Happy first day of classes to me!!💥⭐️🌈✨⚡️Last first day though (until grad school perhaps) 🥺 I have a fairly odd schedule this semester, but I’m still going to try and share some new recipes and what I’m eating with ya. Last nights dinner was sooo easy and one of my favs 🙌🏼 I usually make it into a stir fry with chickpeas or something else, but decided to mix it up. . . . dEATS 👉🏼👉🏼 Frozen white rice (I get mine at Whole Foods because you can make it by the serving aka nothing goes to waste!)with air fried green beans and beets. All of that tossed in traderjoes coconut aminos (run don’t walk to find this, a staple of mine!!) Estuve un par de horas ayer en una tienda conocida que tiene una gran oferta de productos “listos” para por ejemplo las loncheras de los niños, algo que ahorita nos ocupa a unas cuentas madres en este país con el regreso a clases, y reafirmé mi compromiso de seguir COCINANDO para mi familia, es la única manera de tener idea de los que estamos consumiendo 👩‍🍳, porque no encontré un solo producto que tuviera menos de 15 ingredientes, al menos 4 tipos de azúcar y 3 tipos de aceites vegetales 😬. He dicho varias veces que no me gusta satanizar los alimentos, suelo ser bastante flexible, pero honestamente la industria de las cajas de comida está ABUSANDO, vendiendo opciones SALUDABLES irreales y engañando a la gente 🤯 . Invertir tantas horas en la cocina no es fácil, pero podemos organizarnos y sobretodo ⚠️ poner buena música para que todo fluya 😊. Si un día no lo logro definitivamente llamaré a nanishealthyfood que conoce bien esta historia 😅 . La idea del mousse la había visto alguna vez en internet y decidí probar porque se me estaban dañando unos aguacates 🥑, confesaré que la hice sin medidas 😅 tipo ojo por ciento, así que esa es mi mejor recomendación porque se puede personalizar según tu gusto. Tiene solo 3⃣ ingredientes: aguacate, cacao el polvo sin azúcar y sirope de maple sin azúcar añadida. Puede modificar las cantidades el tipo de aguacate que uses (el hass es más cremoso), la intensidad del cacao y la calidad del sirope. Lo que yo hice fue poner el aguacate en el procesador (la mitad de uno grande) y fui incorporando el resto, probando el sabor hasta que estuviera homogéneo y delicioso 😋(importante cuidar de no abusar del sirope porque aunque sea sin azúcar añadida esta cargado de fructosa naturalmente). . El resultado es una gran opción si te gustan las texturas cremosas, se puede envasar para las loncheras y se conserva perfecto en la nevera. Con un top de berries 🍓queda genial 🤤 . Today’s transformationtuesday is sparked by kurbohealth . Growing up I did have an addiction to food and didn’t make the healthiest choices. I was not very active at all and my favorite past times were sitting around and eating. Starting around 5th grade (10/11 years old) my weight did start to increase more and that’s when my doctor started to become concerned. She tried her best to tell me to lose weight and make healthier choices but hearing that only made me want to eat more. I also was introduced to my Fitness pal around age 11 (a food tracking app) and I used it for about 3 days and I dropped it. Why at 11 years old should I be tracking and writing down every single thing I’m eating? Later on, my mom began to take action by using a nutritionist, which did not work because I didn’t want change. I was 12 years old now and I wanted to be treated normal. Also around age 12/13 was the first time I was taken to a weight watchers meeting. I felt embarrassed to be 13 years old and to be in one of these meetings with a bunch of adults and it also made me sad. I was sad because I was being told to change who I was, but at 13 years old I wasn’t ready to make the change. I wish that more parents and doctors realized that a child will not make a change until a child is ready. Telling a child to lose weight isn’t the help they need. How about we teach children about making healthier choices and if adults are going to tell a child to make healthier choices, they should make those choices as well! As well with exercise! If you are telling a child to exercise, do it with them! Don’t put it all on them because they are most likely not ready to make a big change like this and helping them instead of telling them is more powerful. My point is, if someone is not ready to make this change, don’t force them. You can encourage them to make a change and do it along with them, but it won’t happen until they are ready. And that’s my transformationtuesday post for this week. 💪🏻

CHICKEN PESTO PASTA - 1-2 tbsp pesto - 1 box penne - 1 large chicken breast - 1/2 cup baby heirlooms, halved - 1/2 cup chopped baby spinach - Salt and pepper to taste . Steps: 1. Boil penne in medium sized pot of salted water for 10-12 minutes. While pasta is boiling, slice chicken breast into 3 separate pieces and season, once seasoned place chicken in pan with olive oil and cook on each side for 4 minutes. 2. Halve your tomatoes and cook in a small pan in 1 tsp olive oil and cook until they begin to blister. 3. Once chicken is done, place on cutting board and slice against the grain into even cuts. 4. When pasta is done boiling, drain pasta but reserve 1 cup of the pasta water. You’ll need this later. 5. Add pasta to medium skillet and add 1-2 tbsp pesto. Use your pasta water to thin this out until all noodles are coated and it forms a nice saucy consistency. Los ingredientes 1 taza de coliflor cortada en trozos pequeños 3 huevos grandes 1 taza de espinacas, ligeramente empacadas y cortadas en trozos pequeños 3/4 taza de pernil, pollo o lo que se te ocurra sal Pimienta Preparación: Precaliente su horno a 180 grados y rocíe generosamente una lata de aceite en aerosol o normal. Dejar de lado. En un pequeño procesador de alimentos (el mío es 3 tazas), procese la coliflor hasta que se descomponga y se parezca al arroz. Dejar de lado. En un tazón grande, batir los huevos. Agregue la espinaca, el pernil, el arroz con coliflor y sazone con una pizca de sal y pimienta. Mezclar bien. PALEO CHOCOLATE CHUNK BANANA BREAD 🍞 🍫🍌! If you’re unsure of anything of your life at the moment, here’s a little slice of heaven that I’m SURE will brighten up your day... at least if your like me, for the 5 seconds it takes for you to put back a thick slice. My family and friends are already requesting that I make more, I’d say it lasted a good 24 hours 😂. This is a take on my classic paleo banana bread up on the blog, made gluten free and with only sweetened from the bananas and chocolate chunks of course... never go easy on chocolate. Life’s too short. I was lucky enough to get the perfect thick slices using my Japanese steel kamikoto knife set 🔪. I never realized how much of a difference a truly good knife made in all my cooking adventures... safe to say it’s like Christmas morning every time I use it. Also, each blade pays tribute to the centuries-old craft of knifemaking, and is handcrafted with attention and care,making me feel extra special as I slice my bread 😭😭. RECIPE: DRY 1 1/2 cups almond flour 3 tbsp coconut flour 1/4 cup cassava flour 1 tsp baking soda 1 tsp baking powder 1 tbsp cinnamon 1/2 tsp sea salt 3/4 cup chopped chocolate chunks or chips WET: 3 eggs (beaten) 4 extremely ripe banana 1 1/2 tsp vanilla extract DIRECTIONS: Preheat the oven to 350 degrees fahrenheit and line a loaf pan with parchment paper. In a large bowl mix together all dry ingredients, excluding chocolate and set aside. In a separate small bowl beat the eggs until uniform and set aside. In a medium sized bowl mash the bananas until you form an even runny texture with a few chunks. To the bananas add eggs and vanilla and whisk together to combine. Slowly add in the dry ingredients to the wet ingredients and evenly mix. Then gently fold in chocolate. Transfer to loaf pan and top with more chocolate if desired. Bake for 55-60 minutes or until a fork comes out clean. Once done baking let cool completely before slicing. Recipe keeps well stored on the counter for up to 3 days and in the fridge for up to a week! ad
