What was I before I lost weight, chopped liver? I am the same me. I am the same person as I had been when I was fat. The only thing that changed was my weight. This is not my reason “why” I lost weight, but it’s definitely something I’ve noticed that has changed. I’m not mad at anyone who treated me like a waste of space and I get it we all have our prejudices. Including myself. But I am encouraging everyone to take a moment, and recognize those prejudices and try to see the potential and value in EVERYONE because you know nothing about the person you’re treating poorly or super nicely so make an effort to learn about them! Ingredients: 2 cups Shredded Mexican blend cheese 1 lb ground beef Chopped onion and season (optional, to taste - I used garlic powder, onion powder, Lawrys seasoning salt and red pepper flakes) 4 slices American Cheese 1½ tbsp salsa 1 tbsp butter . Directions: Preheat oven to 350°F. Fill bottom of whoopie pie pan cavities with shredded cheese until you can't see the bottom. Meanwhile brown ground beef, add onions and seasoning. Once preheated, bake for 4 minutes (the cheese will still be soft and bubbly, but will harden enough to fold them, as they sit). Add one spoonful of meat onto half of each melted cheese. Using something that will not damage the pan such as a small spatula gently fold the non-covered side over the hamburger side. The Last Supper. Surf N Turf 👌🏻 I’m actually going to be an hour late to start my fasting start time of 7:00pm bc I had to wait for the deer to finish being butchered, and then Lorelai had a little melt down bc she didn’t do well with her naps today. It was a lot of chaos at the wrong time 😂 reallife But I had the scallops from wildalaskancompany ready and waiting to be cooked! I did a rich Caulimash, some mushrooms and onions and fresh venison steaks 🤤 There were so many moving parts and timing to the two proteins with all the interruptions, my large batch of scallops didn’t turn out as perfectly as my test scallop did. It probably needed to be done per person but I just didn’t have the time to do it like that and therefore the sear wasn’t as great when you put them all in the pan. They were still delicious! Dan approved❤️ And they were the freshest scallops I’ve ever gotten my hands on. I added them to my box from wildalaskancompany bc I couldn’t resist and I’m glad I did! Now I start my 60 hour fast/reboot. I will be drink various forms of ketones and electrolytes, as well as a gallons of water, but no food until Wednesday morning! I’m excited to see the things my brain and body has to work through during this. Will I have any new AH HA moments? We all have a pile of things waiting for us to actually dig into and resolve within us, and I’m looking forward to confronting those. ❤️ I’ve been actively committed to my wellness journey the past 45 days and I’m definitely ready to go deeper and continue bettering myself mentally and emotionally and healing the old wounds that were reopened. Caldo de Pollo 🐓 ⁣ Feeling like I may have a caught a bug going around, so I whipped up a quick batch of chicken soup to help me feel better. This simple recipe made for a comforting pot of soup that’ll last me for a few days. I added some frozen chicken bones that I had from deboning thighs to enhance the store bought broth I used as the base. This made it a richer tasting broth. ⁣ ⁣ 📝: 2 boxes TJs Low Sodium Chicken Broth⁣ 2 bay leaves⁣ 6 drum sticks⁣ 1 tbsp of apple cider vinegar⁣ 4 celery sticks cut in thirds 4 white mushrooms cut in quarters⁣ 1/2 a small yellow onion⁣ 1/2 a Roma tomato cut in half⁣ 1” of fresh ginger⁣ 1 yellow squash julienned ⁣ Real Salt to taste ⁣ ⁣ Place everything in your instant pot and set it on manual for 35 minutes. Allow for a slow automatic release.
