🍌 Banana quinoa cookies!! 🍌 NO eggs. NO sugar. NO flour. NO butter. = I’m amazed. I’ve always cooked with white flour and granulated sugar until just recently and had no idea “dessert” could taste this good AND be a healthier alternative!! I’m just so pleasantly surprised! 😄 The great thing about these cookies are that your little will love them, too! And if they ask for seconds, you’ll give them an enthusiastic YES because they’re filled with good stuff like oats, quinoa, banana and nuts! Monkfish kebabs with plenty of plants 🍢 continuing with the seafood vibe — Monkfish is one of my favourite fish being taste and texture preference. I literally assembled them with the most contrasting vegetables with diff colours being: • red onion • yellow pepper • courgette • tomatoes. Alternatively use what you have but the more variety of plants delivers more nutrients being micro or phyto possible. — 484 Cals Protein 35 Carbs 23 Fat 28 Remember these recipes not set in stone so tweak what you want more or less — Ingredients • 200 grams monkfish tail or use other firm fish • 1 tbsp Extra Virgin Olive Oil • 1/2 yellow pepper • handful of cherry tomatoes • 1/2 courgette / zucchini • 1/2 red onion • 1/2 avocado • handful of green beans — Recipe: 1. Preheat to medium flat wide saucepan or use a grill or bbq 2. Cut the kebab ingredients in to a uniform 1 inch thick size 3. Use a skewer of choice, I used stainless steel 4. thread the ingredients on alternating + making it look pretty 5. Add to the grill or pan etc 6. Cook for 2 minutes per side totally 8 mins 7. Whilst cooking, steak or sauté the green beans in 1/2 olive oil 8. Slice the avocado 9. Plate everything up then drizzle remaining olive oil on top. Add Celtic sea salt and serve — Hope you enjoy this as it’s one of my favourite meals and simplified way of cooking fish and getting veggies involved. This is my jam 👏🏻 Like how delicious does this look 😍 I’ve been on a serious rice cake kick since re adjusting my low carb life style. For any of you new peeps out there, long story short, I ate a keto diet for majority of my weight loss. I really focused on staying under 20 net carbs a day. After loosing the weight and reaching my goals I realized that I did not want to stop there. I wanted to continue to get stronger and build muscle and with that means needing to eat more. It’s been a learning curve but a super rewarding one. I’ve learned so much with food and making sure I am fueling myself with the right foods that the transition has been going so well. I do my best to stick with complex carbs and not go back to my old eating habits, constantly consuming those evil carbs that controlled my life for so long. If you’re in a similar situation just know that it’s alright to switch your routine up. Change is always a good thing and it’s inevitable it’s going to happen 💪🏻👏🏻💛

Coconut Lime Cilantro Quinoa Serves: 4 Servings INGREDIENTS 1 cup uncooked quinoa 1 (13.5 oz) can coconut milk 2 tsp. honey ¼ cup cilantro, chopped Juice of 1 lime INSTRUCTIONS Rinse and soak quinoa for about 10 minutes in warm water. I am not one of those moms that pregnancy is easy on.. 🤱 While I like the results a pregnancy brings, the journey is rough on me. If you follow my story, then you know that when I am pregnant, I am pretty high risk. I had to have a cerclage and lots of injections to stay pregnant. While I know how to stay healthy, I pack on the pounds when I am pregnant due to not much activity. I also was so sick during my pregnancy, that I really just ate anything that would sit well in my stomach. That most days mean bagels.. Lots of bagels and boy did they pack on the pounds for me. 😲 At the end of my pregnancy, I tried to be more active but just didn't feel right. Turns out I had preeclampsia and my platelets were insanely low. I went thru a very difficult c-section and developed a very large hematoma. After the 7 week wait my doc gave me, I was ready to start moving again but wow it was tough. I mean, I could barely do a push up on my knees. I had to modify a lot thru the summer and the workouts were painful. It is never fun starting over and feeling out of shape but the only way to move forward is to start right? So that is what I have done. I have just taken it one day at a time and focused on balance and getting it off the right way. Most days were workouts that were 20-30 minutes, watching my portions, and just doing what I could as a new mother of 3 very busy children. I am so glad I started because I was so tired and out of shape. Despite the lack of sleep I am still battling thru, I am feeling one thousand times better. Honestly, I don't know if I could get thru some of these up all night adventures, if I weren't taking good care of me. I know it is so tough to start, I have been there too many times.
