happy first day of school to me🥳 i ate a quick and less than cute breakfast at 6:30 this morning (and we all know what that was, if you’re new here it was oats😉) so i’m sharing these blueberry pancakes i made for my sister yesterday! i woke up early and was looking for ways to get my mind off of school starting so i whipped these up and served them to her in bed. name a better big sis, i’ll wait🙋🏻‍♀️ breakfast-in-bed blueberry pancakes: - 1 1/4 cup flour (i used all purpose) - 3/4 cup coconut milk - 1 tsp maple syrup - 1 tsp chia seeds - 1 tbsp melted coconut oil - about 1/2 cup blueberries whisk together in large bowl. heat 1 tsp coconut oil on a skillet and scoop out desired size pancakes onto skillet. i used 1/4 cup scoop to make my pancakes evenly sized (made 5 using this method) cook for about 3 minutes each side or until golden brown. top with blueberries and a drizzle of maple syrup🍯

Jerk jackfruit curry 🍊 Fried off some onions and peppers in spices usually making up jerk seasoning (cinnamon, cloves, ginger, garlic, cayenne), added chopped tomatoes and alpro coconut milk. Then I added the drained young jackfruit, kidney beans and black beans, bringing to a boil before simmering for about 30 mins (threw in a few segments of orange in here as well). Served with whole meal basmati rice that had been soaked all day and spinach.
