Mu Shu pork is one of my favorite things to eat when I order take out on the weekends. It’s full of fresh and vibrant ingredients and full of bold sweet and savory flavors. So I decided to come up with a quick and easy meal prep version that I can enjoy during the week. . . Instead of pork, I used lean ground turkey meat for a healthier option. I added some shredded carrots for some color.Instead of chopping up mushrooms, I used pre-sliced mushrooms. Normally you eat this dish with homemade thin pancakes, but I decided to use a low carb tortilla instead. I seasoned it with coco aminos, hoisin sauce, and ginger paste. . . Thai ⁣pineapple fried rice, anyone?⁣😋⠀ By @woon.heng⠀ ⁣⠀ Recipe (serves 2-3)⁣⠀ Ingredients:⁣⠀ ~ 2 cups cooked Jasmine rice (used rice cooker)⁣⠀ ~ 1/2 cup of each: dry roasted cashew, fresh🍍chunks, pan fried tofu, broccoli stems⁣⠀ ~ 1 small carrots - diced⁣⠀ ~ 1 small onion - sliced⁣⠀ ~ 3 cloves garlic - minced⁣⠀ ~ 1 tablespoon sliced ⁣jalapeño⠀ ~ oil, salt to taste⁣⠀ 🍃Sauce (mix together): 1.5 tablespoons 'fish' sauce (recipe on highlights) & 1.5 tablespoons soy sauce/liquid amino⁣ ✔️In a heated non-stick pan with 2 teaspoons oil, sauté onion, garlic, & carrot until soft. Then, add broccoli stems, tofu, rice and sauce. Stir continuously until all rice are well coated with sauce.⠀ ✔️Finally, add cashews, pineapple, jalapeño and season well. Super easy and quick for any meal of the day. You can add other green veggies as well. Serve warm with some Thai basil.😋 ✨Few tips to get fluffy rice:⁣⠀ - When you cook your rice, use a little less water than requested. I have always used my rice cooker, and my finger to gauge the water needed.😜⠀ - Let rice cool down first. Getting back in routine after a rough couple of STRESS filled days for my mom. What I’ve learned are these two things: 1) if I have food prepped in the fridge / pantry it’s a lot easier to make better choices of what’s going in my mouth 2) if I eat ice cream out of emotional eating, it’s not the stopping/total derailment of every other good choice I’ve made.

One of my clients, tweak this week is to replace 3 takeaway meals with 3 home-cooked meals.  Extra tips for achieving this tweak are: Aim to base your home-cooked meals on the healthy dinner plate with: * half the plate as vegetables * a quarter as protein * a quarter as carbohydrates Make the meal interesting by: *cooking the vegetables differently: steam, roast, stir-fry, salad with small amount of dressing *aim for wholegrain carbohydrates: brown/black rice, wholegrain or pulse pasta *spice up the plate with marinades, salsa, satay, spices, etc Make extra serves and take one for lunch the next day or freeze them for later #tweakyourlife #tweakoftheweek #homecookedoverfastfood #homecookedmeal #healthydinnerplate #variety #spiceitup #wholegrain #foodprep #extraserve #nutrition #healthylifestyle

You start making up a story about how you’re a failure because the plan didn’t go as planned. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ But here’s the thing. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ You’re actually still right on track. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ You heard me. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ You’re right on track, because they’re YOUR tracks. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Whether you fell off the wagon (even though I hate the wagon analogy lol), hit a plateau, or had some other things in life take priority, THIS JUST IN Y'ALL....you did not fail! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Weight loss is NOT linear, and to get from point A to point B, there's a whole rollercoaster ride involved if you know what I mean. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ And guess what? Here is the aftermath of the "Straw hack." 2 pounds of strawberries later and I have some thoughts. 💭💬 . . In case you aren't aware of this idea, you use a straw to hull the strawberries. In theory, the stem pops right off and you waste very little of the strawberry. . . My biggest attraction to this idea was the lack of food waste. I always feel remorse tossing out big tops of strawberries, or big chunks of it after hulling them. Additionally, I have a bunch of plastic straws I want to find use for before I completely switch to reusable ones. This seemed like a decent idea to use them up! 🥤🍓 . . So, the main question: Does it work?! . . Yes and no. 🤷👍👎 It certainly reduced food waste by quite a bit for me! After slicing in half, it was also very beautiful looking slices with minimal slicing. I'd certainly recommend if you're serving slices on a platter. Ease? Well... For about half of them I still had to cut out some of the stem! 😒 Also, I'd recommend a study straw, not a cheap plastic one, if you have more than a pound or so. About halfway thru my straw was having a hard time remaining stiff and bending quite a bit. . . All in all, not a useless hack, but not a life changing secret either. So here's your reminder to treat yo'self this week (with THIS) . makes about 4 servings Ingredients: 6 packed cups baby spinch 2 cups fresh strawberries, sliced 1 large avocado, diced 1/3 cup assiago cheese, grated 1/3 cup chopped pecans Homemade Honey Lime Dressing: 4 Tbsps high quality olive oil 3 fresh limes, juiced zest of 1 lime 1 Tbsp raw honey 1-2 fresh garlic cloves, minced pinch of sea salt and pepper, or more to taste Instructions: In a small mason jar add all dressing ingredients. Place the lid on and shake to emulsify, OR simply whisk ingredients. In a large bowl, combine baby spinach, strawberries, avocado, feta cheese, and pecans as shown. Drizzle dressing over the salad and toss gently to coat. First time using @hellofreshca and it was amazing! . . . It was set up for my grandma so she can have easy meals to prepare and cook for herself at home. She picked her three favourite meals that they offered and a few days later, she had a package full of the fresh meats, veggies, herbs etc. at her doorstep. . . . We made tonight’s meal together! It took under 20 minutes to prepare and under 30 minutes to cook. . . . Tonight’s dinner consisted of fried cornmeal crusted salmon, sliced roasted potatoes and cooked garlic, shallots and green beans! The salmon was topped with a sour cream & dill topping (optional). . . . .
