Feeling a little extra this morning and I was out of my choczero white chocolate chips 😭 so I improvised. I'm dealing with secondary infertility which makes me comfort eat. My daughter's due date was on the 19th, so that hit pretty hard. Also, my son was hospitalized twice due to a viral infection and asthma. This weight gain reflects so many things. But overall it's just water weight and bloat. I know this because my feet and hands are very swollen. pretty crazy,really. I just want to make clear that yes I am not happy with the gain,i mean who would be..but at the same time I had a great past 4 days and this is just the consequences of my actions. I baked it in an 8x8 lined with parchment paper. Once done I removed from the oven and let the cake cool. Once cooked I removed the parchment paper and cake from pan and then added just the cake back into it. I then poked holes in the cake using the back of a wooden spoon.⁠ .⁠ I took 1/2 cup unsweetened almond milk, 1/2 cup heavy cream, and 1/2 cup half&half and mixed together. I then poured it over the entire cake letting it soak it all up! I then covered and put in the fridge to cool.⁠ .⁠ While the cake was cooling I prepared a frosting using 1/2 cup heavy cream, 2oz cream cheese, and 2 tbsp allulose blend sweetener. Mix until thick and creamy. Top cake with frosting and sprinkle with cinnamon!
