PITCHING THE YEAST - After waiting for about 24 hrs to let the SO4 from the campden tablets settle down, I pitched the yeast into the sour cherry melomel must. Be sure to rehydrate your yeast for about 15 min. Also agitate the must to get the dissolved oxygen as high as you can. At almost every other stage in brewing your trying your hardest to keep air out, but this is one time you want the opposite. A really cool thing about yeast is that they can either run on an aerobic metabolism (respiration) or an anaerobic metabolism (fermenting). Respiration requires oxygen but is about 19x more efficient at converting sugars into energy. Although fermentation is much less efficient at converting sugar to energy, it creates the by-product we are aiming for when brewing... ethanol. By introducing oxygen into the must when pitching, you allow these new yeast to respire, quickly build up their population and hopefully out-compete any spoilage microbes. As the population grows, they'll use up all the dissolved oxygen and then switch over to fermentation. Part of elderflower champagne batch two 2019... I think it might be fermenting just a little bit 😂🥂✌️ Love that squeak as the air leaks out the lids under pressure. Old pop bottles were donated second hand. ❤️ As a rule I don't drink - never have really - but I make an exception each year for this! It's roughly 2-3% alcohol, but has something in it that makes you feel more tipsy than you are I believe!? If you've never tried making elderflower champagne - give it a go next year! It's delicious and it would be hard to make something easier!

If you haven’t been following me for a while you may not know this, but I’m a risk taker. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ I do as much research on any given subject that I can and then jump in with both feet. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ So after learning about fermenting for a few years, I know longer follow recipes for it. I just wing it and risk it 🤷🏼‍♀️ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ I have the look, smell, taste tests and as long as it checks out on all of them we eat it 😂 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ See the thing is, people have been doing this whole cooking real food, fermenting, farming, and butchering thing for a REAL long time with less knowledge about sanitation and food borne illness than us. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ So armed with the knowledge that we have today, the wisdom from days past, and the common sense in my body I feel very comfortable eating traditional foods without stressing every ingredient and instruction. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Which brings me to fermenting these onions. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ I no longer follow a recipe, I simply use a tablespoon of salt for every quart of vegetable/brine. Then let it ferment for however long I want until I achieve the taste I want. I’ve even been leaving them out at room temp until they are gone (2+ weeks) 😱😆 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ I’ve never had it fail. In fact it’s been AWESOME. These red onions are a favorite around here. So much that my 2 year old eats them by the fistful 🤗 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Are you a risk taker? Or an analyzer? 🍓💕😊 Strawberries are flooding my garden! Wild strawberries are ripe now as well, so I'm making a strawberry elderflower cordial 😊 I still have loads of dry elderflower from last month, but trees in shady areas are still sporting lovely blooms. You can use fresh or dry for this recipe. If you don't have elderflower, you can skip that and just use strawberries in the sugar solution. 🍓💕 Place 20 to 25 elderflower umbals (heads) shaken free of insects (or 1/2 c dry flowers) and 2 large sliced lemons in a large container, preferably one that has a lid. . Add 6 cups sugar and 3 tbsp of citric acid, then pour 8 cups of boiling water over the elderflower and sugar mixture and stir. . Allow to cool slightly before adding 2 cups of hulled and halved strawberries and give it all a good mix. Press the strawberries against the sides of the container to squash them slightly, then cover with a cloth tied on top and place in a cool, dark place for 3 days, (72 hours) stirring at least twice a day. . When you are ready to bottle the cordial/syrup, strain the mixture in batches through muslin and a sieve and then pour into clean (sterilised) bottles. Recipe! We just brewed three test batches to explore the fruity/citrus hops we're learning about around North America. It's an easy drinking Pale Ale that has enough body to suit non-hopheads but light enough malts to allow the hops to shine through. The version with Comet from @bredenhofhopfarms has a super fruity, tropical vibe. 5% ABV, 37 IBU, 5.7°SRM. OG: 1.048, FG 1.009 20L / 5gal batch MALT 1.5kg (3.3lbs) Pale 2-Row 1.2kg (2.6lbs) Vienna 1.2kg (2.6lbs) Pilsen 0.35kg (0.8lbs) Honey malt 0.25 (0.55lbs) Munich Choose your own adventure with hops, we've used Comet or Cascade so far. Modify hops volumes for desired IBU but focus on late and flame out additions rather that reducing amount if using a high alpha variety. HOPS 10g (0.3oz) @60min 10g (0.3oz) @30min 20g (0.67oz) @10min 20g (0.67oz) @5min 40g (1.3oz) @flame out Dry hop 30-100g on day 5 (1-3.3oz) YEAST Safeale US-05 OTHER 5g (1 tablespoon) Irish moss with 10min to go (helps clarify the beer) INSTRUCTIONS Add 15L (3.9gal) strike water at 73C (163f) and let rest for 60min, stirring twice. Target mash temp 65C (149f). Prepare 18L sparge water (very hot). Start adding until the temp hits 68C (155f) then let rest for 20min. Add the rest of the water, lauter until wort is clear, then move to kettle for the boil. Cool with a wort chiller to 20C (68f). Reserve 1.5L (0.4gal or 6 1/3 cups) of wort in a sterilized airtight container (like a growler) and place in the fridge. Transfer the rest of the wort to a carboy, pitch yeast, aerate and ferment between 20-22C (68-72f). After 2 weeks rack to secondary. After one more week carefully add the reserved wort (also called spiese) to bottling bucket then add the beer on top of that. Bottle and wait 3 weeks then enjoy!
