You’ve got to make sure you’re getting enough in your diet to satisfy the cellular demands⠀⠀⠀⠀⠀⠀⠀⠀⠀ .⠀⠀⠀⠀⠀⠀⠀⠀⠀ Rounding out the rest, we have fat, vitamins, minerals and some carbs, which all play their part in maintaining healthy muscle tissue.⠀⠀⠀

This Porchetta recipe renders a delicious result especially If roasted at the temperatures and stages as indicated on the recipe.⁣ Ingredients:⁣ 3.5 lbs pork belly, 1.5 lbs pork loin, 150 g natural salt, 4 g rosemary, 20 g fennel flowers, 25 g fennel seeds, 20 g black pepper, 10g ground chilli pepper, 300 g spleen, 300g liver.⁣ Directions:⁣ For the pork: Get the single piece of loin attached to the belly with bones removed from your butcher. This is now quite common and fairly easy to find. Make sure the skin is part of the meat. Procure a rectangle of meat 40cm long. Lay the meat flat and rub thoroughly with salt. Use water to massage the salt into the meat. Add the fennel flowers, fennel seeds, chopped rosemary, chilli powder and black pepper. For a real Roman Porchetta, add spleen and liver to the meat and then roll together. Or skip this part if organs are not your thing. Leave the meat to rest raw for 6 hours. After the 6 hrs., turn it over and score the skin diagonally and across. Roll the meat tight and tie with twine with stitches spreading 4 to 5 cm apart. Place in a roasting tray and into the oven. It is to be cooked over a long time at low temperature which is to be increased gradually. Start at 90C for the first hour and gradually increase the temperature over 5 additional hours until arriving at 180C.
