On this beautiful Sunday afternoon at thestarinfrisco we visited rotigrilldfw and ordered some Indian food for lunch. Definitely a different way of ordering Indian food at the counter then being seated, we ordered 1)combo tandoori—seekh kebab and chicken tikka 2) lamb biriyani 3) chicken masala all medium hot. Every Sunday when I was growing up, my Dad would make a Sunday roast. With the preparation and the washing up, it would become almost an all-day affair, with as many family members as happened to be around joining, generally with plenty of wine. Large joints of meat not being readily available in Amsterdam, I'm ashamed to admit I've rather let the tradition fade. But tonight three of us cooked an Indian feast (including homemade naan bread and paneer cheese) and shared it with our Amsterdam "family". I'm pretty sure my parents didn't even know what paneer was in the 90s, but I think they'd approve of the sentiment of the big Sunday meal. This is an Indian dish called Dosa. Dosa comes in many versions. The one I ordered was Masala Dosa. It is a crisp crepe made with urad lentils and rice flour. Stuffed with a masala mix of potatoes. The flavours of pain… As a novice.. I always thought more was better! Throw in ginger, garlic, cumin, cardamom, star anise, cloves, black pepper, red paprika… make it loud.. and that’s how you get flavour. It was much later that I realized that spices are like instruments… they all need to be in balance.. sometimes subtle, sometimes one needs to shine a bit more and sometimes you need few to shine to bring out their unique attributes. If everything is loud, you hear nothing! Life is in many regards is same as cooking. Balance is important.. however… unlike cooking, the ingredients are not always of your choice. Life hands the ingredients to you. So what is your responsibility so that the dish of your life is delicious! My experience tells me that the flavour really comes from the spice of pain! happiness, joy, pleasure.. they are all bland.. they are short lived and superficial. What is true is the pain.. let’s skip the bigger philosophical discussion and agree that real kick is in pain only! So how to handle pain and ensure the spice of it enhances your dish of life and not overpower it? Well.. first,, disconnect from it.. it is just spice and you are the chef. Take what you need to from that pain.. just enough… throw it in the fire and let the flavour shine. You as chef is always disconnected… you are the observer of the pain, the master of the spice! Also remember that life has given you that spice knowing well that deep down you are able to work with it. Observe it, smell it, taste it.. then visualize how you can use it to make the dish of your life a bit better using it… then use it as such! Let your life be delicious! Make it fragrant.. colourful.. spicy if you may… but keeping constant the understating that it is a dish you are cooking. It is not who you are .. you are the master.. the chef! Let people talk about the dish you cook.. and you just focus on the process of cooking! Wishing you spicy pain that you are able to turn to something delicious! Kesar Peda Made With Homemade Khoya Ingredients: 2 cups grated khoya, 1/4 cup brown sugar, 1/2 tsp cardamom powder, 15-20 strands saffron soaked in warm milk, pistachio sliced 1 tbsp. Directions: 1. Mix khoya and sugar well and cook on low heat, stirring continuously. Until sugar dissolves and khoya starts to melt. Cook for 20-25 minutes or until mixture thickens and begins to leave the sides of the pan. Stirring continuously. 2. Add soaked saffron and cardamom powder, mix well. Cook for another 2-3 minutes. 3. Let the mixture cool down. Divide into 14-15 equal portions and shape each one into a peda.
