MAC N CHEESE BITES 🤩 This recipe is beyond simple and so fun!! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Ingredients: 1 box eatbanza chickpea pasta 1 bag so_delicious mozzarella Splash of almond milk Salt/Pepper ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Directions: Preheat oven to 350F and lightly coat a mini muffin tin with coconut oil. Cook the eatbanza chickpea pasta on the stove for 7 minutes, then strain it. Pour the pasta back into the pot and stir in the cheese and almond milk, until melted. Spoon the mac n cheese into the mini muffin tins and bake for 15 minutes (allowing it to cool afterwards for 5-10 minutes.) Enjoy! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ “If your gift is serving others, serve them well. I made a broth with red miso, ginger & garlic and then added the different types of seaweed that I’d soaked before, including the soaking water. It‘s so easy to make your own vegan pesto you really don’t need to buy it! If you like creamy pasta sauces, leave a comment💚 Happy Thursday friends💁🏻‍♀️ Ingredients: 150 g raw cashews, soaked for at least 2 hours 1 tablespoon nutrional yeast (gluten free) 2 clove garlic (crushed) 1 teaspoon lemon juice (freshly squeezed) 200 water 2 tablespoons olive oil ¼ teaspoon paprika heaping 80 g fresh basil ½ teaspoon salt ½ teaspoon freshly ground black pepper 200 g pasta Add the basil, olive oil, garlic, lemon juice, salt and pepper , nutrional yeast into a food processor. BLUEBERRY LEMON BANANA BREAD 👅👅 Paleo and gluten free bread ain't so bad 😉 I am not a huge lemon person when it comes to baked goods, but this hit the SPOT for sure 😍 the lemon + fresh blueberry combo is perfect! . When I saw this on choosing_balance page, it was only a matter of time 🤷🏼‍♀️ Thanks for sharing girl! DIRECTIONS: Preheat oven to 350 degrees. In bowl, whisk together 3 eggs. Add in 2 mashed bananas, 2 c almond flour 2 tbsp coconut flour, 2 tbsp unsweetened vanilla almond milk, 1 tsp cinnamon, 1 tsp vanilla, 1/4 c melted butter, 1 tsp baking powder, 1 lemon zested [about 1 tbsp]. Mix all ingredients together well, then add 3/4 c blueberries [fresh or frozen] & mix in gently. Place batter in a loaf pan lined with parchment paper & bake for 35 mins! It’s been a hectic week so meals have been simple 👍 I cooked the shredded cabbage on Sunday so all I had to do was: 1️⃣ Throw the cabbage + a handful of arugula and two eggs into a sauté pan with a little coconut oil and sea salt 2️⃣ Add a splash of water and cover with a lid to create some steam 3️⃣ Cook for 4-5 minutes until the egg whites are cooked then scoop it all into a plate and smother it in dressing 👅 . 🍊Orange Ginger Chicken Stir Fry with Snow Peas, shiitake mushrooms, carrots 🥕 and sesame seeds 👌🏻 Ready in under 30 minutes ⏲ . Heat 2 tablespoons vegetable oil over medium- high heat in a large skillet. Cook 1 to 2 cups julienne carrots ( my kids like taking carrot "chips" to school for lunch so I buy carrots cut into chips at grocery store . You can use another mushroom, but shiitakes have a great rich flavor). Cook for 2 minutes, stirring often. This pumpkin banana snacking bread has been on REPEAT lately. I added a caramel pecan + cranberries taosbakes bar on top for a candies pecan topping vibe. Thanks shutthekaleup for the bomb recipe👏🏼😍 I’ve made a few tweaks here and there, so here they are👇🏼 . Ingredients: 1 cup pumpkin Purée 1 banana, mashed 3 eggs 1/3 cup almond butter 2 tbs maple syrup 1 tsp vanilla 1/2 cup coconut flour 2 tbs flax meal 1 tsp baking powder 1 tsp each pumpkin pie spice, cinnamon 1/2 tsp cardamom 1/4 tsp salt 1 taosbakes bar for topping Preheat the oven to 350°F and line a loaf pan with parchment paper. In a large bowl, combine the pumpkin, mashed banana, vanilla, almond butter, eggs, and maple syrup. In a small bowl combine the coconut flour, flax meal, salt baking powder and spices. Add the dry mix to the wet mixture and stir to combine. Pour into the lined loaf pan, then crumble the taosbakes bar on top (trust me, so worth it because it tastes like candies pecans on top). Bake for 45 minutes to an hour and let cool completely before diggin in. Store in the fridge and it should stay fresh for five days.

The only downside is it gets everywhere and it stains(!) so make sure small hands gets a proper wipe off before leaving the dinner table 😅🙈 _ 🛒 Serves 4 (plus possible leftovers for the next day lunches). 2 cans of chickpeas, 5 medium potatoes cubed, 1 big leek sliced approx 1 cm(leave out the white bulb), half a broccoli (incl the bulb) keep the small florets and half the bigger ones, 3 tbs coconut oil, 3 handfuls of fresh mint. Spices: turmeric, paprika, curry powder, salt to season at the end. _ 👩🏻‍🍳 1️⃣ Turn the oven on 200’c. 2️⃣ Put the potatoes in a large baking tray and cover them with the spices and coconut oil, make sure they’re coated well and bake them for about 15 mins. 3️⃣ Take the potatoes out of the oven. Mix in the chickpeas, broccoli and leeks and bake for another 20 mins. Stir occasionally. . 4️⃣ Add the fresh mint and bake a further 4-5 mins depending on the oven.
