Preheat your oven to 400 F. 2. Place the chicken on a clean chopping board and sprinkle with Italian seasoning, garlic powder, paprika, salt, and pepper. 3. Start cutting each one lengthwise to create the pockets. Be careful not to cut all the way through. 4. Add 3 sprigs of asparagus and a couple of pieces of sun-dried tomatoes to a mozzarella slice, then roll it to hold them inside. Stuff the chicken breasts with it. 5. Close the pocket with a toothpick. Heat oil in a large and cast iron skillet over medium-high heat. 6. Add in the chicken and sear it until nicely golden brown, about 3-5 minutes per side. 7. So, this may come as shock to many, but I'm not a fan of eggloaf. donthateme 🤷‍♀️. The taste is fine, but the macros KILL me. It goes down SO easily and I could probably eat 1/2 a loaf in a day, if not 1 sitting. Which is over 1000 calories and 88g of fat. That's my ENTIRE fat allotment for the day, and over 2/3rds of my calorie limit. I'm very calorie sensitive, if I'm not at a deficit, I don't lose weight. I know what you're going to say. But SOURY, just eat 1 serving...yeah, no. 😅. Honestly, 1 serving of eggloaf is not that satisfying to me and leaves me wanting something else, or more. I just don't find it very filling I guess??. . So, I was chatting with brilliantlyketo on this whole eggloaf thing and she also wanted something lighter. So I came up with something similar, but dialed it way back as far as calories and fat. The texture isn't as creamy/fatty, but to me, tastes much closer to french toast as it has a more "bready" texture. She adds gelatin and baking powder to hers, so I kept that in the new version as well. Macros for 1 serving are in the 2nd photo. Eggloaf LITE - 8 servings 8 eggs 3oz cream cheese 4oz half & half 2T butter 2T bobsredmill coconut flour 1tsp nowfoodsofficial gelatin powder 2tsp baking powder 4tsp lakanto granular sweetener Warm up butter, cream cheese, and half&half in microwave until just soft enough to mix well. Don't overheat! If you do, let it cool a little before next step. Add everything into a blender and process until smooth. Pour into a greased loaf pan or muffin cups, etc... Bake at 350° until set, time will depend on what you are baking it in. CREAMY KETO PASTA + BLACKENED SCALLOPS.⁠⁠ .⁠ I’m going with this delicious and easy pasta dish starting with 3 net carb almondlovewith pasta. This is probably one of my fav recipes with the pasta so far...slightly dangerous… you’ll be reaching for seconds in no time.⁠ .⁠ Super super easy to make:⁠ .⁠ 1.Cook a bag of almondlovewith according to the directions. I went with the soft method, so I just soaked in water while water was boiling and boiled it for 12 minutes.⁠ .⁠ 2.While the pasta was cooking, I made the sauce. I started by melting 2.5 tablespoons of butter in a sauce pan, adding 2 cups of josiesorganics spinach, and mixing for 1 minute.⁠ .⁠ 3. After 1 minute, I added 1.5 tablespoons of cream cheese and mixed everything well for a couple of minutes, then added 1/2 cup cream, 1/2 cup of shredded parmesan, and a couple of garlic cloves. Mix well on low.⁠ .⁠ 4.Give your sauce a taste and at this point you can add some salt, pepper, garlic powder, chili flakes, lemon zest, or some fresh herbs. You can do whatever you like and all of those are great options.⁠ .⁠ 5.Once the pasta is boiled, strain, add a couple tablespoons of the pasta water to the sauce to lighten it up if needed, and add the pasta to the sauce and cook for another minute or so together to get the flavors going.⁠ .⁠ 6.Eat as is, or top with your favorite protein. Here is how I made the steak: . 1.Grabbed a piece of porterroad Kansas City strip steak and liberally seasoned with sea salt + fresh ground pepper on both sides. Let it sit on your counter for about 30 mins so it gets to room temperature and soaks in that flava. . 2.While that was going, washed and cut up some baby bok choy in half and seasoned with avocado oil, sea salt, and some pepper. I did the same with the mushrooms. Some people wash them, some people dont. I am in camp “I wash everything”. Set aside. . 3.Get a cast iron pan warmed up on medium heat. Put in avocado oil or 1-2 tablespoons butter, and 3-4 pieces of thyme. Put the steak down on the pan for about 3-4 minutes on one side, then flip, and cook for another 3-4 minutes. While its in the pan, tilt it a bit and baste the fat/juice over the steak. . 4.Remove steak from the fire and let it sit for at least 10-15 mins. DO NOT SLICE. . 5.While the steak is sitting, sautée your bok choy and mushrooms in the same pan to your liking. I like them more raw than soft, so I only do it for a couple of minutes. . 6.Now its time for my favorite part… the sauce. Get your ingredients ready: 1/2 cup of white wine, 1/3 cup cream, 1/3 cup parmesan cheese, and about 1 tablespoon peppercorn. . 7.Slice up your steak to your liking, pour some of your peppercorn sauce over, and serve next to your veggies. 📷 shredhappens . . Tandoori DHA 1 Hi tea/lunch buffet. Firstly if you read my previous post, you might be wondering why do I go here if I know the menu selection is inconsistent. 😑 1. They have some keto options which include bar b q, kabab, and karahi or handi or tawa chicken (any 1) 👍 2. I go there for a quick bite when I am planning to have a meal that has something yummy and is ready to eat. My visit is not a buffet visit really as I just have karahies and bar b q. 😁 I rate their food better when you order, again, because of the bad menu selection for buffets. On days when you have malai boti & boneless handi it's a totally different buffet! Haha. My suggestion is to ask before you head there on phone about bar b q and karahi options for the day, rest all remains the same daily. Food review in the next post!
