~ Eggs Royale ~
This is my all time favourite brunch and it’s just so easy! It also looks really fancy 🙊 I always have these ingredients to hand and I make this all the time for a super satisfying, protein packed lazy weekend brunch. For a healthier twist, choose wholemeal bread and to make your life easier use good jarred hollandaise sauce. Butter the muffins first if you want to be really indulgent. Serves 2. You will need:
2 English muffins, halved (or you can use any bread you like)
4 tspn hollandaise sauce
100g smoked salmon
Chives, chopped for garnish
1. Bring a large saucepan of water to the boil, turn down to a simmer and gently crack the eggs straight in as close to the surface of the water as possible. Leave to poach for 3 mins. For a full tutorial on how to poach the perfect eggs, check out my highlights.
2. Toast the muffins and layer the smoked salmon equally over the top of each muffin half.
3. When the eggs are finished cooking, carefully lift them out, drain on a paper towel and place on top of each smoked salmon muffin.
4. Top each egg with a teaspoon of hollandaise sauce and garnish with chopped chives. Serve warm.
