Citrus Cured Salmon : Those who know me knows that I love raw food. Nigiri, sashimi these are my thing. I have soft corner for these and I don’t like anything messing up with that raw flavor of sashimi or nigiri but this one dish from bdsavva made me utter disappointed. . . . Citrus cured salmon so it was supposed to be salty. I do get that but there is always a boundary to which a person can take saltiness of any item. Sadly it crossed that boundary. That saltiness surpassed other flavors, I could barely taste the freshness of the salmon or fattiness (If it was, couldn’t even tell). There should also be a hint of sweetness there as it was supposed to be cured in salt and brown sugar, cutrus and other spices. Add base ingredients in a bowl. Mix it well until a dough consistency is achieved 2. Knead for 5 minutes. Flatten the dough. Add herbs. Fold the dough and knead again. Put back in the bowl, cover with cloth for 15 minutes 3. Sliced the toppings. Marinate in mixed herbs, 1 tsp cumin seeds, 1 tsp b. Pepper, 1/2 tsp halba fenugreek. Add 1 tsp olive oil when mixing 4. Prepare baking tray with baking paper. After 15 minutes, roll the dough on the tray, spread it out. Top with pizza toppings. Add dash of olive oil and pinch of pink salt 5. Have you watched “Far from the Madding Crowd”? If you like period drama... this will be right up your alley. And for tomorrow’s lunch... Boil a sweet potato, Cut it in half, scoop up the centre and reserve to make gnocchi 😉 . In a bowl, mix some fat free Greek yogurt with 100gr of crumbled feta, finely chopped mint, salt and pepper. Stuff the potatoes with this mix and set aside. Chop some kale and fry in a pan with 1 tbsp of olive oil until crispy. Lay on top of the potato and bake for 10 minutes. Pan roast some pine nuts with no oil at all. Take out of the oven, sprinkle pine nuts on top and serve. And now go watch the movie. I’m not a massive cake person but for some reason I LOVE loaf cakes, what about you? Had a fun week last week hanging with friends, but super excited to be back in the kitchen👩🏼‍🍳my happy place☺️Hope you’re having a fab end to your week xoxoxo . . Blueberry lemon pound cake . Wet . 3/4 cup almond milk 3/4 cup sugar 2 tsp vanilla extract 3 tbsp veg oil half lemon, juiced and zested 1/2 cup non dairy yoghurt (I used nushfoods almond yoghurt) . Dry . 2 cups all purpose gluten free flour 1/4 tsp xanthan gum 1.5 tsp baking powder 1/4 tsp baking soda 1/4 tsp salt 1 cup blueberries . Preheat oven to 180•c and line a loaf tin. Mix all wet ingredients together in a bowl until smooth. In a another bowl, add all dry ingredients apart from blueberries. Stir to combine, then add to the wet ingredients and mix to form a smooth batter. Fold through 3/4 cup blueberries, saving the rest. Fill loaf tin with batter and sprinkle blueberries on top. Bake for 60 mins, until golden and a toothpick comes out clean. Cool completely before slicing.

Hello everyone.. I would like to share this fragrant carrot butter rice recipe.. You will be surprised to taste this delicious carrot rice. Carrot Butter Rice 🥕 Ingredients: • 2 – 3 tablespoons vegetable oil or canola. • 4 tablespoons butter salted or unsalted, divided • 2 cups basmati rice or other long-grain rice (raw) • 1 onion very finely sliced • 2 cups grated carrots • 1 cup of cabbage very finely sliced • 1 tsp salt • ½ tsp whole black pepper • 2 whole cardamom pods • 1/2 cup golden raisins • 4 cups boiled water for cooking the rice Spices • 1 tsp ground cardamom • 1 tsp ginger powder • 1 tsp ground coriander • ½ tsp ground black pepper Garnish • ¼ cup scallions chopped • ¼ cup of pine nuts and raisins toasted with butter . Instructions: • Rinse the rice under cold water to remove any surface starch, if desired. Soak the rice in about twice the amount of boiling water for approximately 15 to 20 minutes. Add 1 teaspoon salt and set aside. • Meanwhile, heat oil in a large saucepan over medium heat. Add 4 tbsp butter. Once melted, add 2 whole cardamom pods, ½ tsp whole black pepper, onion, carrots, cabbage, and raisins. Cook for 2 to 3 minutes or until the onion is tender and the butter is well infused with carrot flavor. • Add the drained rice and spices. Stir the mixture carefully. • Pour 4 cups of boiling water, add 1 teaspoon of salt. • Cook for 2 minutes or until liquid is almost absorbed by the rice. Place lid on saucepan, reduce heat to low and simmer for 20 to 25 minutes. • Fluff with a fork, transfer into serving bowl.
