Además, está deliciosa 🤤 y es muy fácil de preparar. Aquí va la forma de hacerla por si os animáis a probarla 👇🏼: . INGREDIENTES: . 🔸 Fideos de arroz sin gluten 🔸 50 gr cebolleta 🔸 3 cucharadas de salsa de soja sin gluten 🔸 1 cucharada de vinagre balsámico 🔸 Una pizca de azúcar 🔸 500 gr de champiñones 🔸 Puerros 🔸 200gr de filetes de pollo/pavo/ternera . Para marinar la carne: 🔹 1 cucharada de salsa de soja sin gluten 🔹 1/2 cucharada de maicena u otro tipo de harina sin gluten 🔹 Un poco de ajo en polvo . PREPARACIÓN: . ▪️ Cortar la carne en trozos medianos y marinarla con los ingredientes indicados en azul. Taparla y dejarla marinar en la nevera durante 20 minutos. ▪️ Cortar la cebolleta y el puerro en trozos pequeños y saltearlos en una sartén con un poco de aceite. Retirar y reservar. ▪️ En la misma sartén, poner un poco más de aceite y cocinar los champiñones. Retirar y reservar. ▪️ Mientras, en una olla con agua hirviendo, cocer los fideos según indique en el paquete. Escurrir y reservar. ▪️ En un bol, mezclar 3 cucharadas de salsa de soja sin gluten, 1 cucharada de vinagre balsámico y una pizca de azúcar. ▪️ Freír la carne marinada. Incorporar el resto de las verduras y después los fideos. Mezclar todo bien. ▪️ Incorporar la salsa y saltear durante 1 minuto. ▪️ Servir y ¡listo! 😋 . Chocolate beet cake 🧁 . There is no reason why this cake should have turned out. So many things went wrong while I was preparing the recipe, and I didn't even have the right ingredients (including baking soda 🤦🏻‍♀️). But wow, this recipe from bonappetitmag was so good! And I may have eaten half of the cake yesterday. . Beets are naturally really sweet so they work well in baking. I used a 3:1 mix of regular dark red beets and golden beets. You can't even tell there's beets in there. Next time I make it, I'd like to swap the brown sugar for a non-processed sugar option to make it a cleaneating option. Also, I mixed the almond flour (read: homemade almond meal) with a 1:1 glutenfree flour and it worked really well! My other success factor is that I use a dark cocoa powder that makes everything super rich and smooth. . I crave them the second I hear my alarm go off (and honestly sometimes when I go to bed the night before) and are packed with health benefits from collagen and MCT oil. They’ve become a staple in my routine. ⭐️chia pudding⭐️ . annnnnd just like that, we made it thru busy season 🙌🏼 celebratin’ this AM with one of my faves— coconut chia seed pudding, honey, black figs, + pistachios. to make pudding, i whipped up 1.5c of fage, 2tbsp chia, 1/4c dried coconut, w/ 1/2 cup almond milk and let it sit in the fridge overnight.

Have you heard of black chickpeas? It’s ok, me neither until a couple of days ago and OF COURSE I needed to make hummus!! And the reaults? Delicious! Maybe slightly more on the bean side of taste profile but nevertheless delicious! How to make it: 👉400gr drained bionaorganic organic black chickpeas or regular 👉4 tbsp extra virgin olive oil 👉2 tbsp bionaorganic tahini paste 👉1/2 clove of garlic 👉1/2 lemon, squeezed 👉salt and pepper to taste 👉a pinch of smoked paprika Drain the chickpeas and tip into a blender witht the tahini. Peel and add the garlic, the olive oil and the paprika and whiz until smooth. Loosen with a splash of water if needed. I have to admit, I’m not normally big on breakfast. However I do like to go for it when I have the time😬 Today’s breakfast is gluten free and vegan - gluten free rolled oats, flax seeds and chia seeds made with coconut milk (I’ll post quantities below); americano with oat milk and one of the peanut butter cookies I made yesterday (someone please take them off me- I can’t stop eating them!😩) RECIPE: For the porridge I mixed 2 cups of coconut milk with 2 tbsp of maple syrup in a pot, raised it to simmer, then added 1 cup of gluten free rolled oats, 2 tbsp chia seeds, 1 tbsp flaxseeds, pinch of salt, bit of cinnamon (can skip that if you want) and then I let it simmer for 10 minutes mixing constantly and adjusting the coconut milk and maple syrup as required. I was so close. I was so so close to finishing my to do list yesterday. Only 2 items left. If you are curious which ones didn’t get the ol' check off you can check my stories, although I may be "dying" to have food ready for the week😉 OK, but in all realness I will survive without those missing 2 check marks because I chose what was priority. Of course donuts aren't priority, but the time I spent with my kids to make them was. The best thing I chose was to do my best. I strive for that daily from the moment I wake up. It’s amazing what a simple thought of “you got this” can make your mind kick into positive motivation overdrive. There is so much I have learned that I can control in my day. So today will be filled with goodness. Today will be full of happiness. I love planning for an amazing week ahead, but sometimes we need to remember to take it one day at a time, one step at a time and one check mark at a time. We just need to keep doing our best.♥️

Fried mushrooms are one of my most favorite things but nearly impossible to find gluten free! I used a combination of gluten free bread crumbs and crushed Olive oil and Sea Salt crackers seasoned with garlic, salt, pepper, paprika, and Parmesan for the breading. I sprayed them with a little bit of Avocado oil and popped them into my air fryer for 10 minutes. Gluten free tomato, garlic and vegetable linguini 🍝 . . A really quick and easy dish to pull together, perfect when short on time. We made use of veggies we had in the fridge including courgettes, mushrooms and red onions. The tomato base was made using leftover passata from another dinner 🍅🧅🍄🥒 . . We don't have too many food rules in our house but something we are very strict about is ensuring we have no food waste. Reusing leftovers is a great way of ensuring this and this dish is a perfect example of how easy it can be. Who else is working hard to ensure they have no food waste at home? INGREDIENTS: 1 cup GF oat flour 1/2 cup GF rolled oats 1/4 cup protein powder 1/4 cup almond butter 2 tablespoons maple syrup 1/4 tsp vanilla extract white chocolate dried cranberries . . DIRECTIONS: Add first 6 ingredients to a food processor. Process until batter forms. I wanted more whole oats so I pulsed mine until it reached the desired consistency I wanted. Add white chocolate & cranberries and pulse to combine. Scoop batter onto a lined baking sheet using a cookie scoop and chill 10 minutes.
