I was so excited to eat my ketoandco brownie that I didnt get a pretty before picture. I love baking during the holidays. The cold weather and movie Miguel and I plan to finish later is what prompted me to bake. Y’all brace yourselves for what I’m about to say ... ⁣ ⁣ This McCafe drink right here is keto friendly and I would choose it any day over Starbucks. 😱 If you’ve been around long, you know my love of the breve latte. However, at Starbucks I don’t like the flavor of the latte without sugar free syrup added to it. And that sugar free syrup is sweetened with Splenda, which is not a sweetener I use anymore if I can help it. ⁣ ⁣ I’ve heard many times that the Americano is a great keto option as it is just espresso mixed with hot water. Then you can add some half and half or heavy cream and sweetener of choice if you prefer ... and I do. (I always carry Truvia packets with me since it’s not available everywhere.) ⁣ ⁣ I’ve never tried the Americano until today. And of all places, I tried it at McDonalds. My oldest daughter asked for a McDonald’s coffee drink after getting some dental work done and I saw the Americano on the menu. I’ve actually always loved McDonald’s coffee so I decided it was time to give that Americano a try. And I AM IN LOVE. Highly recommend trying the Americano next time you want a keto friendly coffee drink! I will still have my breve lattes from time to time for sure, but the Americano definitely has fewer carbs (wayyyy less half and half/cream used). 🙌🏻☕️

2014 : I had just graduated college. I was around 350 pounds or so maybe more. I try tons of fab diets, but nothing ever stuck.⁠ 2015: I ended up losing some weight after college but after i broke my ankle i had gain even more weight back. I had made it to 420 pounds.⁠ 2016: After the many medical issues and fail attempts to lose weight i knew i needed to fix my health. At 420 pounds i started a journey that would change my life. From all my pass failed attempts i knew where i went wrong. This wasnt a diet this was going to be a lifestyle change. So started tracking my food intake and exercising daily.⁠ 2017 : In 2017 i was down over 200 pounds from 2016. All my hard work had paid off. I continue to make tracking my food and the gym part of my life.⁠ 2018: I had to come to the realization that i was at maintenance and i was no longer was overweight. I just had loose skin. I didnt need to lose anymore weight.⁠ 2019: Ive manage to continue my healthy lifestyle and stay in maintenance. I track my calories randomly sometimes and workout 5 times a week.⁠ Through this whole journey ive learned alot of things. 1. Weightloss takes time. 2. That's right, we're back at it with our crazy pizza night creations! This was our first attempt at a gyro pizza, complete with homemade easy tzatziki (instructions below!) And let me tell you, this bad boy was HEAVY 🤣 • We started with our favorite thin-crust fathead pizza crust recipe from keto.copy, brushed with olive oil before the bake. Then we topped with raoshomemade pizza sauce, mozzarella, leftover pork and chicken from our favorite local greek restaurant, tzatziki, and feta. Extra tzatziki on the side for dipping! • Um, yeah. It was freaking delicious. Next time, I'd like to top with some thinly sliced red onions... but only on my half. Hubs is not into raw onions like I am 🙊 • For super easy tzatziki, we simply combine sour cream, a bit of olive oil, TONS of dry dill, and a squeeze of lemon (can omit if you don't have on hand). We don't measure anything, just keep stirring and adding things until you're happy. I used Sadaf, but you can use whatever brand you’d like. Let sit for a few minutes, or if you have time, marinate overnight.⁠ .⁠ 2.While the meat is sitting, get your veggie/salad base ready. I started with a bag of broccoli slaw that I dressed with a tahini dressing. To make the dressing, I used 2 tablespoons tahini, juice from 1/2 lemon, sea salt, and 1 tsp freshly minced garlic. Mix everything together, then taste. You’ll have to add more tahini/lemon/salt based on your preference if you’d like. Then just toss with your broccoli slaw.⁠ .⁠ 3.Once I was ready to make the lamb, I got a pan ready on medium heat, tossed in 1 tablespoon of oil, and put the lamb in for about 5 minutes per side. These take about 10-15 minutes. Cook until they are no longer pink. Alternatively, you can grill these. Extra bonus points x 1000 if you use a charcoal grill. I didnt have time today.⁠ .⁠ 4.Then I started plating everything. I put the lamb on top of the broccoli slaw, added 1 sliced Persian cucumbers, some cherry tomatoes, and some herbs. CARB-CONSCIOUS EGGNOG!? 😱😍 I did not grow up drinking eggnog—it wasn’t on my radar until Christian and I started dating years ago. It was a big deal in his house and has always been one of his favorite holiday indulgences. 😛 . 🎄Every year, we drive to look at Christmas lights and bring a festive beverage to enjoy along the way. This year, I am making a carb-conscious eggnog for Christian! ❄️ . 👏 For a lighter take on this holiday classic, I’m using Truvia Natural Sweetener to lower the sugar! It’s made from stevia leaf extract and is a great way to lower the amount of sugar and carbs for holiday baking! ad . ➡️ Like the photo if you want more keto recipes! KETO EGGNOG 3 cups unsweetened almond milk, divided (or any milk you prefer) 2 cups coconut milk (or heavy cream) 1 cinnamon stick 1 tsp nutmeg 1/2 tsp cinnamon powder 6 egg yolks 1/2 cup Truvia Natural Sweetener 1 tsp vanilla extract . 🥛Add 2 cups of almond milk or milk of choice along with coconut milk or heavy cream, cinnamon and nutmeg to a saucepan. Bring to a boil, and turn down to a simmer for 8-10 minutes, allowing the flavors to infuse. Remove from heat. 🥛In a large bowl, combine egg yolks and Truvia Natural Sweetener with a hand mixer or whisk, until light and fluffy. 🥛Slowly add the egg mixture into the milk mixture, whisking continuously to temper and prevent the eggs from curdling. 🥛Return to heat and stir on medium low for 8-10 minutes, until the mixture thickens enough to coat the back of a wooden spoon. 🥛Strain the mixture through a sieve into a bowl and stir in vanilla (and booze to taste if desired). 🥛Cover and refrigerate to chill. It will thicken as it cools! Stir in one additional cup of milk to thin out the thickened eggnog to your desired consistency. Enjoy!
