Sauerkraut: 1. Repollo blanco • ajo • pimienta. 2. Repollo morado • remolacha. 3. Zanahoria • cúrcuma • jengibre. Los tres quedaron delis! El proceso es: rallas todo y los separas en platos distintos hondos. Les agregas 1 cda de sal y lo revolves. Lo dejas 1 hora actuando. Después que pasa la hora. Lo revolves otra vez con la mano y vas a ir escurriendo todo el líquido dentro del mismo plato y transferís el vegetal a un recipiente de vidrio que esté totalmente limpio. Y vas presionando todo al fondo. Puede ser un mason jar. Al finalizar agregas el líquido del plato al bote. Lo que queres es que toda la verdura quede bien compactada al fondo del bote de vidrio y el líquido por arriba. Si no está el líquido tapando toda la verdura agregas 1 taza de agua con 1cdita de sal bien disuelta. Cuando ya esté todo bien sumergido. Le vas a agregar una bolsa de ziplock grande llena de agua y lo que queres lograr es sacarle todo el aire del bote a que no quede nada vacío por dentro. Y lo cerras con la parte exterior de la tapa del mason jar para que respire pero que no esté en contacto con aire. Lo guardas en tu cocina por una semana o más en una temperatura baja. 20-18 grados. Así lo hice yo y me quedo bien! La idea es comer poco todos los días para poder ingerir los probioticos necesarios para una buena digestión. Also, see below for some chicken inspo (since most of us are a little bored with chickie chickie 🐓).⁣ ⁣ But first! Probiotics...⁣ PRObiotics are a broad term for the many types of beneficial gut bacteria.⁣ ⁣ PREbiotics are the food that feeds the probiotics. Think onions, garlic, bananas, leeks, asparagus, apples, and more. ⁣ ⁣ We need a wide variety of foods to properly colonize gut bacteria which in turn strengthens our immune system and enhances digestion. That’s why you hear so much about eating lots of colorful produce.⁣ ⁣ Try incorporating prebiotic and probiotic rich foods either on their own or pair them with meals (when paired with meals the digestive enzymes help break down food properly).⁣ ⁣ See that Kimchi back there in the photo? That’s one great probiotic food. A little bit goes a long way! ⁣ You can also include foods like:⁣ Sauerkraut⁣ Organic Miso⁣ Kefir (if you’re not dairy free. I recommend the goat milk Kefir if using this)⁣ Kombucha (but only a few ounces a day)⁣ ⁣ And I won’t leave you hanging so here’s the chicken recipe from the photo (It’s SOO easy!):⁣ ⁣ Dice one large sized tomato, 1 bell pepper. ⁣ ⁣ Season ~4-6 chicken breasts with my simple Hungarian spice blend = sea salt, black pepper, Hungarian paprika (to taste).⁣ ⁣ Add a little oil to a pan on medium high, flip when it gets golden. Toward the last 5 minutes add the tomato and green pepper. Mix together. When chicken is cooked through and peppers and tomato are soft, it’s ready! ⁣ ⁣ Serve over rice and with the veggies! Sourdough pizza! Premade frozen crust topped with olive oil, sauteed mushrooms and garlic, then finished off with fresh parsley and a homemade cashew ricotta.....so good! . . To make pizza with frozen crust: preheat the oven to 500°F with stone on middle rack. Once oven is heated, take crust from freezer and top with whatever you want. Turn oven on broil and place frozen crust with toppings onto the stone. Cook for 4-5 minutes or until cheese (if using) begins to show dark spots. First fermented mustard complete. Used equal parts yellow mustard seed and brown, minced a few garlic cloves and let it sit for a week in a 5% brine which was itself mixed half and half with leftover hot sauce brine. Added 1 tsp turmeric at blending, 1/4 c white vinegar and 1/4 c of the brine. I love that my immersion blender fits a wide mouth Mason, making the blend a snap. The result has heat, tang and depth, that will surely evolve in the fridge.

Nothing like some impromptu chicken Parmesan, some savory tomato oatmeal and chicken cutlets from my dad. Obviously parmigiano is expensive, so the cheese on top is supplemented, but I never understood the choice of mozzarella. Sure low moisture mozzarella gives you that classic melting texture, but even within the Italian-American flavor profile I always thought provolone would be better. So what actually ARE fermented foods? What is this magical process of fermentation? Fermentation is the process that bacteria and yeast use to break down sugars and carbohydrates into alcohol or organic acids. The microbes break down the sugars/carbs into energy for themselves. They grow and multiply, and colonize the food and continue fermentation. These are the “live and active cultures” you’ve probably heard of. . Fermented foods are probiotic powerhouses- they are PACKED with “GOOD BUGGIES”!! Plus, those good buggies actually break down and pre-digest the foods for us so that the nutrients within them are more bioavailable to our bodies. . Fermentation gives us more probiotics than you could ever get in a pill filled with powder, it increases the nutritional bioavailability of the food, and it breaks it down so that we can digest it even better and more efficiently. . It’s no wonder people have been eating fermented foods for thousands of years. But why have we stopped? Part of the reason is refrigeration and supermarkets with imported produce leaving access to produce year round rather than just during the local growing season! . In the process, we have gotten sidetracked from this very important technique. We need to go back to basics. Fill a clean jar with veggies. Add desired herbs or spices. Pour in a saltwater brine. Cover and let nature do its thing. 🌎👊 . 🎉🎉🎉 Look what we found 🎉🎉🎉At first glance guar gum, found mostly in “healthy” foods, is no big deal. It is derived from actual food and thus far animal studies show it as non-carcinogenic and maybe helpful for managing blood glucose. HOWEVER, these studies also report increased GI side effects. Even in small amounts (and this ingredient is everywhere + seemingly in everything) guar causes unpleasant symptoms in those with sensitive digestive systems. We have certainly seen improvement in our patients when they remove guar and other gums from their diet. If you have a sensitive tummy you may benefit the removal of this ubiquitous ingredient but until now it’s been so hard to find products (especially non-dairy milks) without it!
