Chinese eggplant brown rice bowl Such a warm, delicious, and sweet bowl! Chinese eggplants are longer and have less seeds than Italian eggplants which bitterness therefore making Chinese eggplants a whole lot sweeter! In this bowl: @lundbergfarms brown rice (toasted in oven @ 400 after cooking), eggplant, brussels sprouts, mixed mushrooms (shiitake and cremini), shredded napa cabbage, arugula, persian cucumber, avocado, + chives Eggplant, brussels, + mushrooms were mixed with avo oil + sea salt and roasted @ 450 until crispy/caramelized. Está sencilla delicia te quitará el antojo y no romperá con tu régimen. Agradecemos a @theboxstore por facilitarnos parte de la materia prima. Ingredientes 1 huevo 2 cds de harina de coco o almendra 1 cda de aceite de coco 2 cds de miel de maple o azúcar de monk 1 cda de masala chai (cómpralo en THE BOX STORE) 1/2 cdita de vainilla Betún 3 cds de Manteca de coco 100 ml de miel de maple Procedimiento Engrasa una taza con aceite de coco. Reserva. Mezcla todos los ingredientes de pastel con ayuda de un procesador de alimentos. Debe quedar tersa. Vierte la mezcla en la taza. Programa en tu micro 2 min al 100% de la potencia. Desmolda. Permite enfríe antes de poner el frosting. Para el Frosting. Mezcla los dos ingredientes con ayuda de una cuchara o un batidor globo. Reserva en lugar frescos. Decora tu mug cake y disfruta. Puedes decorarlo con pétalos de rosa, piñones, avellanas o lo que quieras. Disfruta! El masala chai es un polvo para prepara bebidas, sin embargo quedó un sabor Perfecto al agregarlo a esta mezcla. Fish + roasted veggies + sauce will always be one of my favorite meals! So filling, flavorful & healthy. This sauce is a parsley + microgreens herby garlicky oil (so easy and SO good!). We've also got mahi mahi (pan-cooked) + roasted red potatoes and red onions! ••• Herby garlicky oil: ✔️Fresh herbs (I used parsley, and microgreens bc I had extra) ✔️3 cloves garlic ✔️Juice from 1/2 lemon ✔️1/3 cup olive oil (ish? I actually have no idea. I’m sorry. 🤭) ✔️Good amount of salt + pepper Optional: teeny tiny squeeze of honey if your herbs taste bitter BLEND! pour on anything and everything. Drink the leftovers from the blender if so inclined. 🙃

(D)ark leafy greens Gomae is a traditional Japanese dish made with chilled spinach and a sesame sauce. It's one of my absolute favorites. I was craving it and decided to make it. I'm not Japanese nor traditional, so I used kale. Oh and black sesame seeds instead of white. And I added some hemp seeds for a little more nutritional kick. I know, I'm wild! Kale yeah! Okay, I'll stop and get on with the recipe. This is an easy and quick dish that is nutrient dense with fiber, protein, vitamins and minerals and some good fats. . . 🍴1 bunch organic lacinato kale, cut into pieces, stems attached 🍴3 tbsp sesame seeds 🍴1 tbsp toasted sesame oil, plus more for drizzle 🍴1 tbsp coconut aminos (you can use tamari or soy sauce) 🍴1 tsp organic maple syrup 🍴1 tsp rice wine vinegar 🍴1 tbsp hemp seeds —- 🍴Bring a large pot of salted water to a boil 🍴In a large bowl, add ice and water to create an ice bath 🍴Line a large baking sheet with paper towels 🍴Blanch and shock the kale (bring a large pot of salted water to a boil, drop kale pieces into the water for about a minute or so until it becomes bright green. 🍴Then place it into the large bowl of ice water to stop the cooking.) 🍴Remove kale from ice bath, squeeze out excess water and place on paper towel lined cookie sheet. 🍴Toast the sesame seeds in a small pan over low-medium heat. Just a minute or two, you can smell when they are finished. 🍴Add to a mortar and pestle or a coffee grinder and grind. The 2-min açaí smoothie bowl from the (new!) Loveleaf Co. Summer Cleanse. ✌🏼(If you can’t find açaí, use frozen blueberries instead - both are high in antioxidants. 💥) . To make it: add 1/2 frozen banana, 1 frozen açaí packet (I use the ones from @traderjoes), 1/3 cup coconut milk, 1 serving collagen peptides (optional), 1 teaspoon vanilla extract, and 1 pitted Medjool date, to a blender and blend until creamy. Here’s the dEATs 👇🏻👇🏻 . 1 egg 🥚 1/4 cup liquid coconut oil 🥥 1/2 cup peanut butter (you can sub any nut butter) 🥜 3/4 cup coconut sugar (I used normal + it works the same) 1 teaspoon vanilla extract 🥄 1 cup almond flour 1 teaspoon baking powder 1/2 cup dark chocolate chips 🍫 . Wanted to mention that using coconut oil rather than butter isn’t necessarily a “healthier option”.. a lot of people assume it is, but it’s really just a sub + definitely an alternative for those who eat plant-based! It’s high in saturated fat + while it it raises HDL (good cholesterol) it also raises (LDL) bad cholesterol. So just like butter, use/eat it in moderation!! . Homus com Açafrão fica uma delicia! Vamos fazer? . ▶️INGREDIENTES: . -200 gramas de Grão-De-Bico seco; -1 colher de chá de Bicarbonato de Sódio; -4 colheres de sopa de Azeite; -1 colher chá de Sal; -Suco de 1 Limão (pode ser siciliano); -2 dentes de Alho; -1 colher de chá de Açafrão-Da-Terra ou Cúrcuma. . ▶️PREPARO: ➖Lave o Grão-De-Bico e coloque em um recipiente com água uns dois dedos acima dos grãos e deixe de molho na geladeira por pelo menos 8 horas (para os grãos ficarem bem hidratados). ➖Em seguida escorra os grãos (📸2) e coloque em uma panela de pressão com Bicarbonato de Sódio, uma pitada de Sal, um fiozinho de Azeite (para não formar muita espuma) e cobre com água uns dois dedos acima dos Grãos. Deixe cozinhando e quando a panela pegar pressão, deixe cozinhar por mais uns 20 minutos. ✔️Se você não tiver panela de pressão, cozinhe até ficar bem macio, quase desmanchando. ➖Novamente escorra os grãos e guarde a água do cozimento. Try this: Bolognese topped with burrata. We didn’t have all the ingredients, so I did what I could to make a homemade sauce. Those are sliced snap peas in place of carrots which turned out to be a pretty good substitute. The best part about this dinner? First time trying these #glutenfree pitta breads from @marksandspencer and I was pretty impressed. Usual comments of being expensive and looking a bit anaemic but...they held together really well (no structural integrity problems like you get with lots of #gf breads), were very tasty, toasted up nicely and puffed up properly so they were easy to stuff. 8/10, will buy again. Filled them with some Thai spiced @quorn_uk mince I made at the weekend. They were supposed to be meatballs using the recipe on their website but let's not discuss that disaster. I’ve had so many different liquids today I’ve lost count...thank you summer cold 🤒. ⠀ ⠀ But one I did want to share with you all is this Iced Watermelon Mint Tea (tea courtesy of @traderjoes). You can actually recreate the with an fruit tea! ⠀ ⠀ I use a mason jar to house the tea concentrate. I boil water, add 2 tea bags and let the tea cool overnight in the fridge. The next day I add ice and some water, and enjoy! ⠀ ⠀ Fruity iced teas (unsweetened of course) are so superbly easy to make and so refreshing! ⠀ ⠀ If you are ever bored with just water, I say give this idea a shot! ⠀ ⠀ Now back to the couch for me 🤣. ⠀ ⠀

Buonasera ! Questa sera vi propongo una cosa semplice e veloce ! Adatta per queste serate secondo me , gli sformati di zucchine 🤗 Ingredienti : 200 g di Formaggio tipo provolone 3 zucchine Mezza cipolla Olio extravergine d’oliva 3 uova un rametto di menta Procedimento: prima di tutto lavare le zucchine. Una volta lavate, tagliatele a rondelle e fatele stufare in padella con poco Olio d’oliva extravergine insieme alla cipolla precedentemente tritata. A cottura raggiunta, passate il tutto nel mixer unendo 3 uova, Formaggio a cubetti e un rametto di menta fresca. Versate il composto così ottenuto in stampini individuali precedentemente imburrati (o spennellati con un paio di cucchiai d'olio) e cosparsi di pangrattato senza glutine (se preferite potete mettere il tutto in un unico stampo o teglia unica). Copriteli con qualche fettina di Provola Concludete il vostro sformato di zucchine cuocendolo in forno (a 180°) per 40 minuti circa. Ed ecco pronti i nostri sformato ! So the kids are off at camp – Lexi left yesterday for overnight camp and will be back in 3 weeks, and Jax started day camp where he is gone from 8:15 to 4:15 each day. So suddenly I have a lot more time on my hands, not picking the kids up at school or driving them around to activities. I am getting to the gym more (yay!) and today I made dinner and dessert. I made one of Jax’s favorites, adapted from the tater tot casserole recipe from @thrivingglutenfree but we call our version tater tot pie, since what 6-year-old knows what a casserole is? 😂Super easy – any type of meat on the bottom, add egg and milk mixture on top, optional cheese (we used shredded @borden_cheese mozzarella which is labeled gluten free), top it off with tater tots (@oreida) and bake it (@emilehenryusa pie pan) for a delicious meal. VEGGIE STIR FRY SCRAMBLE Y’all this dinner was a result of our planned one not working out, but it was so good!! I originally tried to make some homemade corn tortillas, but it looked/tasted like glue so we went to plan B. (Side note: cooking is like that sometimes! Especially when you’re trying something new, don’t be discouraged if it doesn’t work out!) • What you’ll need: (feeds 2) 1.5 cups frozen mixed veggies 2 slices bacon 4 eggs 1 cup uncooked rice (you can use cauliflower rice if you’re eating lower carb or want some more veggies!) • I started the frozen veggies in a pan with some olive oil + then added the chopped bacon in. When both of those were about done I added in the 4 eggs and scrambled it all together. We were cooking the rice separately and then mixed it all together with some olive oil, onion powder, and salt + pepper. We then went and ate it under our little gazebo in the backyard and it was SO good. (swipe to see our view!) Intrigued by this weekend's visits, I decided to create a Strawberry Lavender Pie! For the crust I followed @the_bojon_gourmet ’s recipe from her Alternative Baker cookbook, modifying to use @kingarthurflour ’s gluten-free flour and apple cider vinegar.
