Last night after such a great day food wise I caved with the hubby and we shared a taken away donner kebab meat tray with salad. It was absolutely delicious and I’m still in keto but this morning i had put 2lbs on. I realise it’s mainly water weight so I’m not worried. Seeing the scales go up and down is one of the downsides to getting weighed everyday and over time u become a little hardened to the fluctuations which I am now. To compensate I’m doing a one meal a day today to bring that water weight back under control. I do deviate from what I know I should be eating more often than I like to admit but I’m resigned to slow weight loss and also this is a life style for me so it has to be realistic and realistically I really wanted donner meat last night 😂 I’ll be interested to see if the one meal a day rescues all my weight loss from before or just some of it. Either way keto4life 👍🏼 P.s. Creamed Spinach–Stuffed Salmon - INGREDIENTS 4 (6-oz.) salmon fillets Kosher salt Freshly ground black pepper 1/2 (8-oz.) block cream cheese, softened 1/2 c. shredded mozzarella 1/2 c. frozen spinach, defrosted 1/4 tsp. garlic powder Pinch of red pepper flakes 2 tbsp. extra-virgin olive oil 2 tbsp. butter Juice of 1/2 lemon - DIRECTIONS 1. Season salmon all over with salt and pepper. In a large bowl, mix together cream cheese, mozzarella, spinach, garlic powder, and red pepper flakes. 2. Using a paring knife, slice a slit in each salmon to create a pocket. Stuff pockets with cream cheese mixture. 3. In a large skillet over medium heat, heat oil. Add salmon skin side down and cook until seared, about 6 minutes, then flip salmon. Add butter and squeeze lemon juice all over. Cook until skin is crispy, another 6 minutes. 🥶 September to May! There is about 11 pounds in between these two pictures but the thing I notice much more, is the inches lost. If you are just starting this journey, take pictures and take measurements!! You will be astonished when your body isn’t necessarily losing a lot of weight but it’s losing inches like crazy. It may be uncomfortable to set up your camera with a timer and take a picture in a sports bra, but I promise, you’ll be thankful. Just do it. Especially on days where you aren’t feeling like you’ve made any progress, you can compare your pictures and measurements and instantly have your mind blown at what our bodies have been up to and are capable up. 18 months. 102 lbs. (to be exact) From hopeLESS to hope FILLED. . Before, I struggled through the day to day challenges that this medical mom life consist of. Exhaustion was an understatement. . Self confidence? Yeah, wasn’t even in my vocabulary. I looked in the mirror & just wanted to cry at what I saw. There was a dark hole that I felt trapped inside. . Thankfully, I put my skepticism & negative mindset aside. I shifted to the driver’s seat & slowly regained control of my own life. . It wasn’t always easy, but it was always | s i m p l e |... • Drink ketones. • Eat cleaner and low carb/keto. • Move my body a little every single day. . This crazy medical life continued to throw curve balls my way, but I focused on what I COULD control and that was my health. . If my kids could quite literally fight for their lives, how could I not fight for mine too? They NEED me. And not the version of me that I was. . They deserve nothing less than my presence with a clear mind, energy to do all the things with them & a healthier body to enjoy it all in. . So, that’s how we got here. It’s been hard work, sweat, a ton of tears, personal development, ketones, FAITH & probably even some blood. . I’m excited for the future now. (You can see it in the difference in my eyes. ♥️) I look proudly at the woman I have fought like hell to become. I still have a way to go on my fat loss. But I’ve fallen in love with the process, so I’m enjoying life & the journey.

Sunday dinner was super easy shrimp Alfredo with homemade noodles. The noodles are three ingredients, five minutes prep, and delish. They bend like carby pasta and don’t have that chewy Shirataki rubber band thing going on. ⁣ ⁣ Recipe from resolution_eats ⁣ 2oz cream cheese⁣ 3 eggs ⁣ 3 teaspoons lupin flour⁣ -Blend in blender, scraping sides occasionally ⁣ -Bake on parchment lined sheet pan 325F 12 minutes or until sides start to peel up while baking ⁣ -Let cool, gently roll, slice to desired thickness ⁣ ⁣ The shrimp was baked in butter, fresh lemon, and a packet of Italian dressing mix 15 minutes ⁣ ⁣ The sauce is Rao’s alfredo. ⁣ ⁣ If you scroll back far enough on my feed you’ll see I’ve made other uses for this pasta, including lasagna that was hands down better than any other I’ve had. Wasn’t hungry but was in the mood for a good breakfast, going to eat a good lunch & start fasting. . For those who haven’t watched my stories. I celebrated a lot this past weekend & did not eat keto Friday, Saturday, or Sunday. Yesterday, I got a good fast in & already had a GKI of 8.56 just barely in Ketosis. But there 🙌🏼 I’ll check my levels again this evening. . Tracked my breakfast, so you all can see how macros work. Mine already says 5net carbs for the day, but I would say it’s actually 3net carbs already. For the peppers, I couldn’t get an actual serving accurate on the app. Serving size is 3/4 cup 4net carbs, I had 1/4 cup serving. 🤷🏻‍♀️ either way. I really saw significant changes in my weight loss when I started IF. I like intermittentfasting with coffee and water and my goultima electrolytes. My eating window is between 12-8. It fits my lifestyle and let’s me eat dinner with my daughter when I get home. Do you do IF? What’s your window? Also, if you haven’t, would you try it?

Bacon Wrapped Jalapeño Poppers! 🥓🌶 by baconistheketomyheart Legit some of my favorite snacks EVER! These came out amazing. And I have a few jalapeños left over, so I’ll be making more soon! 💖 What’s your favorite air fryer recipe? To make these 6 poppers, I used: 3 jalapeños, halved and deseeded 4oz of cream cheese 2oz of cheddar 1/8tsp Black pepper 1/2tsp Garlic powder 1/2tsp Onion powder 6 strips of bacon I mixed the room temperature cream cheese, cheddar, and spices in a bowl. Then spooned the mixture into the jalapeño halves. Wrap each popper in a strip of bacon. Cook all 6 in the air fryer for 10 minutes at 390. Perfect. 🤤

I started gaining weight when I was in middle school, and I NEVER ever wore a bikini like most of my friends. In fact I usually would wear shorts or capris and a shirt. I remember people asking me, "Aren't you hot!?" I would play it off like I wasn't...but truthfully I was just too embarrassed to take them off.
