Japanese Yams 🍠 are my favorite starchy vegetable hands down! I also have on rotation sweet potatoes and purple sweet potatoes. Carbs like these resistant starches help (1) calm the nervous system which combats stress, (2) provide essential vitamins and minerals, (3) they are satiating and will keep you full (4) taste delicious roasted, (5) are inexpensive. I have a cup everyday for lunch with as always redmondrealsalt! Never skip on REAL salt it’s an essential electrolyte!!! I roast potatoes twice a week for around an hour at 400 degrees in the oven. Try swapping out your bread, rice, pasta and regular potatoes for these nutritional powerhouse foods. Carbbsss 😋 ~~~ There’s this stigma that carbs are “bad” for your fitness journey. In all honestly, I love carbs but just learned to eat them in a way where I don’t feel gross or extremely bloated. ESPECIALLY potatoes. I love having them for breakfast but when combined with the typical eggs and bacon, I feel so bloated and gross (or could be the way they’re cooked) •• What I usually do now is season them with granulated garlic powder and a bit of salt and pepper. I cook the potatoes with a bit of coconut oil or extra virgin olive oil in a skillet. When they’re close to being cooked, I throw in sweet pepper, onion, and cilantro. Depending on how much of the seasonings were used for the potatoes, I may add a dash more of the garlic powder. Lastly, I put a scoop of homemade guacamole or slices or avocado on top and enjoy my carbs with a warm cup of coffee or matcha latte ✌🏽

Christmas is right around the corner and we're prepping with these 𝐂𝐡𝐫𝐢𝐬𝐭𝐦𝐚𝐬 𝐌𝐚𝐩𝐥𝐞 𝐂𝐡𝐢𝐥𝐞𝐚𝐧 𝐁𝐥𝐮𝐞𝐛𝐞𝐫𝐫𝐲, 𝐏𝐞𝐜𝐚𝐧 𝐁𝐚𝐥𝐥𝐬! 🎄 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀 7 oz. pecans 1.5 oz. sesame seeds 1 tbsp. maple syrup pinch salt 2.5 oz. Chilean blueberries, roughly chopped ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 𝗗𝗶𝗿𝗲𝗰𝘁𝗶𝗼𝗻𝘀⠀⠀⠀⠀⠀⠀⠀ Preheat the oven to 350F. Place the pecans on a baking tray and the sesame seeds in one corner. Roast for 5 minutes until you can just smell them. Cool slightly. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Reserve 1 tbsp. of the sesame seeds placing the rest in a food processor or blender and blitz until they form a soft spread. You will need to stop and scrape down the sides from time to time. Add the maple syrup and salt, blitz again and then transfer to a bowl and stir in the Chilean blueberries. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Form the mixture into walnut sized balls. Spread the reserved sesame seeds on a plate and roll the balls to cover with the seeds. Chill until firm for at least 20 minutes. 🎉 I just finished working with an amazing client this month. “HEALTHY FOOD is too EXPENSIVE.” Yes, maybe if you buy at whole foods for everything, salmon & steak every night, always fresh veggies from high end markets, and top top top of the line. YEP it can be.👌🏻 . HOWEVER THATS NOT my style, maybe when I’m a millionaire I will.🤣 I just a naturally a budget gal with a bargain shopper heart!✨👀 — 📸SLOW COOKER CHILI: 2 large cans of diced tomatoes 1 large can pinto beans 1 large can kidney beans 1 can black beans 1 can white beans 1lb ground beef/turkey 2 seasoning chili packets . TOSS all in slow cooker on low for 8+ hours. PRESTO, DONE! . HERES THE DEAL: All the beans were $0.89 - $1.50, the seasoning was 2 for $1.50, and the MOST expensive thing was the meat @ $5!✊🏻 . AKA cheap delicious healthy meal under $15 that would last 1-2 weeks eating daily!✨

Super easy post workout snack - Open faced sandwich with roasted tomato 🍅 roasted turkey and melted cheese. - When I roast veggies, I like to toast them in big batches, that way I can just warm them up I’ve the next few days. With this, I just threw everything on a piece of toast and put it under the broiler...and bam 💥 snack time. - Post workout 🏋️‍♀️ I’m usually quite hungry. Most of the time I plan my workouts so that I have a meal afterwards, usually breakfast or lunch. But if the timing doesn’t workout, I’m definitely going to have a snack. And I like a snack that checks all the boxes, protein, carbs and fats. 😋

Super Simple Healthy Banana Muffin recipe! 🍌⠀ ___________________________________ ⠀ I failed at low carb/keto.⠀ I failed at food point counting and journaling.⠀ I failed at driving to the gym weekly.⠀ ⠀ But girl, you give me a nutritionist or trainer that says “here’s a recipe guide, just eat cleaner foods AND CARBS and still lose weight” and I am here...for...it. 👏🏻👏🏻⠀ ⠀ I think we’ve overcomplicated things in the past few decades and we forgotten the basics. ⠀ •Move your body daily⠀ •Ditch the processed stuff AND the diet mindset⠀ •Surround yourself with people who believe in you, your goals, and never snicker at your choices.⠀ ⠀ BREAKFAST BANANA MUFFINS:⠀ (Yes, you can add mini chocolate chips or walnuts because balance)⠀ ⠀ • 2c whole wheat flour⠀ • 2tsp baking powder⠀ • 1/2tsp baking soda⠀ • 1/2tsp salt⠀ • 1 egg⠀ • 1/4c honey⠀ • 3/4c almond milk⠀ • 1/4c coconut oil melted (I’m sure vegetable is fine)⠀ • 1.5tsp vanilla extract⠀ • 3 ripe mashed bananas⠀ ⠀ Mix all the dry. Mix all the wet. Fold in bananas. Our kitchen doesn’t have a pantry, not even easily accessible shelves. So I claimed the linen closet in our hallway as pantry land. One of the consequences when we switched to eating plantbased, was that we learned about the food industry, where food comes from, how it’s processed. Even ‘Transition Foods’ (processed/packaged foods marketed to vegans) while still better as far as cruelty to animals and our fellowman, they are still processed with ingredients you don’t want to be eating daily as they can be loaded with salt, sugar, and oils, and sometimes ingredients you can’t pronounce. So started our journey in trying out different foods & ingredients that we can cook at home & buy in bulk, particularly staples & dry goods. One example is Farro. We had never heard of it before switching to plantbased, and truth be told, probably never would have if we were still eating the SAD diet (Standard American Diet), as like most people we were in a food routine (rut). But going plantbased makes you think outside the box, it encourages one to try new things, create tasty alternatives, experiment with flavors. We’ve also come to really appreciate freshness and buying local, which is a good way to get foods packed with nutrients. In our search for new grains to try, we stumbled upon bluebirdgrainfarms , not super local to us, but the next State over, so that’s pretty close 😉. They offer 100% certified organic ancient grains, and fresh milled flours (they mill it when ordered!). We are currently trying out their Emmer and Einkorn farro. They smell so good, fresh & earthy, they cook easily, and the taste & texture is wonderful. Nope, they didn’t sponsor this post, we’re just sharing this because we think it’s really that good!🙂

Festive Chocolate Pomegranate Cups 🎄🎄🎄 It's officially time to turn up the Christmas music, and make some holiday treats and memories with the people we love! Pomegranates hold many special childhood Christmas memories for me. I remember my mother bringing home a few pomegranates only once each year...right around Christmastime, and ohhhh boy did my siblings and I value those bright ruby red fruits! Sweet and tangy; their glistening red jewels would burst open in our mouths and the juice inside was better than any candy! We would clean every last drop out of the pomegranates until our mouths were sore from eating too many! In North America, pomegranates are available throughout the early winter months. Despite some rumors, pomegranate seeds CAN be eaten - and they are good for you, too! So eat the entire aril and seed...no spitting allowed! makes 12 servings Ingredients: 1 cup dark chocolate, melted with 1 Tablespoon unrefined coconut oil 1 large pomegranate 2 fresh rosemary sprigs, to decorate Instructions: Line a mini muffin-tin with mini cupcake liners. To EASILY remove pomegranate arils: Fill 1/3 of a large bowl with cold water. Score 4 lines from top to bottom to quarter your pomegranate. Submerge the pomegranate quarters into the bowl of water and gently release the seeds with your hands. This is such an easy and less-messy way of seeding a pomegranate. The pith will float and the seeds will sink, so remove the pith and discard, then drain the seeds. Gently pat dry seeds with paper towels. Scoop about 2 teaspoonfuls of melted chocolate into each cup. Top the cups with a spoonful of pomegranate arils. Then, using a spoon, swirl melted chocolate all over the seeds, as shown. Allow to sit in your refrigerator for 15 minutes, until the chocolate sets. Pop them out of the tin, unwrap and arrange on a large platter. Decorate with rosemary sprigs for a festive touch. Traveling during the holidays can be a little hectic.
