥦 Broccoli, from the cruciferous family of veggies, is one of the healthiest foods you can eat (and among the highest protein content by calories). 🍄 And shiitake mushrooms provide excellent minerals as well. 🌶 All this to say, be sure to #eattherainbow because this is a wonderful way to get a variety of vital health-promoting nutrients in your diet. Take a seat mayo. Today we’re using @califiafarms almondmilk + avocados for a different kinda creamy summer pasta! It’s vibrant green, dairy-free and totally delish! 🥑💚🙌 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ INGREDIENTS 12 ounces rotini pasta 1 ripe avocado, peeled and chopped 1 cup cherry tomatoes, halved 1 cup frozen corn, thawed Fresh basil, for serving Dressing 2 ripe avocados, peeled and cored 1 cup baby spinach 1/2 cup @califiafarms almondmilk Juice of 1 lemon 1 garlic clove Salt and pepper, to taste 1 tablespoon extra-virgin olive oil INSTRUCTIONS 1. In a large pot of boiling salted water, cook pasta according to package instructions; drain well. You can thaw the frozen corn in the pasta cooking water in the last 3-4 minutes of cooking time. 2. To make the avocado dressing, combine the avocados, spinach, almond milk, olive oil, lemon juice and garlic to a blender or food processor. Season with salt and pepper. With the motor running, add olive oil slowly until dressing is emulsified, smooth and creamy. 3. In a large bowl, toss the pasta with the dressing, tomatoes, corn and avocados.
