CHICKEN PESTO PASTA - 1-2 tbsp pesto - 1 box penne - 1 large chicken breast - 1/2 cup baby heirlooms, halved - 1/2 cup chopped baby spinach - Salt and pepper to taste . Steps: 1. Boil penne in medium sized pot of salted water for 10-12 minutes. While pasta is boiling, slice chicken breast into 3 separate pieces and season, once seasoned place chicken in pan with olive oil and cook on each side for 4 minutes. 2. Halve your tomatoes and cook in a small pan in 1 tsp olive oil and cook until they begin to blister. 3. Once chicken is done, place on cutting board and slice against the grain into even cuts. 4. When pasta is done boiling, drain pasta but reserve 1 cup of the pasta water. You’ll need this later. 5. Add pasta to medium skillet and add 1-2 tbsp pesto. Use your pasta water to thin this out until all noodles are coated and it forms a nice saucy consistency. Comida 🍛 Hoy me he preparado este plato de curry bien completo, ¿Qué os parece?😋 No tiene ninguna complicación más que echarlo todo en una sartén a que se haga jaja os cuento: - 🔸Para el curry: en un poco de AOVE salteé berenjena y mezcla de verduras congeladas. A continuación añadí tofu ahumado de natursoy y di unas vueltas hasta que estuvo todo doradito. Which team are you FᎡᎬᏚᎻ or FᎡᎾᏃᎬN⁉️ Did you know there is almost no difference in nutritional value when it comes to fresh vs frozen produce. Frozen fruit might have more nutrient dense properties as they are picked when its ripe & immediately frozen. Usually, no chemicals are added to produce before freezing. During the process from being picked to frozen, fruit and veggies are usually washed, blanched, cut frozen and packaged all within a few hours. Most fresh fruit & veggies are picked before they are ripe and will ripen during transportation. They can be in transportation anywhere from 3 days to several weeks (up to 12 months for certain produce) before arriving to a distribution centre. During transportation, fresh produce is generally stored in a chilled, controlled atmosphere and treated with chemicals to prevent spoiling. Bottom line, frozen produce are snap frozen soon after they’re picked, they are just as nutritious (sometimes even more) than fresh… For some foods there is a compromise on taste and texture once the food is defrosted. When I got sick in February, and then again in March, I lost weight quickly & it didn’t stop. I could barely eat anything without being in pain. Anything I could eat, I didn’t retain. My body was burning every calorie I put into it just to try & sustain itself, and it could barely do that. IBD is so different for everyone, but for me, during my last two flares, it meant weight loss & malabsorption. ⁣ ⁣ I’m 5’9 & had to wear my clothes from middle school. I looked in the mirror & didn’t recognize myself. ⁣ And then came the comments. I know most people didn’t understand or realize the true reasons behind my sudden weight loss. But, nonetheless, it was still complicated & confusing. Because half the time people would say “you need to gain weight” & “you need to eat more.” And then the other half of the time people would say “you look so good.” My body physically could not process food properly, & because of that, I was not at a healthy weight for my body at all. At 22 years old, I was the weight I was at 14. And yet there were people saying I looked good? Did they like me better that thin? ⁣ ⁣ It’s been a few months now & I’m doing a lot better. My stomach still can’t tolerate most foods, but I’m able to eat more of the foods that I can handle. I’m able to go for long walks & lift little weights again. I’m able to wake up every day & go to a job that I love. But even when you’re doing better, that kind of thing can stay with you. Every pound I slowly but surely gain back is a step in the right direction for my health & my life, but I can still hear those people in the back of my head saying, “you look so good.” ⁣ ⁣ Not only is gaining weight back after a Crohn’s flare physically difficult, it’s also mentally difficult. I know that when I was the smallest version of myself, I was not the healthiest version of myself. But in a world that perpetually tries to reinforce the dangerous idea that being the smallest version of yourself is the key to social acceptance, your mind can become a battleground of conflicting messages. So here I am, choosing which message will win - choosing to be the strongest, healthiest, & most capable version of myself. For myself.
