Chicken biryani😋 Recipe: Chicken - 500 grams Onions - 4 big sized (thinly sliced) Tomatoes - 2 medium sized (pureed) Ginger garlic paste - 2 tbsp Yoghurt - 2 tbsp Turmeric powder - 1/2 tsp Cumin powder - 1/2 tsp Coriander powder - 1/2 tsp Red chilly powder - 1/2 tsp Garam masala - 1 tbsp Kashmiri Chilly powder - 1/2 tsp Salt to taste Ghee/clarified butter - 4 tbsp Mustard oil - 4tbsp Cumin seeds - 1/2 tsp Cardamom pods (black and green) - 4 pods each Cinnamon stick - 1 long piece Cloves - 5 to 6 pieces Bay leaf - 2 Star anise - 1 Saffron - 6 to 7 strands (mixed in 1 tbsp of warm milk) Basmati Rice - 1.5 medium sized glass Biryani masala (if available) - 1 tbsp Recipe: Marination - mix the chicken with a little bit of salt, yoghurt, cumin powder, coriander powder, chilly powders, ginger garlic paste & garam masala & let it sit for 30 minutes. Half cook the rice in a pan. Use just a glass of water or enough to cover it. Add a little bit of salt, cardamom pods, bay leaf, cinnamon stick, star anise & cloves and cover it to bring it to just one boil. Turn off the gas stove. In a saucepan, add the ghee & cook half of the onions until its golden brown & set it aside. In a cooker, add the mustard oil, cumin seeds, the remaining onions & cook for 3-4 minutes. Add the puree & cook for another 5 minutes. Keep scraping the bottom. Add a little bit garam masala and water & let it cook for another minute. Add the chicken and cook till it starts to be medium cooked (cut a piece & if you see it has started to turn white, it is medium cooked). Take half of the chicken out & layer the chicken in the cooker with rice. Set the remaining chicken on top of it & layer it again with the remaining rice. Sprinkle biryani masala, saffron, golden brown onions, add half a glass of water & cover the cooker with a plate & seal the sides with a strip of dough. 19/09/2016 - The day we were blessed with a little angel. I remember the first few hours after our little Z entered this world being blissful, peaceful, euphoric even - in fact, the first night and day with Z was the very picture of the romanticised idea I had in my mind of how blissful and beautiful motherhood would be. I think we all romanticise becoming a mother, underestimating just how big a responsibility it is to raise a healthy, happy and well-adjusted child all whilst keeping ourselves sane. My first 24hrs with my Z may have been the picture of peace, but my first year certainly wasn’t. I don’t think I slept a stretch longer than an hour during that year! So many challenges, tears and lows had me feeling like I had been cheated into motherhood - no one told me it was going to be this hard! NO ONE told me I would lose my whole damn mind on a DAILY basis! I mean, how difficult could a baby be? Turns out, the answer is very. Every day I struggled that year, but every single day I told myself ‘Fatima, this is YOUR girl. She is taking on and absorbing EVERYTHING you do, say and project. Be strong for HER, if not for yourself’. I felt like the living dead somedays - but the time passed, as it always does. To all the Mamas out there struggling, I am here to tell you: it DOES get better. They won’t be little forever. They won’t be wanting milk every half an hour for the rest of your life. They won’t always ask for the warmth and comfort of your arms. They will fall asleep one day without you being right beside them. And when that time comes, you will miss it. It’s such an indescribable joy, seeing my little girl become independent, vocal, confident and willing to take on new challenges more and more as each day goes by, but at the same time it’s so bittersweet thinking my little girl isn’t so little anymore. It’s true - time does fly. In having Z, I’ve become so much more conscious and find myself in constant evaluation of whether what I do and how I think is beneficial for my daughter, and in that I feel I have grown for the better - and thats all thanks to my Z. Happy birthday Mama ki Jaan, my angel ❤️

Cooking love ..., Loaded Vegetarian Nachos 😋 By: Claire Nolan and Tasty - Ingredients for 6 servings 1 cup lentils, rinsed (200 g) 2 cups vegetable broth (480 mL) 1 teaspoon salt ½ teaspoon pepper 2 teaspoons chili powder 2 teaspoons cumin 1 teaspoon garlic powder 1 teaspoon dried oregano 15 oz corn, 1 can, drained and rinsed (425 g) 15 oz black beans, 1 can, drained and rinsed (425 g) 1 lb tortilla chips (455 g) 1 ½ cups shredded mexican cheese blend (150 g) 1 cup shredded lettuce (75 g) 1 cup tomato, diced (200 g) ½ cup red onion, chopped (75 g) 2 jalapeñoes, sliced ⅓ cup fresh cilantro, chopped (15 g) - Preparation Preheat oven to 350˚F (175˚C). In a large pot, over medium-high heat, bring lentils, broth, salt, pepper, chili powder, cumin, garlic powder, and oregano to a boil. Once boiling, reduce to a simmer, cover and cook for 35 minutes. Once cooked, mix in the corn and black beans. On a baking sheet, place a layer of tortilla chips, followed by the lentil mixture and cheese. Add another layer of tortilla chips, lentils, and cheese. Bake for 8-10 minutes, or until the cheese has melted. Top with lettuce, tomatoes, red onion, jalapeños, and guacamole, and cilantro. Enjoy! There's a beautiful restaurant in New Delhi called Bukhara where I got to meet the chef as he cooked his smoked dal in a tandoor for 12 hours! I couldn't stop thinking about that dish, so I went home and created my own version. After cooking the lentils in spices, milk, and butter, I put the dal in my smoker for about 3 hours. It's truly a magical dish that takes me back to India. Find my recipe in my bio!
