Salmon cakes 🧡 Definitely the easiest fish cakes I make and my sons favourite. A great way to use up leftover salmon which is what I did. You can also make and freeze these ready for another day. INGREDIENTS (makes about 12) 🧡2 tbsp olive oil, plus a little extra for frying the patties🧡1 onion, finely chopped 🧡1 red pepper, finely chopped 🧡3 cups cooked salmon at room temp (skinless & boneless)🧡1 cup bread crumbs 🧡1 tbsp parsley 🧡1 tsp salt METHOD 🧡Put the olive oil, onion and pepper in a pan and cook over a medium heat for about ten mins till softened but not browned. Set aside to cool a little 🧡Flake the salmon into a large bowl. Add the breadcrumbs, cooked veg, parsley and seasoning 🧡Using your hands, mix well and shape info palm size patties 🧡Fry in a little olive oil on a medium heat for about 3 minutes on either side 🧡I served it with peas, potato salad & sriracha mayo. Also yummy with mash or in a wrap.

Hello sunshine......hands up who spent most of today with a smile on their face purely because it wasn't raining!!!!? ☀️☀️☀️ It certainly gave me the kick I needed to get back into the kitchen. This time of year is all about soups and stews both of who's tasty success relies heavily on a good stock 🍵 So simple to throw together, great for using up leftover veg/peelings/scraps etc thus reducing waste and just a fantastic way of injecting some extra flavour into mid-week dishes. Check out my Stories for a simple 'how to'.🥕🥔 As the days start getting colder and darker, my go-to lunch always switches from salad to soup. Warm, hearty and great for packing in your daily veg, there is however nothing worse than hitting that 4pm slump and being wracked by hunger if like me you are trying to resist the temptation of half a baguette to accompany said soup🍵🥖🥖🍞 As such, I really focus on chunky soups or ones that are packed with protein to keep me going. This Roasted Butternut Squash soup delivers on the brief, the addition of toasted walnuts and/or some crumbled feta transforms this into a tasty, filling meal! ✨METHOD✨ Preheat the oven to 200oC Peel, deseed and cut the squash into wedges/large chunks, then toss in the olive oil, chilli flakes, cumin and salt/pepper. Transfer into a roasting tin and roast in the preheated oven for 35-45 mins or until slightly golden and cooked. Meanwhile, place a large, deep-sided saucepan over medium heat, add the remaining oil and, when it is hot, add the chopped onion and carrots and sweat them until soft. Pour in the stock, bring to the boil, and then stir in the roasted squash. Remove the saucepan from the heat and, using a hand blender, blend the mixture until smooth. Return to the heat to warm through, season to taste. Serve in bowls with a few toasted walnuts* and crumbled feta on top and some crusty bread. *lightly toast a good handful of walnuts in a frying pan. autumn seasonal food

Warming Tomato Risotto 🍅 Risotto is one of my favourite family recipes and this version uses basic kitchen cupboard ingredients. To take it up a level I top with cherry tomatoes, roasted gently in olive oil. From a few very simple foods, this recipe really does taste complex and delicious 👌🏻 . You need ~ 1 tablespoon unsalted butter 1 tablespoon olive oil 1 onion, finely diced 250g risotto rice 1 tin (400g) good quality organic plum tomatoes 750ml - 1L homemade stock (or no added salt stock) to serve ~ grated Parmesan, fresh basil leaves and oven roasted tomatoes (all optional) . To cook ~ 🍅Combine the stock and plum tomatoes, warm through over a low heat 🍅In a separate pot melt the butter and olive oil; add the onion and gently soften for around 8-10 mins until translucent 🍅Add the rice and coat in the oil, butter and onion 🍅Slowly add the stock/ tomato mix one ladleful at a time, breaking up the plum tomatoes with a spoon. Once the ladleful of the liquid has been absorbed, add the next ladleful, stirring all the time. Continue until all the stock/tomato mix has been used up: this process should take around 20 mins (approx) 🍅To finish add a final knob of butter and cover with a lid, to rest for 5 mins. It’s now ready to eat 🥣 🍅For extra flavour: serve with (optional) grated Parmesan, fresh basil leaves and oven roasted tomatoes . Dak Bulgogi (Korean BBQ Chicken drumsticks) 🍗🥘 If you like bulgogi but don’t like red meat, this one’s for you!  This recipe is from my friend.👩🏻When I visited my best friend about 25 years ago when she just got married she cooked this chicken for me. She learned it from her mom and it was so delicious. This is similar to other bulgogi seasonings, but you add in a ground up the onion and an apple and boil the chicken with the seasoning. 🍎When all of this is done then you grill it in the oven. The natural sugars from the onions and apples add both flavour and eliminate the bad meat smell that sometimes occurs. You can use any kind of chicken for this recipe. I usually cook with chicken wings but I only had chicken drumsticks today so I used those and I served this with purple sweet potato and potato stir-fry.🥔🍠 🥘 🥘🥘 제 아들이 제일 좋아하는 닭다리로 만든 닭불고기 입니다.🍗 25년쯤 전에 막 결혼한 제 친구 신혼 집에 놀러갔었는데 닭날개로 이 요리를 해줬어요. 얼마나 맛있던지 그때 맛을 잊을수가 없어요. 닭날개로 구우면 더 맛있는데 제 아들이 닭다리를 더 좋아해서 닭다리로 만들었어요. 보통 불고기 양념과 같은데 양파한개를 통째로 갈아서 같이 졸여요. 사과가 있으면 더 좋고요. 국물이 자작하게 졸면 오븐에 살짝 넣어서 구워줍니다. 양파가 많이 들어가니 설탕을 많이 넣을 필요도 없어요.

Next time you are reaching for a jar on a supermarket shelf-take a minute to read the label and see what’s in the first 5 listed ingredients... Sugar is usually listed in the top 3 in between a mixture of things I can barely say never mind have a clue what they are! One thing I am fully aware off is the fact these ingredients have been added to preserve ‘shelf life’ not to benefit you in health or pocket. Easy Chicken & chickpea curry 🌱 . We are fridge/freezer/store cupboard raiding this week with our impending half term hols so I digged deep last night with this one! . 3 defrosted chicken fillets, bulked out with left over veggies, a tin of chickpeas, a tin of RF coconut milk and some curry spices made for a delish mild curry. . Made in less than half an hour, I knew this would go down well with the troops as they love ‘orange’ Curries and chickpeas...not so much the peppers though 🙄 . Serves 4/5 1 tin chickpeas 3 chicken fillets, chopped into cubes 1 orange pepper, sliced 1 red pepper, sliced 1 onion, peeled and finely chopped 2 cloves garlic, peeled and crushed Small piece of ginger, peeled and grated 1 tbsp curry powder - adapt quantity to your taste - I used medium curry powder 1 can coconut milk 1 can chopped tomatoes 1 tbsp tomato purée 100g of spinach . In a large frying pan, sauté the chicken in a little spray for 5 mins on a medium heat till cooked and golden. Add the onion and peppers and continue to cook for a few mins to soften. Add the garlic, ginger and spice and cook for a minute. Add the tomatoes, tomato purée and coconut milk and season. Simmer on a low- medium heat for 10-15 mins until thickened. 🇬🇧 In these weeks when I was at home for healthy problems, I received the visit of some friends who wanted to spend some time with me, talking calmly of everything. I welcomed them all with hot water in the kettle, that tea at 5 pm is like my annual trip to London, a medicine. And so even a cake was fundamental ... One I baked was the banana bread with annathenice recipe: it's not the first banana bread I cook and it's not the first recipe I try, but I liked it a lot, even though it remained a bit flat because I used naturally gluten-free flours. But those pieces of banana and those flakes of chocolate, so surprising in their simplicity, stole more than just a smile. Thanks Anna, another nice person that social medias have introduced me to. . 🇮🇹 In queste settimane in cui sono stata a casa in malattia, ho ricevuto la visita di alcune amiche che hanno voluto passare un po’ di tempo con me, facendo due chiacchiere e approfittando per parlare con calma. Io le ho accolte tutte con l’acqua calda nel bollitore, che il tè alle 17 per me è come il mio giro a Londra annuale, una medicina. E così anche un dolce era fondamentale... Uno di quelli che ho infornato è stato il banana bread di annathenice : non è il primo banana bread che cucino e non è la prima ricetta che provo, ma la sua mi è piaciuta un sacco, anche se è rimasto un po’ piatto perché ho usato farine naturalmente prive di glutine. Ma quei pezzi di banana e quelle scaglie di cioccolato, così sorprendenti nella loro semplicità, hanno strappato ben più di un sorriso. Grazie Anna, altra bella persona che i social mi hanno fatto conoscere.

This week, the Simple Family Food Cooking Club members are making spooky, green devilled eggs. So, it's fair to say I boiled a lot of eggs in search of the right consistency for our project! Along the way, I perfected the jammy, soft boiled egg. Here's how-to:⁠ 🍳⁠ Place your eggs into a pot and cover them with cold water. Put the pot onto the stove, on high. Allow the water to come to a rolling boil for just 30 seconds. Turn the stove OFF and allow the eggs to sit in the water, with the lid on, for a 5 minute timer. Once the timer goes off, drain the pot immediately and place the eggs into an ice water bath to cool. Carefully crack the eggs shells, making sure the majority of the shell is cracked. Gently begin removing the shells. The ice-water bath will loosen the shell and allowing you to peel it off more easily.⁠ 🍳⁠ If you like your boiled eggs more firm, less jammy allow them to boil for two and half minutes before turning the stove off.⁠ 🍳⁠ Don't skip the ice bath! It's the key to ending your peeling frustrations! 中文請往下▼ Another Asian cuisine favourite throughout the world is probably stir-fry noodles 😚 So here I have my version of a baby friendly stir-fry Udon aka Yaki Udon! ⠀⠀ On today’s plate: - Blackberries - Stir-fry Beef Udon with Bell Pepper and Bean Sprouts ⠀⠀ Like any other stir-fry mixes I like to put veggies in there. Veggies in fried rice and stir fry noodles gives it a crunchy water taste, so the dish doesn’t taste dry and veggies are good for the baby! ⠀⠀ Swipe to see the recipe. Sorry there’s so many pages, but I wanted to make it easy to understand so I put step by step instructions. But this really isn’t too hard to make just the preparation takes longer. ENJOY and remember to save the recipe! Note: if you have a baby that’s still in the early stages of BLW, I would use ground beef, cut the Udon shorter (approx pinky length) and cook the bell peppers and bean sprouts longer to soften it. Its not very often I'm at home at this time of day so I'm indulging in a beautiful lunch...... Spiced Parsnip soup served up with Cheesy Broccoli melts. The broccoli was fried in garlicky oil spiked with chilli flakes before being piled onto sourdough toast and topped with cheese (I used cheddar) and then melted under the grill. Adding in hemp hearts and full fat yoghurt brings protein and healthy fat to this snack time smoothie. The maple syrup is optional but the strawberries we had weren’t particularly sweet so we added a dash.⠀⠀⠀⠀⠀⠀⠀⠀⠀ .⠀⠀⠀⠀⠀⠀⠀⠀⠀ What do you need? ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 1 orange, 1 cup strawberries, 1/2 cup full fat milk, 1/2 cup full fat Greek yoghurt, 1 tsp maple syrup & 1 tbsp hemp hearts. .⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ .⠀⠀⠀⠀⠀⠀⠀⠀⠀ Then.⠀⠀⠀⠀⠀⠀⠀⠀⠀ Hull the strawberries and add to a blender. Whizz together with all the remaining ingredients. Half-term this week has me planning ahead with the extra meals to prep... on the agenda for tomorrow... Spanakopita-ish, with extra sundried tomatoes.
