I’m not the biggest pasta fan unless it’s loaded with all this goodness👌🏽🥑🍅This entire bowl took about 15 minutes from start to finish - perfect for when you’re hangry and don’t want to wait. Not to mention it’s INCREDIBLY filling! Also I don’t know if I’ll ever be able to go back to regular Hass avocados after eating these buttery creamy green skin ones lately😍 To make: sauté some garlic in a pan, and pour marinara sauce in (on medium-low heat). Add 1/4 cup red lentils (rinsed) to the sauce and heat until fully cooked ~ 15 minutes. Right before they have finished cooking, I added some frozen peas and kale for extra greens🌱 Cook your pasta accordingly (I used barillaus protein penne) drain, and throw it into a bowl, add marinara and lentil sauce, and some ripe avocado on top - It adds another level of creaminess!🥑

okay okay, if somehow i haven’t convinced you to try overnight oats yet (those of committed to team savory, listen up), i have another recipe for you to try. these SWEET POTATO SPINACH MUFFINS are an on-the-go dream. they’re dense, hearty, and i promise they’ll keep you full. consider these a regular egg muffin’s cooler older sibling 😶 ▪️▪️▪️▪️▪️▪️▪️▪️▪️▪️▪️ sweet potato spinach muffins (recipe adapted from luisegreenkitchenstories) dry ingredients: - 1 sweet potato, chopped into cubes then pulsed in a food processor until fine - 1 cup brown rice flour - 1 cup quinoa flour - pinch of baking powder - pinch of ginger - pinch of sea salt - pinch of garlic powder wet ingredients: - 3 eggs - 2 handfuls spinach- - 1 single serve container (5.3 oz) plain vegan yogurt - 1/2 cup olive oil

Good morning everyone, I pray that your weekend went well🌅 . . Omg, if these *vegan* pancakes weren’t the most delicious and fluffy?! I made them for breakfast this morning. I found this recipe online at avirtualvegan.com. . . Ingredients included: . 1/2 cup spelt flour (all purpose flour can also be used 1 slightly heaped teaspoon baking powder A pinch of salt ½ cup + 1 teaspoon non-dairy milk 1 teaspoon chia seeds 1/2 teaspoon apple cider vinegar 1 teaspoon vanilla extract . . All you do is combine all the wet ingredients together with the chia seeds in a small bowl, then combine all the dry ingredients together. After that, add the wet ingredients to the dry ingredients and stir just until it’s all combined (there’s supposed to be some lumps in the batter). . . I topped my pancakes with some organic fresh fruit and a side of pure maple syrup (yum!). . . Happy Monday!😊👍🏽

Just briefing y'all a bit about ny current situation before talking about this recipe. I'm on a cut since a week now. So I'm consuming foods relatively lower in calories and high in volume. This isn't exactly one of the best meals for cutting, but it's one of the tastier ones. It's a humble grilled chicken sandwich. ➖➖➖➖➖➖➖➖➖➖➖➖➖➖➖➖➖➖➖➖➖➖ Ingredients: 250g Chicken Breast, cut into small pieces. 1 Onion and Capsicum finely chopped. 1 tbsp ghee/olive oil. 4 slices of bread (I personally prefer Brown Bread cause it's tastier, even white will do). Salt to taste. Indian spices (Garam Masala, Chilli powder, Haldi) Recipe: Heat a non-stick pan on medium flame for 2-3 mins, add 1tbsp of ghee. Wait for a min or so, add onions and capsicum, and all the indian spices and the salt. Keep stirring and wait for another 2-3 minutes. Throw in the chicken breast and let it cook for a good 5-7 minutes. Once its cooked, take 2 slices of bread and throw the mixture on top of those bread slices and the other 2 slices on top of the mixture. Put the sandwiches to grill for 3-5 minutes. Last nights dinner, easy oven baked chicken Parmesan, low carb and healthy! With roasted herb broccoli. I love the crispiness of oven roasted broccoli. Photo by sid.down.south. Baked chicken Parmesan. 8 - 10 oz chicken breast, pounded to be even thickness, then cut into equal halves. 1/4 cup almond flour. 1 tbsp Italian seasoning. 1/2 tsp garlic salt. Olive oil, regular or spray. Marinara sauce of your choice. Sliced mozzarella. In a small bowl, combine almond flour, Italian seasoning, and garlic salt. Pour out onto a large plate and spread out evenly. Lightly spray/coat each piece of chicken. Coat each piece of chicken in almond flour mixture by placing on top of mixture and flipping over, until fully coated. Place chicken on parchment lined baking sheet and bake at 400 for 20 minutes. Remove from oven and switch oven to broil. Move chicken to a foil lined pan (otherwise your parchment can catch fire under the broiler. Parchment is only graded to withstand up to 500º), top each piece of chicken with 2 tbsp of marinara and one slice of cheese. Place under the broiler just until the cheese starts to brown. Stand there and watch it, it will brown fast! Mixed Vegetable Pulao - Instant Pot Perfectly fluffy Basmati rice cooked with whole spices and mixed veggies in an Instant Pot, super easy and quick Veg Pulao! Rice is my weakness. That being said, If you give me simple steamed rice or any form of rice, I am the happiest person you can find! It is so comforting, filling and super easy to make. You cannot go wrong with just simple rice with dal or kadhi. This pulao is just one step beyond plain fluffy rice, yet amazingly delicious! This Veg Pulao is made so quickly in an instantpotofficial with few ingredients. All you need is ghee/oil, some whole spices, basmati rice, frozen mixed veggies and some dry fruits. Put these ingredients in an IP in certain order and your Veg Pulao is cooked in less than 5 minutes! However, If you do not have an Instant Pot, do not worry. The recipe include instructions for regular (Indian Style) pressure cooker as well! LASAGNA DE RICOTTA 🤤 . . Lo logreeeeeeee!!! . . 🖐Levanten la mano todos los amantes de la cocina italiana!!!!! 🖐 . . Les cuento que es mi primera lasaña que me atrevo a hacer!! Creía que era un platillo súper difícil y ohhhhh sorpresa!!!!! Nada que veeeeer y súper deliciosaaaaaaaa 🤤🤤🤤🤤 . . Todos la amaron así que si quieres sorprender a alguien, ya sabes qué receta utilizarás! . . Manos a la obra 👐 . . 12 láminas de pasta para lasaña 1 1/2 taza queso parmesano 2 tazas queso mozzarella o Oaxaca 6 jitomates 2 cdita orégano seco 2 cdita albahaca seca Sal y pimienta al gusto 1 hoja de laurel 3-4 tazas de espinaca hervida 3 champiñones grandes picados en cuadritos 1/2 cebolla picada 2 diente de ajo picados 1 cda aceite de aguacate ahuacatlan_mx . . Remoja 30 min en agua caliente (no hirviendo) las láminas de pasta para suavizarlas un poco. Después escurrir esa agua. . . En una olla, calentar el aceite y acitronar la cebolla unos 2-3 min y agregar el ajo y cocinar 1 min. . . Licuar los jitomates hasta que quede en forma de salsa (no es necesario licuar hasta eliminar los trozos). Verter a la olla y agregar el orégano, laurel y albahaca seca junto con sal y pimienta negra. Agregar los champiñones picados también. . . Deja hervir unos 30 min, a fuego bajo medio y sin tapar para que el líquido se disuelva y quede una salsa media espesa. . . En un bowl, mezcla el ricotta, huevo batido, queso parmesano, sal y pimienta al gusto. . . Hierve ligeramente la espinaca para suavizarla y escurre perfectamente. . . Para montar la lasaña, tomar un refractario cuadrado 8x8 pulgadas y engrasar ligeramente con aceite de aguacate. . . Coloca un poco de salsa de jitomate y luego colocar una cama de pasta. Servir un 1/3 de la mezcla de ricotta, acomodar 1/3 de espinacas y cubrir con 1/3 de la salsa y 1/4 taza de queso mozzarella o Oaxaca. Volver a repetir el acomodo hasta terminar con una capa de lamjnas de pasta, el resto de la salsa y lo queda de queso. . . Tapar la charola con papel aluminio y llevar al horno precalentado a 200C y hornea 30 min tapado. Retira el aluminio y hornea otros 20 min para que el queso gratine!!! . . Bon Appetit! 🇮🇹

There was a two year period in my life where it took everything in me to go to work and put a smile on my face. I was full of dread Sunday afternoon anticipating what another week would bring. Monday would come and it would feel like the longest day ever. I often felt overwhelmed trying to play catch up with everything I didn’t get done the week before or from what happened over the weekend. Tuesday, Wednesday, and Thursday would consist of putting out fires and Friday I counted down the hours until 5pm. It sure wasn’t a life I wanted to be living. I was merely going through the motions, I found myself anxious and stressed out, and I was missing out of things with my family because I didn’t have the time off. Fast forward to today, I’m creating my own schedule, I’m working on my time and I’m doing things that I love. I feel happy, I am excited about life and the opportunities I have, and I feel more confident than ever. As I watched the FRICKTHEFREAKS video last night, I began to think about what I would FRICK on this Monday morning. It’s something I feel like you have to think long and hard about, but then when you start to think about it, you realize there are A LOT of FREAKS that you could FRICK... And whether that’s a bad thing or not, it’s reality, and it’s life! So thankfully, my friends its_nicolettemarie and actually_alexandra are taking the initiative to help out these thoughts, and I am so happy to be doing it with them! FRICKTHEFREAKS. Today, I decided my FREAK was going to be a protein shake. I knew this morning my body did not want a protein shake, it wanted something savory and sweet. But lately, I think I mentally thing it’s “healthier” to drink a protein shake. While my protein shakes are VERY nutritious and absolutely DELISH, and they are OKAY to have, you so have to listen to your body sometimes. If it wants to eat off of a plate for once, well you should probably do just that. I love me a good milkshake in the morning, but this mornings plate couldn’t be beat.
