My morning pleasure ☕️❤️☕️ My favorite part of the day is getting up while everyone else is still asleep and making myself a cup of coffee. I put the dogs outside, heat up my water, and let my French Press do its thing. Don't be fooled, there's no butter in my Maple Apple Butter at all! It's just a thicker, more flavorful version of apple sauce that's deeply caramelized and packed with the best flavors autumn has to offer. While I have been known to eat it straight from the jar, I also love to slather it on toast, or put it on top of my oatmeal in the morning. For my friends who celebrate Thanksgiving, this is a perfect condiment to add to your table for something a little different, yet so very delicious. I use my slow cooker for this super easy recipe. But if you don't have a slow cooker, no problem! You can use a large saucepan on your stove top. My best advice would be to make it on a day when you can be home for a few hours because while it requires minimal effort ... it does take time. But I promise, it's well worth it. In the slow cooker or saucepan, combine the following: 1.5 kg (a little over 3 lbs) of your favorite apples, cored and roughly chopped 🍎 500 ml (approx 2 cups) apple cider 🍎 125 ml (approx 1/2 cup) maple syrup 🍎1 tsp vanilla extract 🍎 2 tsp ground cinnamon 🍎 1/2 tsp fresh ground nutmeg 🍎 1/2 tsp ground ginger 🍎 1/4 tsp ground cloves and a pinch of salt. Cover and set slow cooker to high setting for 4 hours, stirring several times throughout cooking. (If on stove top, set to medium heat for same amount of time). After the 4 hours are complete, transfer the apples to a blender (or use immersion blender) and puree until you have a very smooth texture. Return the apple butter to your slow cooker (still on high setting) and cook, uncovered 1 more hour (same process for stove top). After this time, it should be very thick! Let cool slightly and transfer to glass jars for storage. So I will just enjoy this squash and let it flow.... Today I am still enjoying my butternut squash... this time as soup! Coconut curried squash soup with a pecan garnish. This is 1 baked butternut squash, 1/2 onion, 1 cup carrots, 3 cloves garlic and 2 roasted sweet potatoes. I kicked off my pumpkin everything season trying cookingonthefrontburner 's Pumpkin Gnocchi recipe. Why gnocchi? I've acquired quite a taste for this pasta. In a way, they remind me of a lighter version of our dombrèy, minus the bouillon... 🎃 . After seeing endless pumpkin gnocchi recipes, I had to try it for mysel with our giraumon. Instead of boiling them, I toasted them with some garlic and tête de maure, used "gros thym" (broad leaf thyme) in lieu of the sage, and enjoyed them with a buttery wine sauce.

It’s also great for when you just want to use up all the fresh vegetables you have in the fridge!!! So easy there’s not really a recipe just a few tips. Start with a large pan, pot or lecreuset Dutch Oven on the stove with a little Olive Oil add chopped onions, celery and carrots and cook for a few minutes until they start to soften. Then just add all your extra vegetables, fresh herbs, season with salt and pepper, a squeeze of tomato purée and cover with vegetable stock. Let it all simmer away for around 30 minutes and you will have a great pot of soup, add homemade croutons, grated Parmesan, extra fresh herbs or just warm crusty bread!!! Enjoy 😋😋😋

{A Year of 40 Challenge Cake: Brown Butter Pumpkin Cake, Vanilla Swiss Meringue Buttercream & Vanilla-Cinnamon Cranberry Sauce Filling, Buttercream and Sugared Cranberries} The Challenge: Fault Line Cake . . I’m ashamed to admit it, but I dreamed up the first incarnation of this fault line cake, one day before my 40th birthday, trying to decide if I had what it took to commit to this cake challenge, and while sitting in the theater, watching hamiltonmusical. It was a surprise birthday gift from biyootz and while it was an amazing present and an amazing show, I had never listened to the music, I could not understand the first few songs, and I was convinced that A) I was turning 40 and losing my hearing and B) That I would never understand the words AND would waste the tickets. I was kind of spiraling. . . So logically, my mind turned to cake and an idea for creating a fault line cake with bright white frosting and sugared cranberries in the center. Thankfully, a few songs in, my ears adjusted and I was able to focus on the show, as it deserves to be focused on. . . But I didn’t forgot about the cake, which I knew would be perfect for November. The steps were easy: Pumpkin cake from finecooking baked into four 6-inch layers instead of two 9-inch, frosting, purposely thick cranberry sauce, sugared cranberries. I added a 2-inch wide cranberry ring around the crumb coated cake, and attempted to add the top and bottom frosting. I immediately knew it was a mistake. I’m a faultlinecake rookie and the big cranberries were too extended to frost around. There was frosting everywhere. It was terrible. And also, expected? So I made a crazy decision to cover the whole cake with the cranberries, one by one. The next day (as always), I came to my senses, removed each cranberry, one by one, scraped off the frosting and waited for it to come to room temp to recrumb coat it. Then instead of the cranberries, I used their leftover pink-stained sugar, which proved to be subtle, but so much better. The best part, though, is that I can cross this cake off my list and move on (to a cake that I’ve already been brainstorming, of course).
