I’m a perfectionist. It’s one of the qualities I love about myself & it definitely has it’s benefits, but like anything else, this trait has its drawbacks 🙆🏼‍♀️ I tend to take myself too seriously. . i posted these waffles yesterday in my story for breakfast and i had so many requests for the recipe, i thought i’d share here! it is quite simple: 2 c 1:1 all purpose gluten free flour 2 medium ripe bananas 3 cups unsweetened almond milk 1/2 tsp aluminum free baking powder place all ingredients in a mixing bowl and blend with a hand held immersion blender. once smooth add desired amount to your preheated waffle maker. cook for roughly 5 mins. we use a presto ceramic flipside belgian waffle maker. so, i flip it back and forth a few times. these waffles smell absolutely delicious! the kids say they’re crispy outside and soft in. they love them! we topped these with strawberries, bananas, coconut, wildwayoflife banana nut granola and strawberry-banana nice cream. served with a side of cucumbers 😋

Hi!! Happy Tuesday! Time for lunch. On this plate I have some whole gram basmati rice (AKA my latest obsession) and cooked greens (green beans and broccoli) with pine nuts. If you make this definitely add the pine nuts! It gives it a crunchy, creamy yummy bite. lately I’ve been sitting outside reading a book everyday for at least an hour and I’ve been absolutely loving it. The weather is so nice. I wish summer could last forever 😩

This morning I needed to make the 2 Ingredient Dough bagels (I made rolls). I decided to use a 1/4 of the batch to try crackers. Um, YES!! They are good!! Only 3sp for gluten free crackers I can make when I want!! Btw, if you are GF & want to attempt baking, remember one important rule: do not overwork the dough!! I used 1 cup 1-to-1 baking flour but to make it “self-rising” I add 1 1/2 tsp, 1/2 tsp salt, 1/2 tsp of xanthan gum, 1 cup of nonfat plain Greek yogurt. glutenfree glutenfreeww gfww wwpounddropper wwpounddropperrecipe ww wwpounddropper thanks for your recipes! Sizzling in the heat… ☀️🌡 Feeling like this Dolsot Bibimbab? Like who? Bibimbab! That's rice mixed with various toppings! (👉see previous posts) There are no limits to the diversity of Bibimbab - you can basically top rice with whatever you like and then season everything with a sauce! 🍚🌶🥒🥦🍄🥕 A few criteria helps to give the Bibimbab family some structure. One of the main points of distinction is the container for Bibimbab: A) For regular Bibimbab, any large bowl will do. B) But for Dolsot Bibimbab 돌솥비빔밥, you will need a 'dolsot' - a pot made from stoneware or real stone, which is heated prior to serving. And WOW is it HOT! 🔥😱. . The pot is so hot, that its contents are literally fried inside of it! So after serving, your Dolsot Bibimbab will sizzle in front of you for quite some time. If you refrain from mixing the ingredients right away, the rice on the bottom of the pot will eventually develop a crispy, roasted underside. This is generally desired and it is the key characteristic of this kind of Bibimbab. Regarding its ingredients, Dolsot Bibimbab follows the basic Bibimbab formula: Rice🍚 + vegetables🥕 / mushrooms🍄 + egg🥚 + (chili) sauce🌶 (+ meat🥩 / fish🐟 / seafood🦑). . Today, I visited a place I've never been to before: "Majihan" 맞이한 in the theater district Hyehwa 혜화 near Seonggyungwan University 성균관대학교. (Address: 서울시 종로구 성균관로 12-5) This vegan, nonGMO and glutenfree cafe/restaurant also offers cooking classes, so on certain days they open only at 1.30pm. It is best to check with them before going: majihan._ On location, they produce and sell their own 🍪bakery. Their main menu is rather small with currently only 3 options: Bibimbab 🍜비빔밥, 🍣Kimbab 김밥 and 🍚Risotto with soymilk. They use all organic ingredients including sprouted whole grain rice 발아현미 for their dishes, which is why the price is above average. Also, orders take some time to process, so better not be in a rush (or extremely hungry 😆) when eating here. I'd describe their food as a modern, healthy, fusion-type of Korean food created for people with certain dietary restrictions. It literally tasted like healthfood if you know what I mean.... 😅🥦 (Do not expect classical flavours here!) . . They are few, but they exist: All vegan/vegetarian restaurants. Instead of hoping to find a single vegan/vegetarian option or asking for custom made food in a regular restaurant (which may be bothersome to everyone involved - yourself, your company, restaurant staff), it is nice to have the entire menu to choose from for a change. 😁 Hence, at the beginning I used to be quite the regular customer at this place: Osegae 오세계향 14-5 Insadong 12-gil, Gwanhun-dong, Jongno-gu, Seoul The place is run by a religious organization, as apparent in their interior design. It is located in the touristy shopping street of Insadong 인사동, which is close to many cultural attractions. Prices of 9000~12.000 KRW per dish are around average for the area. They offer common Korean food - but in an all vegan version!! 🥦🎉 They replace meat with subsitutes from soy or gluten, so you can still get an authentic taste of Korean traditional food.😊 It is also possible to select dishes without onions and garlic (무오신채), so sometimes Buddhist monks are also among the customers here. . . The dish that is perhaps the most easily found option for vegans, vegetarians or people following a halal or kosher diet is.... Bibimbab 비빔밥 - mixed rice 🍚🍄🥕🍳🥒🍆. "Bab" 밥 meaning rice is one of the staple foods of Korean cuisine, so many dishes contain rice and also carry the word "bab" in their name. Beside 🍚rice, the dish consists of a number of varying toppings (mostly seasoned 🥕vegetables, 🍄mushrooms and 🍳egg) and a 🌶sauce. There are innumerable versions of Bibimbab! (Starting with just a TINY preview here...) Normally, the cheaper versions do not contain meat or fish produce anyways.
