Vegan Bowl 🍲🌱 If you are following me for a while you know that I am a huge fan of vegan products, even though I am not a vegan, nor planning to be one soon. I like to eat meat, poultry and diary products. I am just aiming to consume them in moderation. If I ever eat red meat (just like yesterday), the next day I consume only plant based products, as I am aware of the benefits of a plant focused diet. What I have in my bowl: Vegan pasta, black beans, carrots, sweet potatoes, onions, celery roots, cauliflower, leek, kale. What I used additionally: olive oil, soy sauce, tomato sauce, salt. How I made it: 🍲 cook the pasta however you like it. 🍲steam the vegetables (except sweet potatoes and onions). 🍲cook your black beans in a pressure cooker for around 20 minutes. 🍲marinade sweet potato and onion, together with olive oil and salt. 🍲put olive oil in a saucepan over a medium heat. then add the tomato puree, soy sauce, salt, roasted sweet potatoes& onions and cooked black beans. Did you know that a stranger can change your life? 💁🏼‍♀️.. . I started creeping her in 2016. She DM’d me and I ‘forgot to reply’ 🙈. I reached out to her in early 2017 & she told me what I needed to do get healthier- BUT I told her that all looked nice but I wasn’t ready . In summer of July 2017 she checked back in with me again. I was at the mid way point of grad school feeling more burnout out, defeated and anxious than ever. I told her I was scared but tired of feeling no energy, being uncomfortable in my clothes and missed being happy . She told me she could relate, help eased my worries and reminded me we were going to be doing this together ❤️. 3 years later I got to meet her & thank her. I ugly cried and squeezed her so hard because without her persistence I don’t know if I would have made the investment in myself . Thanks for not giving up on me friend ☀️.. . Never underestimate the power of a message, even from a stranger 😘. It might just change your life, like it did mine.

We have had the best last few days with my parents in northern Michigan! I got home at dinner time yesterday and thanks to this @mikeys pizza crust I was able to get a good healthy dinner together so fast! ⁣ ⁣ The pizza crust is gluten, soy and dairy free so it’s a great choice for those with allergies or diet restrictions! ⁣ ⁣ Details: spread pesto sauce (I make this homemade and store in freezer but store bought is great too), vegan cheese, sliced fresh figs. Bake for 12-15 minutes. Top with prosciutto and some arugula and balsamic glaze (I like Trader Joe’s). ⁣ ⁣ Quick and so tasty! ⁣ ⁣ ⁣ ⁣

This sign...well it means everything to me because last week the Mr. urged and encouraged me to take time away from our family to recharge (and I know he’s not going to be too happy about me posting this sappy message here...he dislikes being on social media, but I think it’s so important to share that he really is the rockstar of our family 😉). . . ⭐️He knew I needed a trip to meet my coach besties more than I thought I needed it, and in doing so he proved to me that we are a team, a partnership. . ⭐️He showed me that it’s ok to encourage each other to take risks even though they may be uncomfortable and that they temporarily may add a bit of stress to the day to day. . ⭐️He showed me that it’s not a burden to add a few extra chores to his day so that his wife can have time to do something she really loves, something that brings her joy. . He gave me something last week that meant more to me than he will ever know. He taught me that the most special things are created through being selfless and supportive of others. He didn’t just give me an opportunity, he MADE that opportunity happen. . . I don’t know if I can take as much credit as he deserves for building this amazing life that we get to call our own, but I do know I’m going to work so hard to make sure I’m as supportive to him and his dreams, as he is to mine.

It made the bowl SOOOO CREAMY 😍 Recipe: Blend 1/2 cup of raw cashews, 1/2 cup of raw almonds, a splash of vanilla extract, and 2 cups of water into a blender. My version of a cinnamon latte ☕️ I bang on about this a lot, but coffee is no good for my body. It doesn’t make me feel good (after the initial high!) and really impacts my sleep. This is why I love @wholeearthfoods coffee alternative. I choose the caffeine free one (but they do one with caffeine in too) and have it with some @plenishdrinks almond or oat milk that I heat in my milk frother. Then add a teaspoon of inulin powder, half a teaspoon of honey and a pinch of cinnamon. It is sooo good and gives me that comforting milky drink without the guilt! KETO DESSERT! STRAWBERRY CREAM CHOCOLATE DONUT! TRUELY AMAZING, VERY SOFT AND FLUFFY. 🍩. My oldest daughter help make, bake and ice. @keiah. Nutritional Facts per serving ♡⬇️ ● Serves 12 Donuts: 🍩 2.9g net carbs . 🍩 13.3g fat . 🍩 6.2g protein . 🍩 152 cal . ☆. Recipe: mix together, 4 eggs. 4 tbsp almond milk. 2 tsp vanilla essence. 1 tsp apple cider vinegar. 1 tsp baking soda. ☆ Now mix in with rest, 1 3/4 cups off almond flour. 1/2 cup of erythritol. 1/4 cup of unsweetened cocoa powder ☆ Grease Donut tin. Spoon in to tin filling 13 donut holes 3/4 full and cook at 180°c for 16min. ☆Melt 70g of dark chocolate of choice. ( I used lindt 90% cocoa.) Dip Donnut in chocolate untill covered, put on a tray and cool in freezer for 20min or until chocolate sets. Cut in half a fill with cream of choice. ( I used betty crocker strawberry whipped cream). ●. 🍩 IF YOU LIKE! Green and lean spinach and kale black bean omelette. I actually love an omelette because you can get your greens in plus some quality protein. Black beans are awesome because they contain slow burning carbohydrate, protein and fibre - all of which will help keep your tummy from rumbling and also keep your blood sugar levels steady. They’re also a good source of iron, which is needed to transport oxygen into the blood stream. Top tip - make enough so you can take it in your lunch box 2 days in a row or cut into 4 and have as a snack at 4pm when you get the munchies.

To make the tart base 👇 ♡1 can of chickpeas (drained) + 2 serves @macr0mike 'sweet original' pb + 1 small egg ♡Place chickpeas in food processor and blend for approx 30 seconds, then add the rest of the ingredients - blend until a thick paste forms ♡Evenly distribute ingredients out into two small pie/tart tins (I sprayed these lightly with a little oil to prevent sticking) ♡Bake for approx 20-30 minutes @ 180° (fan forced oven) ♡Allow to cool before removing from tins and topping ♡Topped with @yoproau natural yogurt + fresh strawberries & banana + gf pretzel + 2g @loving_earth cacao nibs + hemp seeds + @waldenfarmsinternational strawberry flavored syrup . 🥞 💪😍HEALTHY protein-packed banana pancakes?! 😍💪🥞These bad boys are gluten and sugar free PLUS they taste delicious - the perfect #fitfuel. If you feel like you don’t have time for such an indulgent breakfast, don’t worry, they come together in a snap and use JUST THREE ingredients. Make them post-spin class or for your whole family this weekend - even the kiddos LOVE them. Ingredients to serve 2 (or 1 if you’re hungry): ● 2 bananas, chopped 🍌 🍌 ● 2 large farm eggs 🥚 🥚 ● 1 serving of your favorite vanilla ​protein powder 1. Add all ingredients to a nutribullet or high speed blender and blitz up til very well combined. 2. Preheat a non-stick skillet to medium heat and add a spritz of cooking spray 3. Using a 1⁄4 cup measure, add your batter to the pan for the perfect portion size. 4. Cook until the edges become cooked through and a few bubbles form on the top of the pancake - flip and cook on the other side until golden brown (axp. 1 min per side) *Option to add a few blueberries, banana slices or even mini chocolate chips before flipping 5. Serve right away with fresh fruit, yogurt or maple syrup. YUM!

Good morning 🌞 . . So, Travel food!! It literally cannot be simpler since almost everything now is available to go. So if you think the easiest thing to eat while traveling is cookies and chips, then you’re in denial 🧐 . . . First photo are all the snacks I’m taking from home for the road and to have on hand during the trip. Super easy stuff that needs no prepping really. . . . I made a brief stop by the supermarket to get fresh cut-up fruit (watermelon specifically 🤤) . .
