My hair hasn't been washed in a week and I'm still catching up on laundry and dishes but MAN. This last weekend was great. Saturday we had my family, Josiah's family, and a total of three of our grandparents come into my tiny house for a CELEBRATION of Ivan! And boy did we celebrate. Lunch was completely on plan- trimtastic cupcakes, burger and hot dogs and all the fixings, broccoli salad (yeah my mother-in-love's recipe in THT, I'm bragging on that recipe because it is THE BEST), and a THM approved cheesecake (also my mother-in-love's recipe that I tweaked with my_montana_kitchen_thm sweetened condensed milk recipe and my own crust). All of the munchkins that were there didn't end up with sugar highs, I felt good about letting them have another cupcake if they so desired 😅. Plastic free food shopping does take a little more time and effort but it is definitely better for our health and the planet. I'm not 100% there yet but I'm trying my best. I get an organic fruit and veg box once a week. I have milk and juice delivered three times a week in glass bottles from my milk man. And then I use my local supermarket for everything else. Very pleased to find organic cheddar in wax there. I make bread in my bread maker and bake my own biscuits, cakes and scones. Day 1 of Detox - The FWTFL meal plan called for Mahi Mahi but it looked very suspect at the store. So we asked what was the freshest and the butcher said “Orange Roughy!” Never had it but sure, we will try it. I followed a blackened recipe for Mahi Mahi with a lot of spices. Since starting the FWTFL my spice collection has grown and grown. I am having so much fun learning new flavorful combos. It was super fast to cook, only 4 minutes per side. I steamed my broccoli in my steamer so it was an overall super easy meal to cook. I ended up doing an avocado mango salsa with it too. Holy crap was it delicious. Dan and I both were in the clean plate club. You could use this rub on grouper or to do blackened chicken, etc. for non-seafood eaters. So, so tasty. Today’s transformationtuesday is sparked by kurbohealth . Growing up I did have an addiction to food and didn’t make the healthiest choices. I was not very active at all and my favorite past times were sitting around and eating. Starting around 5th grade (10/11 years old) my weight did start to increase more and that’s when my doctor started to become concerned. She tried her best to tell me to lose weight and make healthier choices but hearing that only made me want to eat more. I also was introduced to my Fitness pal around age 11 (a food tracking app) and I used it for about 3 days and I dropped it. Why at 11 years old should I be tracking and writing down every single thing I’m eating? Later on, my mom began to take action by using a nutritionist, which did not work because I didn’t want change. I was 12 years old now and I wanted to be treated normal. Also around age 12/13 was the first time I was taken to a weight watchers meeting. I felt embarrassed to be 13 years old and to be in one of these meetings with a bunch of adults and it also made me sad. I was sad because I was being told to change who I was, but at 13 years old I wasn’t ready to make the change. I wish that more parents and doctors realized that a child will not make a change until a child is ready. Telling a child to lose weight isn’t the help they need. How about we teach children about making healthier choices and if adults are going to tell a child to make healthier choices, they should make those choices as well! As well with exercise! If you are telling a child to exercise, do it with them! Don’t put it all on them because they are most likely not ready to make a big change like this and helping them instead of telling them is more powerful. My point is, if someone is not ready to make this change, don’t force them. You can encourage them to make a change and do it along with them, but it won’t happen until they are ready. And that’s my transformationtuesday post for this week. 💪🏻

CHICKEN PESTO PASTA - 1-2 tbsp pesto - 1 box penne - 1 large chicken breast - 1/2 cup baby heirlooms, halved - 1/2 cup chopped baby spinach - Salt and pepper to taste . Steps: 1. Boil penne in medium sized pot of salted water for 10-12 minutes. While pasta is boiling, slice chicken breast into 3 separate pieces and season, once seasoned place chicken in pan with olive oil and cook on each side for 4 minutes. 2. Halve your tomatoes and cook in a small pan in 1 tsp olive oil and cook until they begin to blister. 3. Once chicken is done, place on cutting board and slice against the grain into even cuts. 4. When pasta is done boiling, drain pasta but reserve 1 cup of the pasta water. You’ll need this later. 5. Add pasta to medium skillet and add 1-2 tbsp pesto. Use your pasta water to thin this out until all noodles are coated and it forms a nice saucy consistency.
