I made this chicken the other night, along with some boneless pork chops that I used the same recipe for. Both came out INCREDIBLE. So crispy on the outside and juicy on the inside. Also sharing this sweet potato and cauliflower mash I made last week...I loved the combination of the sweet potatoes and cauliflower, the texture was perfect. What did everyone do this weekend? • • • Deets: 1️⃣ Sweet potato cauliflower mash: 1 pound sweet potatoes peeled and chopped and 1/2 head of cauliflower cut up. Bring 6 cups water to boil with 1/2 tsp salt and simmer the potatoes and cauliflower covered until soft, about 20 minutes. Drain, Mash and/or use immersion blender depending on how creamy you want them. Add 1/2 tsp (or more) salt, 1/8 tsp pepper, 1 clove garlic minced, 1 tbls butter/ghee/coconut oil, 2 tbls Greek yogurt (dairy free or regular), 1/4 onion grated, 2 tsp coconut aminos, 1/4 tsp ground sage, 1/4 tsp chopped fresh rosemary and a few dashes of nutmeg. 2️⃣ Chicken: 1 pound butcher_box chicken (patted dry), dipped in a whisked egg, then dipped in a mixture of 1/2 cup cashews (ground down in a blender), 2 tbls coconut flour, 1/4 tsp each of Salt, Paprika, Garlic powder, Onion powder, Chipotle Chili powder. Ingredients: Nonstick cooking spray (optional) 2 cups whole-wheat flour 2 tsp baking powder ½ tsp baking soda ½ tsp sea salt (or Himalayan salt) 1 large egg, lightly beaten ¼ cup honey ¾ cup unsweetened almond milk ¼ cup organic coconut oil, melted 1½ tsp pure vanilla extract 3 medium ripe bananas, mashed . Instructions: Preheat oven to 350° F. Prepare 12 muffin cups by lining with muffin papers or lightly coating with spray. Combine flour, baking powder, baking soda, and salt in a large bowl; mix well. Set aside. Combine egg, honey, almond milk, oil, and extract in a medium bowl; mix well. Add egg mixture to flour mixture; mix until just blended. Gently fold in bananas. Powdered monk fruit sweetener (lakanto) - 3 tbsp. Coconut oil - 1 tsp. Vanilla extract - pinch of pink salt . • Filling: - 8oz package Cream Cheese, full fat - 1/2 Cup heavy whipping cream - 2/3 Cup Powdered Monkfruit sweetener (or to taste) - 1/4 Cup sour cream, full fat - 2 tsp. Vanilla extract (&/or 3-4 drops peppermint extract, for extra minty taste) - 2-3 tsp. Lemon juice (helps with tartness - there’s no lemony taste!) . – Instructions: 1. (For the crust) Pulse the pecans until you reach a fine grind. Add the rest of the crust ingredients and pulse to combine. Press into a spring form pan and let set in the freezer until firm. 2. Using an electric hand mixer, whip the heavy cream until stiff peaks. Set aside. 3. Beat the cream cheese and sweetener until smooth. Add the sour cream, lemon juice, and vanilla. Beat for 2-3 minutes on medium until smooth and combined. 4. Using a rubber spatula, fold in the whipped cream to the cream cheese mixture. Combine gently so as not to deflate the whipped cream. 5. Pour the filling into the crust and let set in the fridge for 4-8 hours. (Or overnight) 6. (Optional toppings) Melt some sugar-free chocolate (I used lilys_sweets) and add a few drops of peppermint extract. You can also top with crushed peppermint. 7. Enjoy! 😊🍨

We ran out of chocolate chunks for batch 2 so she decided we would just put LOTS of chocolate chips instead. . The original grain-free, paleo-friendly recipe is on the blog but this one is school safe. If you need more detailed instructions then definitely check out the blog as I tried to keep this brief. . I think the photo speaks for itself -- they are absolutely delicious!! If you would like to make these egg-free, just use 2 flax eggs instead. . Here's Vienna's recipe  1 cup brown rice, oat or spelt flour 1/2 cup coconut flour 1/2 cup raw cacao powder 1/4 cup coconut sugar 1 tsp baking powder 1/2 tsp baking soda 2 eggs, whisked 1/2 cup maple syrup or more if you want it sweeter 2 tbsp melted coconut oil 1/4 cup non-dairy milk or water 1/2 cup chocolate chips . Preheat oven to 350F (180C) and line a baking sheet with parchment paper. Combine dry ingredients into a large bowl (excluding chocolate chips). In a small bowl, combine wet ingredients. . I got one pound of black beans for a dollar and I’ll be able to add it to 3-4 meals this week. that chunk tho 👀 Maple granola: 2 cups oats 1/2 cup chopped walnuts 1/2 cup coconut flakes 1/2 cup pumpkin seeds 1/2 cup ground flax seeds 1/4 cup coconut flour 2 tbsp chia seeds 1 cup maple syrup 1/2 cup olive oil 2 tbsp vanilla 1 tbsp cinnamon. Directions 1. Preheat oven to 350. 2. Mix dry ingredients in a large bowl 3. Add in wet ingredients. Stir well so everything is coated. 4. Place on baking sheet and bake for 10 mins, then flip the granola in chunks and press the granola down. Continue baking. 5. Once it looks crispy, about another 15 minutes, remove from the oven and cover with another baking sheet for 15-20 minutes. This will help chunks stay!
