Yesterday I went to Maepole for the first time after everyone told me I NEEDED to go, and let me tell you, it didn’t dissapoint! I got a mix of greens and quinoa and then topped it with the bean salad, veggie hash, and broccoli. It was super tasty and different from what I get at the dining hall which is always appreciated. I’m not sure where I’ll go with my family tonight, but I bet it’ll be somewhere tasty once again!

it’s nearly fall so I think it’s time to break out the pumpkin flavors 🍁 this bowl was very much inspired by choosing_balance ‘s recent pumpkin spiced oatmeal bowl and was the perfect meal to start my Saturday 🥰 . . ingredients: whatsinmybowl 138 ml almond milk, 45 g oatmeal, 2 tsp pumpkin pie spice, 1/2 tsp all spice, 3 tsp cinnamon, 3tbsp pumpkin purée, 26 g pescience vegan cinnamon . recipe : -mix the oatmeal and milk in a bowl and let it sit for about 10 min before adding in the rest of the ingredients -add all ingredients mixed together into small pot and stir until cooked completely (about 5 min) - slice bananas and top with cinnamon, then add to a pan lightly oiled in coconut oil and cook on each side until bananas are caramelized (about 1 min total) - top bowl with caramelized bananas, chia seeds, sunflower seed butter, and maple syrup

On a little (2 day) citrus streak🍊🍋 with the orange tea yesterday and these gluten-free lemon chocolate chip muffins today 😍 This is my favorite muffin recipe by far and I literally can’t get enough of it! I was a little iffy about the lemon/chocolate combination at first... but it honestly really works. I went easy on the chocolate chips (a crime, I know) in order to let the lemon flavor come through a little more, but that’s up to you! Happy Saturday!💛 . These are the best falafel I think I’ve ever had. I love my savory food EXTRA herby, and these are just that😍 . They also freezer friendly, so you can simply warm them up in the microwave or the stove for a perfect weeknight meal😋 . Serve in a lettuce wrap, pita wraps, salad or eat them by themselves! . Extra Herby Falafel •1/3 cup of fresh cilantro •1/3 cup of fresh parsley •1 15oz can of chickpeas, rinsed •4 large fresh garlic cloves •1/2 cup of white onion, chopped •1 tsp of za’atar •1 tsp of lemon juice •4 tbsp of oat flour •salt and pepper, to taste . Put all ingredients, except the oat flour, into a food processor and pulse and crumbled. Do not over process into a paste. Once the mixture is crumbly, add 1 tbsp of oat flour into the food processor at a time and pulse to combine. Once all 4 tbsp of oat flour have been added, scoop about 1 tbsp of the falafel mix out and shape it into a ball and flatten into a disc. Continue this step until all of the mix has been used. Heat a large pan on medium heat, spray with an oil spray, then lay done the falafel. Cook on each side until gold brown. . So some Food for thought and I actually only just tried this for the first officially time myself, but I found you get the very most fruit if you : Cut the fruit in half and then pull the two halves if fruit apart. The pit will reside in one of the halves of the peach and from there you'll need to remove it but then you're able to fonsone the entire fruit o e you've rinsed it all off if you have not already done so and with peaches being my absolute favorite fruit this is all a very good preparation ritual to keep and have with them from now on. Then ask e food for though ontop of that eith just about all fruits and vegetables I get anyways from the store I almost automatically put them into the fridge for safe keeping and storage so they last longing. Not everyone in my family does this, especially with All fruits and vegetables. But I'm a lazy person and the less work the better. WORK SMARTER NOT HARDER. And that way the produce I buy lasts until I'm ready for if not longer and that helps with my time management and my budgeting which is absolutel perfection. Today’s post is a quickie. I just wanted to pop in and say how much I love my school and appreciate every second of being here. This truly is the school for me and there’s no place like Athens! I’m super excited because it’s my sorority’s parents weekend this weekend so I get to spend time with my family and show them around campus/ the city.
