snickerdoodle icing mini cakes✨ as you can tell, i had a fun time coming up with that name😜 lots of things on the to do list today so i thought having a single-serving of “cake” was very appropriate. gotta get in that brain fuel! serves 2 1 banana 1/4 cup applesauce 1 tbsp apple cider vinegar 2 tbsp nondairy milk 1/4 cup maple syrup 1 1/2 cup oat flour 1/4 tsp salt 1 1/2 tsp baking powder 1 tsp baking soda 1 tsp cinnamon pinch of nutmeg icing whisk 1 tbsp coconut butter with a few splashes of nondairy milk. heat for only 10 seconds, mix, then heat again until it forms into a smooth consistency. preheat oven to 350f. in a medium bowl, mash the banana then add the applesauce, acv, milk, and maple syrup. whisk to combine or until clumps are gone. add the remaining ingredients into the bowl and stir until smooth. divide the batter into two greased ramekins then bake for 22 minutes or until toothpick comes out clean. once cooled, smear the icing on top of each cake. enjoy!

Parsnips are, for me, the unsung hero of winter cooking, and I may or may not be exaggerating when I say that roast parsnips are one of the loves of my life... 🥰 Another family fave is spicy Parsnip Soup. Hard to nail down a recipe because it’s definitely a “pinch of this, pinch of that” situation, but I actually measured this one out for you if you fancy it 😎❄️ but you could chuck in carrots, lentils, leeks, or play around with the spices and it would still be magic ✨ ............................................................ - 1 large onion - 3 cloves - 1.5 tsp ground cumin - 1 tsp ground ginger - 1 tsp ground coriander - 1/2 tsp turmeric - pinch of chili powder (optional) - 6 large parsnips peeled and chopped - 4-5 cups of vegetable stock/water/a mix - 2 tbsp tomato paste - salt and LOADS of black pepper Sauté onion in a bitof olive oil until soft, mince in the garlic and cook for another minute. Add all the spices and give everything a good mix, cook for another minute. Add parsnips, stock and tomato purée, and bring to a simmer. When the parsnips are tender, remove from the heat and blend until smooth. Check seasonings and serve! I like to top with a swirl of yoghurt or coconut cream, maybe nooch, bagel seasoning, a swirl of olive oil, croutons, crispy chickpeas, or in yesterday’s case- edamame! soup parsnip wintercooking comfortfood

Healthy Gluten Free Banana Bread! 🍌🍞 Recipe is wrote for one loaf of banana bread but I decided to turn them into muffins and just baked for less time! This recipe is amazing topped with Simple Mills Organic Vanilla Frosting! Ingredients ✨ ⅓ cup melted coconut oil ½ cup honey 2 eggs 1 cup mashed ripe bananas ¼ cup nut milk of choice 1 teaspoon baking soda 1 teaspoon vanilla extract ½ teaspoon salt ½ teaspoon ground cinnamon 1 ¾ cups Bob Mills 1:1 Gluten Free Flour Directions ✨ 1️⃣ Preheat oven to 325 degrees Fahrenheit (165 degrees Celsius) and grease a 9×5-inch loaf pan. 2️⃣ In a large bowl, beat the oil and honey together with a whisk. Add the eggs and beat well, then whisk in the mashed bananas and milk. 3️⃣ Add the baking soda, vanilla, salt and cinnamon, and whisk to blend. Lastly, switch to a big spoon and stir in the flour, just until combined. 4️⃣ Pour the batter into your greased loaf pan and sprinkle lightly with cinnamon. 5️⃣ Bake for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean. Let the bread cool in the loaf pan for 10 minutes, then transfer it to a wire rack to cool for 20 minutes before slicing 🤤 glutenfreerecipes

My refrigerator had fresh mushrooms but I decided to use them for lunch tomorrow instead. I knew I wanted to use jowar and so I decided to make SINDHI DODA minus all the extra ghee,which is essentially similar to a maharashtrian BHAKRI with masala. . . Ingredients 1 cup jowar flour 1 onion finely chopped 2 green chillies finely chopped 2 to 3 spring onions 5 to 6 pods of fresh garlic Half cup yoghurt Salt as per taste Black pepper as per taste Ghee for cooking . . Bind the flour by adding all ingredients.try not to add water. Bind with help of yoghurt. Add 1 tsp of lukewarm ghee and immediately roll out medium sized sodas. Do not keep the dough unattended for long. Cook on medium flame,taking care not to break them while cooking. Serve with accompaniments of choice. . . For a quick dal,pressure cook the dal for 2 whistles after soaking for 20 minutes with salt and water. Add 1 tsp turmeric and pinch of hing. Add tempering of choice. My family loves chicken Caesar salad, but I don’t necessarily love starting up the grill or pan frying the chicken. Even when I use splatter guard, somehow the stove top gets all dirty. Thankfully I haven’t done this in a long time because I have been making my chicken in the oven! It’s the easiest thing ever with no mess! I simply smother my chicken breast with avocado oil and season it with salt, black pepper and garlic powder, then broil it for 7 minutes on each side. I take it out of the oven, cover it with aluminum foil and let it rest while chopping up the Romaine lettuce for the salad. Recipe Crust -2 1/2 cups whole wheat flour -2 eggs -1/4 cup muscovado or coconut sugar -1/4 cup sunflower oil Cheesecake -500g light ricotta -400 low-fat cream cheese -6 whole eggs -1/4 cup cornstarch -1 cup muscovado or coconut sugar -zest of 3 lemons -juice of 1 lemon Preheat oven to 180°C For the crust, mix the ingredients until they are integrated, and put them in a 20x30cm lined mold. Press well against the base and the edges and set aside. For the cheesecake, process the ricotta with the lemon juice until it is creamy, add the rest of the ingredients and beat or process until you have a homogeneous mixture. Put on the crust, cover with aluminum foil, and bake in a water bath (the cake mold inside a roasting pan with 2 fingers of water) for 50-60 minutes or until firm. Let cool and enjoy!

Thanksgiving stuffing used to be one of my favorite side dishes but since gluten is no friend to me ( or my two daughters) we have tried a variety of mixes over the years but never been happy with any of them. Last night while tinkering around in the kitchen I think I finally got it! Husband even loved it and he is gluten full 😊 Gluten free Stuffing *Sauté 3 Italian Chicken Sausages ( casing removed) till cooked through *Add three tablespoons butter, one chopped shallot, 2 Tablespoons chopped Rosemary and 2 cloves minced garlic. Sauté till tender. *Add 1/2 cup white wine and cook down a bit. Add salt and pepper. *Toss in one pack of gluten free bread cubes ( I got mine at Whole Foods). Mix thoroughly. *Pour into 8x8 pan and pour 1 1/2 cups chicken broth over top. Bake at 350 degrees for 30 minutes. Add more broth if top starts to dry out.

Mix until well combined (ir should stick together well- add more coco oil if it doesn’t). Press into desired tin (I used 15cm square) and set aside.⁣ ⁣ Caramel filling⁣ ⁣ 1 3/4 cup Medjool/soft dates, pitted (approx 20)⁣ 1/2 cup tahini⁣ 1/2 cup coconut caramel sauce (or substitute for 1/4 cup extra dates + 1/4 cup coconut milk)⁣ 1/2 cup natural, smooth peanut butter⁣ 4 heaped tsp maca root powder⁣ ⁣ Add all ingredients to a high-speed blender and blitz until uniform. You’ll need to use your tamper to get everything going. Pour onto macadamia base, use a hot/wet spoon to smooth the top, and set aside.⁣ ⁣ Topping⁣ ⁣ 100g vegan chocolate⁣ 2 Tbsp coconut milk⁣ ⁣ Melt chocolate and coconut milk in a heatproof bowl over simmering water. Мммммм.... Но и холодный с чаечком с мятой он ❤️. ⠀ Ингредиенты: 2 стакана муки 0.5 ч.л соли 150 гр охлаждённого масла 5-6 ст.л ледяной воды 1 кг. яблок 2/3 стакана сахара 1-2 ст.л крахмала 1 ч.л. молотой корицы 0.5 ч.л. молотого мускатного ореха (я не добавляла) 1 ч.л свежего лимонного сока 25 гр сливочного масла(для начинки) 2 ст.л сахара для присыпки. ⠀ Просеять муку с солью в миску, добавить охлажденное масло. ⠀ Добавить муку, перетереть в крупную крошку. Затем по одной ложке влить ледяную воду, и начинать вымешивать тесто руками. ⠀ После пятой ложки воды, попробуйте сформировать тесто в шар. Если не будет собираться, добавьте ещё одну ложку воды. Тесто должно получиться плотным, но не липнуть к рукам. Разделить тесто на две части, сформировать шарики, убрать в холодильник на 30 мин. ⠀ Яблоки почистить и порезать на мелкие кусочки. Смешать яблоки с сахаром, крахмалом, мускатным орехом, корицей, лимонным соком и хорошо перемешать. ⠀ Достать тесто из холодильника. Раскатать половину теста для нижней части, чтобы тесто закрывало бока формы, перенести на смазанную форму.. Выложить начинку, сверху кусочками сливочное масло. Затем раскатать второй пласт и покрыть начинку. Края хорошо слепить, а лишнее отрезать. Наколоть ли надрезать верхний пласт. ⠀ Поверхность пирога смазать водой и присыпать сахаром для образования хрустящей корочки.Затем поставить в разогретую до 220 градусов духовку. Nudelsalat 🥣 Einer meiner Lieblingsessen vor meiner low Fodmapzeit waren Pestonudeln mit Tomate und Mozzarella. Das Gericht kann man super in low Fodmap umwandeln. Reisnudeln, Pesto (ohne knoblauch, cashewkerne und Milchprodukte), Tomaten und laktosefreiem Mozzarella. Verfeinert habe ich es noch mit einem Löffel fodmaparmen Senf, Olivenöl, Balsamico, Salz, Pfeffer und Parmesan. Super einfach und lecker 😊 // Noodle salad 🥣 One of my favorite foods before my low fodmap time was pesto noodles with tomato and mozzarella. The recipe can be super converted into low fodmap. Rice noodles, pesto (without garlic, cashew and dairy products), tomatoes and lactose-free mozzarella. I refined it with a spoon of low-fodmop mustard, olive oil, balsamic, salt, pepper and parmesan. Super easy and tasty 😊

We have been on a quite a journey trying to figure out why corbin has been sick (nausea and vomiting) for a year and a half, on top of weight gain (now I’m thinking more bloating) the top picture is him in September and the bottom was last night. CHOC RASPBERRY BLONDIES First there was brownies, now there is blondies. They have a very similar texture to the brownies except they have more of a vanilla flavour. Still 100% DELICIOUS. Give them a try! Recipe below ____ 1 cup gluten-free flour. 1 teaspoon baking powder. 1 teaspoon vanilla extract.  1 serving protein powder. ¾ cup frozen raspberries. ⅓ cup almond butter. ⅓ cup coconut oil. ⅓ cup honey/maple syrup. ¾ cup apple sauce. ½ cup choc chips. 1 egg ____  1. Combine all ingredients in a bowl and mix well.
 2. Cook in a baking tray for around 15-20 mins, make sure you consistently check - if you overcook they will go dry.

Red lentil pasta with veg and gardengourmetuk pieces (sadly discontinued, I found these at the back of my freezer), had this INCREDIBLY early hence the good lighting☺️ ________________ Details: • 75g (dry) red lentil fusilli • gardengourmetuk ‘chicken’ pieces (sadly no longer available) • Pan fried turmeric tomato and broccoli • Cucumber • marigoldengevita nutritional yeast Red lentil pasta is such staple for me, filled with lotsa protein!! Also gluten free obviously 💁🏻‍♀️ Im not vegan (maybe like 80% there) + not the biggest meat eater at all but these veggie alternatives were actually decent for meatfreemonday, can’t recommend though as you won’t find them anywhere 🌝😄
