Daily Meal 5/5 on my 6 Week Challenge plan is meant to be~
150g of (Mince Meat cooked with a oxo cube, tin tomatoes, herbs & spice) then 5 asparagus Spears & 1 egg
Not really been enjoying this so I have created a dish myself here still weighing it at 150g (chicken breast cooked with tomatoes & spices) side of broccoli rice. Then I might have a boiled egg separate .
Not checked if this is ok with the PT’s yet but I’m not a big red meat eater and this dish is still healthy so hopefully gets the ok. 🤔
Cauliflower Cheesy Garlic Bread .
This was really good, I made it for my mum and she kept saying it’s not like your eating cauliflower at all. I will be making this again and also using same for a pizza base.
•Cook Cauliflower - chop into florets, place in abit of water and cook in the microwave until softened or steam
Transfer to a food processor, blitz until fine
•Scoop into a cotton tea towel and squeeze out the water so your left with a dry fine consistency •Place this in a bowl add garlic salt, mixed 🌿 herbs and combine
•Line a baking tray with greaseproof paper, scoop cauliflower mixture ontop flatten it down so compact & not too thick to create a base •Top with mature grated cheese then bake in the oven ~ voila 😋 you can adapt the recipe by adding any different toppings to create more of a pizza 🍕 .
Aromatic Beetroot, Spinach & Potato Coconut Curry .
Garnished with Coriander & a squeeze of fresh lime alongside a Methi Roti .
So my mum gave me a home grown beetroot and said see what can you do with this? So I thought I’d try out something different.
From the beetroot I have created a tasty main and dessert. These being an Aromatic Beetroot, Spinach & Potato Coconut Curry and a Beetroot chocolate brownie to which will be on my next insta post.
My mum enjoyed both of these beetroot delights. .

I’m Addicted to Granola ~ topping my fruit & yogurt with it is the best way as otherwise I’d eat the full lot, so morerish.
