Hey look! Science! Who else nerds out about winemaking? . In this photo our Winemaker, Tres, is using the hydrometer to measure the density of the wine in order to determine the percentage of sugar of the wine. Every morning during harvest our Winemaking Team will go around the cellar and test each tank for the percentage of sugar (Brix) of the wine and the temperature. This is done every day so that Tres can then make decisions on nutrient additions, cap punch downs, pump overs, pressing and barrel downs. The fun hasn't stopped here at the winery!! . So... just how much sugar is in your water kefir? There’s no simple answer to that because it depends on the microbes in your individual grains, what your starting concentration was, and how long you have left it for. This sample was started at 3.5% sugar ( 3.5 g per 100ml) and after 72 hours was 0.5% sugar ( 0.5 g per 100ml). Obviously if I added fruit or syrup then it would go up unless I re-fermented it. Anyway, interesting stuff and shows it’s an potentially be very low sugar. If you’re interested A hydrometer like this is just a few quid online!
