Plus the constant nose blowing and coughing. There was so much fluid in my sinuses it was gross. The stuff that was coming out of my nose was coming out of my eyes too! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Everything from my neck up was irritated, itchy, and full of phlegm. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ My body was having an auto immune reaction and I knew if I didn't do something about it, my symptom's would continue to exacerbate. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ I could have gone to the pharmacy and got some Zyrtec and my symptoms would have disappeared that day. But I knew that would be a disservice to my body that was trying to show me something deeper. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Because there is always a root cause to why particular symptoms manifest. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ So I took an integrative approach: 🍋I ran a Functional Medicine Lab tests 🍋I completed a 21 Day Functional Medicine Liver Detox 🍋I got more sleep 🍋I exercised less to reduce stress 🍋I completed a gut rebuilding protocol 🍋I Eliminated inflammatory foods 🍋I did daily healing visualisations 🍋I used natural products (that actually work!) to treat symptoms. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Yes this took longer and required more patience and discipline. Have you tried honey fermented garlic? Now is a great time to start a batch! It will be ready to boost everyone’s immune system in time for back to school! Simply bruise whole raw garlic gloves by pressing under the side of a chef’s knife, place them in a mason jar, and cover with raw honey. Put a lid on it and leave it on the counter for 6 weeks or more. The first week you’ll need to burp the jar daily to release pressure. Once it’s ready the garlic flavor will have mellowed and the honey will take on the garlic flavor. Eat the cloves straight or use the honey in salad dressing. Beetroot, apple and rosemary ferment. This ferment has a lovely blend of sweet and earthy flavours. Ingredients: 900g beetroot, 200g apple, large handful chopped rosemary, 22g unrefined seasalt Finely slice or grate the beetroot and apple. Rub in the seasalt until glistening. Mix in the chopped herbs. Pack tightly in wide mouthed Mason jars and seal with an airlock. Leave at room temperature for 5-7 days or until you're happy with the flavour. After a week long of work travel in Florida and camping at the Grand Canyon this weekend, it is time for me to get my body back on a healthy track. I need to nourish and heal my body after lots of travel, coupled with booze, carbs, sugar, etc. I will be doing a detox process this week by only eating nourishing vegan food, preferably raw, and omitting all alcohol, processed & white carbs, high sugar foods, and dairy. I will continue with my intermittent fasting. A pantry that has never stopped growing. Fermentation has been a big part of our program to help layer flavor and to completely utilize every part of ingredient used in our restaurant. Different cultures have used different methods and our team is slowly learning these techniques and incorporating them in our repertoire of growing resources. Here is a little peek in to several new dishes that we are working on with these ingredients for our guest chef dinner with @chefgarrettlipar next Sunday. To name a few - soy sauce made from sourdough, fish sauce made from sardine guts and bones, fermented buttermilk curd, fermented romaine lettuce, chillies, corn and mustard greens, kombu kombucha and sea urchin garum.

Winner will be chosen at random from those who meet the criteria. The first recipe using my chosen ingredient, red gooseberries is Fermented Gooseberry, Chamomile and Vanilla Jam. See below! ++++++++++++++++++++ Fermented Gooseberry Chamomile and Vanilla Jam 500g red (or green) gooseberries 200ml of brewed chamomile tea  ½ tsp vanilla paste (or ½ vanilla pod) 150ml maple syrup/honey Pinch Himalayan Salt 2 tsp raw ACV (with the mother) 1. Add the gooseberries, tea, vanilla, sweetener and salt into a saucepan. 2. Cook until on a medium heat until the berries soften and begin to burst. 3. Once the berries resemble a compote, turn off the heat and set aside to cool completely. 4. Once cooled add the ACV, stirring to mix. 5. Spoon the cooled mixture into a 500ml clip top or screw top jar and seal.  6. Label and date your ferment and allow this to sit on the kitchen side for 4-5 days to ferment.  7. When time is up, taste the ferment, it should be tangy, slightly fizzy with both a hint of sweetness and savouriness.  8. When it is ready to eat store it in the fridge. Once opened use within 2-3 weeks.
