A healthier twist on one of our favorites. Zucchini lasagna with garlic red sauce. The ricotta is altered slightly from what I usually do - this one is made with cashews that have been soaked overnight to create a cheesy texture. I haven’t mastered almost vegan cheeses yet, but I have ricotta in the bag. 🍝🌱

Plant-based lunch bowls topped with cashew honey lemon dressing🤤🙌🏼Plant-based eating doesn't need to be fancy or complicated. This meal seriously hit the spot and took no time at all. I also meal prepped these ingredients - it helps save money and time during my busy week! I quickly threw these together and now I have extra prepped and ready in the fridge for my next few meals! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ I used the @traderjoes pre-cooked lentils (saves so much time & so yummy), cooked some tri-color quinoa, roasted carrots, chopped kale, and made some cashew honey lemon dressing in the blender, all in 30 minutes. The dressing is literally just water, cashews, lemon, garlic salt, and @wedderspoonoffical Manuka honey to give it a subtle sweetness. It pairs so well with the flavors of this buddha bowl and could go on wraps, sandwiches, and used as dip throughout the week! If you haven't tried adding honey to your cashew based sauce I totally recommend! xx

I've been allowing more gf grains in my diet, mainly rice and a tiny amount of oats. I've been craving them - it's important to pay attention to your cravings. Heidelbeer-Bananenbrot 😍 ______ Zutaten: ➡120g Hafermehl ➡3 sehr reife Bananen ➡2 EL Kokosöl (oder anderes) ➡100g Heidelbeeren ➡1 Messerspitze Backpulver ➡ca 50-100 ml Drink/ Milch ➡ganz viel Zimt ➡2 Eier oder (2 EL Chia-/ oder Leinsamen gequellt mit 6 EL Wasser) ➡optional: gehackte Nüsse, Sirup, Schokolade,... ____ 1) Die Eier mit dem Öl und der zermatschten Banane gut verrühren. 2) Anschließend die trockenen Zutaten hinzugeben und diese unterrühren. 2) Als letztes soviel (pflanzliche) Milch dazugeben, bis ein cremiger Teig entsteht. Die Heidelbeeren vorsichtig unterheben. 3) Das Ganze bei 180°C mind. 20 Minuten backen und ab und zu immermal wieder die Stäbchenprobe machen :) Genießen! 😊 #foodblogia

Good Morning my friends🌹🌞 Today’s Special: Vegan Mango Coconut Panna Cotta😋⁣⁣⁣ Easy-Whole-Vegan-Gluten free!!⁣⁣ ⁣⁣⁣ This Mango Panna Cotta is smooth and creamy right down to the last spoonful! It’s a gorgeous dessert that will wow your guests at a party, and it also works perfectly as a homestyle pudding for mango lovers. ⁣⁣⁣ The best part?? You can make it up to several days ahead of time!⁣⁣⁣ Recipe below 📝👇🏻⁣⁣⁣ ⁣⁣⁣ INGREDIENTS:⁣⁣⁣ For the coconut panna cotta:⁣⁣⁣ 🔸1 can of coconut milk (400 ml)⁣⁣⁣ 🔸250 ml coconut cream⁣⁣⁣ 🔸2 agar agar powder⁣⁣⁣ 🔸3 tbsp coconut sugar⁣⁣⁣ 🔸1 tbsp shredded unsweeted coconut⁣⁣⁣ 🔸½ tsp vanilla powder⁣⁣⁣ ⁣⁣⁣ For the mango-passion fruit coulis:⁣⁣⁣ 🔹1 mango⁣⁣⁣ 🔹3 passion fruits⁣⁣⁣ 🔹Dash of organic orange juice (optional)⁣⁣⁣ ⁣⁣⁣ INSTRUCTIONS:⁣⁣⁣ 1. Coconut Panna Cotta: Dilute agar with the cold coconut milk. In a medium saucepan, bring coconut milk, coconut cream, shredded coconut, vanilla powder and sugar just to the boil, then turn it down to a simmer, stirring until sugar is dissolved. Cook for about 2-3 minutes whisking it constantly.⁣⁣⁣ 2. To create slanted lines, place your verrines or dessert glasses on top of an other glass, or inside an egg box. Pour the mixture into the verrines and chill in the fridge for at least 1 hour.⁣⁣⁣ 3. Mango-passion fruit coulis: Mix the mango flesh and passion fruit juice (I discarded the seeds using a mesh strainer) in a blender. You can add a dash of orange juice if wanted.⁣⁣⁣ 4. Pour the coulis in the verrines. Decorate with mango chunks before serving. Good Morning my friends!😘⁣ Today’s gourmet feast: ⁣ MASALA DOSA with COCONUT CHUTNEY & TOMATO CHUTNEY. 😋🍛🍽⁣⁣⁣⁣⁣⁣ ⁣ There's probably nothing more sublime and delicious in my South Indian cuisine than crispy dosa. These have been one of my household’s favourite go-to meal !🍽😋⁣⁣⁣⁣⁣ ⁣⁣ Dosa is a simple , easy to make , appetizing and nutritious dish. It’s a fermented, low carb-high protein food, packed with fiber and natural probiotics. And what’s more , it’s VEGAN and GLUTEN FREE as well 😋🍛⁣⁣⁣⁣⁣ ⁣⁣⁣ Dosa is one such food item that’s extremely appetizing and relatively light, made from rice , lentils and other spices , adding low calories in your body. It's a healthy choice to overcome obesity.⁣⁣ ⁣⁣⁣ A properly made crisp and savory Indian dosa is fairly simple to make, with this caveat: after grinding, the batter must be fermented overnight or for at least 8 hours for the correct texture and requisite sour flavor.
